REDNECK WATERMELON SUMMER SALAD
If you need a new summertime salad, you need to add this no-bake watermelon one to your menu. It's cool, creamy and refreshing with chunks of watermelon and pineapple in every bite. Just fantastic! We loved the crunchy texture that the pecans add to the salad. This will be a big hit at summer cookouts or potlucks.

Steps:
- 1. Combine gelatin and boiling water in a medium heatproof bowl. Stir until gelatin is dissolved, about 2 minutes. Add cold water & mix well. Chill in refrigerator until partially set, about 55 minutes.
- 2. Add chopped watermelon and un-drained pineapple to gelatin mixture. Mix well. If you wish, some nuts can be added also. I prefer to put all the nuts on top of the finished dish. Spoon into 13x9 inch dish. Chill until set, about 1 hr.
- 3. Place softened cream cheese in a medium bowl. Beat with an electric mixer until light and fluffy.
- 4. Add milk and sugar to cream cheese. Beat until the mixture is smooth.
- 5. Fold whipped topping into cream cheese mixture. Spread evenly over gelatin mixture.
- 6. Sprinkle with pecans. Chill covered until serving time. Can be made the day before.

- Place the onion slices in a small bowl with the lime juice. The acid of the lime will mellow the flavor of the raw onion. Let stand for 10 minutes.
- In a large bowl, combine the watermelon cubes, feta cheese, black olives, onions with the lime juice, and mint. Drizzle olive oil over it all, and toss to blend. Dig in and be prepared for a pleasant surprise!

- Mix the vinegar and Dijon mustard in a bowl. Stir the garlic, salt, and pepper into the mixture. Slowly stream the olive oil into the dressing while whisking vigorously. Place the dressing in the refrigerator until ready to use.

We loved the refreshing taste of this summer salad. We're not going to lie. At first, the combination of ingredients had us intrigued, but they all work together. It's surprisingly fresh and delicious. Soaking cucumbers in the vinegar mixture is strong. But once they are mixed with the sweet watermelon and tomatoes it balances...

- 1. Peel cucumber and slice in thin slices. Place in a bowl with a tight-fitting lid. Add vinegar and olive oil. Stir until combined. Add a couple of dashes of pepper. Close the lid and shake the bowl to distribute mixture and pepper. Refrigerate overnight.
- 2. The next day, cut watermelon and tomatoes into small chunks. Place in a large bowl.
- 3. With a slotted spoon, strain cucumber from vinegar mixture onto cutting board. Discard vinegar mixture.
- 4. Cut cucumber slices in half and add to watermelon bowl.
- 5. Sprinkle sea salt and sugar over watermelon mixture; mix until well combined.
- 6. Add dressing and a couple of dashes of black pepper; stir until combined. Refrigerate for at least 2 hours before serving.
- 7. 30 minutes before serving, stir in Feta cheese.
