12 ounces water
9 ounces sugar
4 ounces raspberry puree

Steps:

  • Using a large sauce pot, combine the water and sugar. Cook until a syrup forms and all of the sugar has dissolved.
  • Add the raspberry puree to the mixture and cool.
  • Pour the mixture into a shallow pan and place it in the freezer. As the mixture freezes, occasionally scrape and stir the mixture to form crystals. After a few hours the granita is ready to serve.
  • Serve in small glass cups with freshly whipped cream.

1 cup water
1/3 cup sugar
2 tablespoons crème decassis
2 pounds watermelon, seeds and rind discarded and the flesh chopped
1 tablespoon fresh lime juice
1 teaspoon Angostura bitters

Steps:

  • In a small saucepan stir together the water, the sugar, and the crème de cassis, boil the mixture, stirring, until the sugar is dissolved, and simmer it for 5 minutes. Transfer the syrup to a bowl and chill it, covered, until it is cold. In a blender puree the watermelon in batches, forcing it as it is pureed through a coarse sieve set over a large bowl, pressing hard on the solids. Stir into the watermelon puree the syrup, the lime juice, and the bitters and transfer the mixture to an 8-inch-square metal pan. Freeze the mixture, stirring and crushing the lumps with a fork every 30 minutes, for 2 to 3 hours, our until the granita is firm but not frozen solid. Scrape the granita with a fork to lighten the texture and serve it immediately.

4 cups seedless watermelon chunks
1/2 cup sugar
Juice of 1 lemon

Steps:

  • Combine all ingredients in a food processor. Puree until smooth. Pour into a shallow, wide pan and freeze for 1 hour. Rake mixture with fork and freeze for another hour. Rake and freeze for one more hour. Rake and serve in cups.

7 cups 3/4-inch cubes seeded watermelon (from 4 1/4 pounds)
1/2 cup sugar
2 tablespoons fresh lemon juice
1 large ripe strawberry, hulled
Pinch of salt

Steps:

  • Working in batches, puree watermelon in blender until smooth. Return 4 cups puree to blender. Add next 4 ingredients. Blend until smooth. Pour mixture into 13x9x2-inch metal baking pan. Freeze until icy at edge of pan, about 45 minutes. Whisk to distribute frozen portions evenly. Freeze again until icy at edge of pan and overall texture is slushy, about 45 minutes. Whisk to distribute frozen portions evenly. Then freeze until solid, about 3 hours. Using fork, scrape granita down length of pan, forming icy flakes. Freeze at least 1 hour. (Can be made 1 day ahead. Cover; keep frozen.)
  • Serve with Melon and Berry Compote .
  • Presentation:
  • Working quickly, scoop icy flakes into dessert dishes. Spoon compote alongside.

1 cup water
3/4 cup plus 2 tablespoons sugar
3 cups fresh raspberries (about 16 ounces)
1 tablespoon fresh lemon juice
Fresh raspberries

Steps:

  • Combine water and sugar in medium saucepan. Stir over medium heat until sugar dissolves. Bring to boil. Remove from heat. Chill syrup until cold.
  • Meanwhile, mash 3 cups raspberries in medium bowl. Stir in lemon juice. Mix in sugar syrup. Pour mixture through strainer, pressing on solids to extract as much liquid as possible. Pour mixture into shallow baking dish. Freeze until almost firm, stirring frequently, about 2 hours.
  • Continue freezing granita until firm (do not stir), at least 3 hours or overnight. (Granita can be prepared 3 days ahead. Cover and keep frozen.)
  • Using fork, scrape surface of granita to form crystals. Scoop crystals into glasses. Garnish with raspberries.
