This is a great fruit snack in the summer when it's hot outside and a fun variation on watermelon. Takes no time to make and is super refreshing. Great when you have unannounced guests.

Steps:
- Set 1 feta cheese cube on top of a watermelon cube and secure with a toothpick. Repeat with remaining feta and watermelon. Sprinkle with mint.

Steps:
- Thread a piece of watermelon onto a skewer, followed by a mint leaf, a chunk of feta, a basil leaf, and another piece of watermelon. Repeat with the remaining ingredients. Store covered in the refrigerator for up 1 hour, if desired. Just before serving, drizzle each skewer with some pomegranate molasses; serve.

- Soak 8 wooden skewers in water for 30 minutes.
- Heat grill to high. Carefully thread 2 watermelon cubes onto each skewer. Grill, flipping, until grill marks appear, about 1 minute per side.
- Carefully thread 1 basil leaf and 1 feta cube onto each skewer. Season with salt and pepper, and drizzle with oil.

- Cut 16 pieces of watermelon into 1 1/2 inch squares about 1/2-inch thick. Place in a mixing bowl, and add olive oil, salt and grains of paradise or black pepper. Toss to coat all the watermelon evenly. Cut the block of feta cheese into 16 pieces just about the same size as the watermelon pieces. Thread one piece of watermelon and piece of feta cheese on each skewer. Garnish with basil leaves. Serve right away or place in the refrigerator up to 3 hours before serving.

Steps:
- Using a melon baller or half teaspoon, make three divots in the bottom of the watermelon that are slightly smaller than the circumference of the celery stalks.
- Cut the watermelon in half, with the bottom side of the "grill" being slightly larger than the "lid" side.
- Hollow out the watermelon halves using either a melon baller or spoon. Save the pieces for the fruit skewers.
- Insert the celery into each divot on the bottom half of the watermelon and secure with a toothpick if needed.
- Insert 3 wooden skewers into the watermelon half along its top edge to start assembling the "grill", spacing about ½-inch (1 ½ cm) apart. Cut the skewers as needed.
- Fill the grill with blackberries, which will act as your charcoal.
- Finish inserting the rest of the skewers to complete the bottom half of the grill.
- Take the hollowed top half of the watermelon and toothpick a lime half to make the grill lid.
- Assemble your fruit skewers and get "grilling"!
- Add two skewers into the rim of the bottom half of the watermelon so that the lid can rest on it.

TOMATO, WATERMELON, AND BASIL SKEWERS

- Combine the balsamic vinegar and sugar in a small saucepan over medium heat. Bring to a simmer, stirring occasionally, until the sugar is dissolved. Turn off the heat and set aside to cool.
- Starting with the watermelon squares, push the watermelon to the very tip of the skewer. Then skewer a basil leaf, then a tomato half. Continue with another watermelon, basil leaf, and tomato half. Place the skewer on a serving platter so it stands upright, using the lowest watermelon square as a base. Continue with the remaining skewers.
- Drizzle the skewers with the reserved balsamic syrup and the olive oil. Sprinkle with coarse salt. Serve.

Everyone seems to love this simple combination of clean, fresh flavors. If watermelon is not in season you can substitute cantaloupe, but for a burst of pure flavor that really plays off the herbal flavor of the tomatoes, you can't beat watermelon. Stacking the skewers vertically and serving them upright looks especially elegant.

- Combine the balsamic vinegar and sugar in a small nonreactive saucepan. Bring to a simmer over medium heat, stirring occasionally, until the sugar is dissolved. Remove from the heat and set aside to cool.
- Cut the top and bottom off the watermelon, then make 4 straight cuts down the sides so you have a cube of rindless watermelon. Cut the cube into 1 1/2-inch slices, then cut the slices into 1 1/2-inch cubes. Assemble the skewers by pushing a basil leaf to the end of one skewer. Then skewer a cube of watermelon, then a tomato half. Continue with another watermelon cube, basil leaf, and tomato half, ending with a basil leaf. Repeat to make 15 more skewers.
- Drizzle the skewers with the reserved balsamic syrup and the olive oil. Sprinkle with salt. Serve.
SAVORY WATERMELON SKEWERS WITH CITRUS GOAT CHEESE AND MINT
Steps:
- Slice the goat cheese into 1/2-inch cubes. In a small bowl, combine the goat cheese with lemon zest, peppercorns, and olive oil. Toss and refrigerate overnight.
- Grind sugar rose petals in blender to make a powder and transfer to a small bowl. Dip each watermelon cube into the rose petal powder to coat. Remove goat cheese cubes and reserve the citrus oil. Thread the watermelon, goat cheese, and mint leaves alternately on skewers. Drizzle the citrus olive oil over the skewers and serve.
