I saw this made on "The Outback Cafe" & it intrigued me. I just happened to have some wattle seed in the pantry so gave it a go. It' has a very mild, slightly nutty flavour, is low GI and no caffeine and because it's so mild I didn't even miss the sugar. (It's not recommended to add sweetner as it overpowers the taste) This is authentic Australian cuisine.

15 g ground roasted wattleseed (1 scoop approx)
200 ml steamed milk
sugar (optional)

Steps:

  • Use the wattle seed as you would coffee in your coffee maker, let the machine do it's work making a wattle espresso.
  • Top with steamed milk.

I haven't tried this one yet, but wattleseeds intrigue me and this sounds to die for. Wattleseed is a baking spice that is really versatile and can be found in ethnic grocers.

2 tablespoons ground coffee
4 tablespoons wattleseed, ground
4 drops vanilla extract
2 tablespoons sugar
3 1/2 ounces cream
1 1/2 cups water
grated chocolate (to garnish)

Steps:

  • brew coffee and wattleseed in a filter in coffee pot with 1 1/2 cups water.
  • mix in sugar, vanilla and cream.
  • pour into two large glasses and serve with grated chocolate on top.

2 teaspoons coffee, roasted and ground
4 teaspoons wattleseed, roasted and ground
4 drops vanilla essence
2 tablespoons sugar
100 ml thickened cream, chilled
grated chocolate

Steps:

  • Place ground coffee into coffee filter, place ground wattleseeds on top.
  • Brew wattleseed coffee in the usual way to make about 1½ cups.
  • Pour into jug.
  • Stir vanilla and sugar into coffee.
  • Chill.
  • Beat cream until thick and stir slowly into coffee.
  • Pour into two high glasses.
  • Decorate with grated chocolate.
