This is a traditional Greek recipe. When I first heard of it, I was very reluctant to try something so strange. After tasting it, it turned into one of the family's favorite desserts. And it is very easy to make! Sprinkle with a little extra cinnamon before serving if you wish.

1 ½ cups all-purpose flour
4 cups mashed watermelon, seeds removed
½ cup honey
½ cup white sugar
½ teaspoon salt
1 teaspoon ground cinnamon
½ cup sesame seeds

Steps:

  • Place the flour in a dry skillet over medium heat. Cook for a few minutes, stirring occasionally, until golden. Set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together the watermelon, flour, honey, sugar, salt and cinnamon. Grease a 9 or 10 inch pie plate, and sprinkle half of the sesame seeds over the bottom. Pour the watermelon filling over the seeds, the filling should be about 1 inch thick. Sprinkle the remaining sesame seeds over the top.

3 cups chopped watermelon rind
1 ⅓ cups dried cranberries
¾ cup chopped walnuts
⅓ cup distilled white vinegar
½ cup white sugar
2 teaspoons pumpkin pie spice
1 teaspoon all-purpose flour
¼ teaspoon salt
1 recipe pastry for a 9 inch double crust pie
½ cup confectioners' sugar
2 teaspoons orange zest
1 teaspoon orange juice

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place watermelon rind in a saucepan and cover with water and bring this to a boil. Reduce the heat; simmer uncovered for about 10 minutes or until the rind becomes tender and translucent. Remove from heat and drain.
  • Place cooked watermelon rind in a large bowl and add the cranberries, walnuts and vinegar. Combine the sugar, pumpkin pie spice, flour, and the salt. Add this to the rind mixture and stir well.
  • Line a 9 inch pie plate with bottom pastry, trim the pastry even with the edge. Add the filling. Roll out the remaining pastry and make a lattice crust. Seal and flute edges.
  • Cover pie with aluminum foil and bake at 425 degrees F (175 degrees C) for 20-25 minutes. Remove the foil, and bake for another 20-25 minutes or until the crust is golden brown.
  • In a small bowl, combine confectioners sugar, orange rind and orange juice. Stir to combine, and spoon over hot pie. Cool on a wire rack.

6 cups watermelon (seeds are fine)
1/3 cup granulated sugar
2 tablespoons unflavored gelatin (aka, two envelopes)
1 tablespoon fresh lime juice or 1 tablespoon lemon juice
2 large egg whites, at room temperature
1 cup cold heavy cream or 1 cup whipping cream
1 cup confectioners' sugar, sifted
confectioners' sugar, to dust
whipped cream (homemade or store bought)

Steps:

  • Place a medium sized bowl and a set of beaters in the refrigerator to chill.
  • Bake pie crust according to directions and let cool; Refrigerate until ready to use.
  • Combine the watermelon and granulated sugar in a very large bowl; using a potato masher, mash until the mixture is quite liquid; set aside for 15 minutes.
  • After 15 minutes, drain the mixture through a strainer, reserving almost 2 ¾ cups of the watermelon juice and then discard pulp and seeds.
  • Put ¼ cup of the juice in a medium size bowl and sprinkle the gelatin over it; set aside for 3 to 4 minutes to dissolve.

  • Using the chilled medium-size bowl and chilled beaters, beat the heavy cream with the mixer until it holds soft peaks; add the confectioners' sugar and beat until smooth and stiff but not grainy; refrigerate.
  • When the watermelon juice mixture starts to firm up, add about one-quarter of the whipped cream and beat with the electric mixer until smooth.
  • Add the beaten egg whites and remaining whipped cream and gently fold them in with a large rubber spatula; if necessary, use a whisk-very briefly- to smooth the mixture and break up any large globs of whites or whipped cream;
  • Pour the filling into the cooled pie shell; shake to settle; cover with loosely tented aluminum foil and refrigerate for at least 4 hours, preferably overnight.

1/2 cup raisins
1/2 cup chopped pecans
pie crust for double-crust pie (homemade or store bought)

Steps:

  • 1. Place watermelon rind in a small saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer for about 20 minutes or until tender. Remove from heat; drain. Combine watermelon rind with sugar, flour, cinnamon, nutmeg, cloves, salt, vinegar, raisins, and pecans; stir to combine then set aside. Fit 1 pie crust into a 9-inch pie plate. Pour watermelon rind mixture into the pie crust. Top with remaining pie crust; fold edges under, and crimp all around the edge. Cut small slits in top crust. Summer and it's bountifful fruit! This is a great pie to take on a summer outing, picnic or cookout. Now some might think "USE THE RIND??" but yes this is a great way to use all of the watermelon you can! it doesn't take much of it. I prefer to leave out the raisins but hubby wants me to add them next time. He thinks that the pie almost tastes like plums and smells like a apple pie. You will never know that its watermelon rind! Now this recipe doesn't make a FAT slice but rather a thin filled pie, so if you want a fat full pie you will need to increase the filling ingredients. Besides using raisins you could use different dried fruits like cranberries, dates etc. Use what you like

1/4 cup miniature semi-sweet chocolate chips

Steps:

  • Mix 1 cup of the whipped topping and food coloring in small bowl until well blended. Refrigerate until ready to use.
  • Stir boiling water into gelatin in large bowl 2 minutes until completely dissolved. Add enough ice to cold water to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice. Add remaining whipped topping; stir with wire whisk until well blended. Refrigerate 10 to 15 minutes or until mixture is very thick and will mound. Spoon into crust.
  • Refrigerate 4 hours or until firm. Garnish rim of pie with the tinted whipped topping to resemble the watermelon rind. Decorate with chocolate chips for the "watermelon seeds." Store leftover pie in refrigerator.

6 cups seedless watermelon cubes from about a 4 lb slice, to make about 4 cups puree
2/3 cup sugar
1/4 cup cornstarch
1 tblsp lime juice
1 cup heavy whipping cream
1/4 cup sugar

Steps:

  • 1. For the Crust: Preheat the oven to 375 degrees F. Process the cookies in a food processor with the sugar until crumbly. Add the melted butter and process until the crumbs are wet. Scrape the crumbs into a glass or ceramic pie plate and press them in the bottom and up the sides of the pan to make a nice, cohesive crust. ou may have a little bit more of the crumbs than you need. Bake the crust for 8 - 10 minutes until golden brown and firm to the touch. Cool completely and chill in the fridge.
  • 2. For the Filling: Puree the watermelon chunks in a blender, then pour it through a wire sieve into a large saucepan. Push on the solids to extract the juice, then discard the solids and thoroughly rinse the sieve. You should have around 4 cups of puree. Measure out 1/4 cup of the watermelon juice with a small measuring jug and set aside. Add the sugar to the watermelon juice in the pan, stir, and bring to a boil, stirring occasionally.While the juice is coming to the boil, add the cornstarch to the reserved juice and whisk until the mixture is completely smooth. When the juice is boiling, whisk the cornstarch mixture again, then whisk it into the boiling juice. Boil for 4 minutes, whisking constantly and scraping the sides and bottom of the pot. The mixture will begin to thicken. Pour the mixture through the cleaned sieve into a bowl to remove and lumps that might form. Leave the filling to cool for about 20 minutes. For the Topping 1 cup heavy whipping cream 1/4 cup sugar Whip the cream until soft peaks form, then drizzle in the sugar and whip until very stiff peaks form. Scoop the cream onto the chilled pie filling and spread it to the edges of the crust, covering all the filling. Chill in the fridge for an hour before serving. The pie will keep in the fridge for a day. This pie is great right out of the fridge, but I have discovered that serving after it's been out of the fridge for half an hour or more intensifies the watermelon flavor. This is a traditional Greek recipe. You can add some more cinnamon right before serving.

1 1/2 cups all-purpose flour
4 cups mashed watermelon, seeds removed
1/2 cup honey
1/2 cup white sugar
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup sesame seeds

Steps:

  • 1. Place the flour in a dry skillet over medium heat. Cook for a few minutes, stirring occasionally, until golden. Set aside to cool. Preheat the oven to 350 degrees F (175 degrees C). In a large bowl, stir together the watermelon, flour, honey, sugar, salt and cinnamon. Grease a 9 or 10 inch pie plate, and sprinkle half of the sesame seeds over the bottom. Pour the watermelon filling over the seeds, the filling should be about 1 inch thick. Sprinkle the remaining sesame seeds over the top. Bake for 40 to 50 minutes in the preheated oven, or until a knife inserted near the center comes out clean. Allow to cool completely before slicing. Refrigerate leftovers.

1/4 cup boiling water
1 tub (12 oz.) Cool Whip, thawed
2 cups cubed seeded watermelon
1 graham cracker crust (9 inch)

Steps:

  • In large bowl, dissolve Jell-O in boiling water. Cool to room temperature.
  • Whisk in Cool Whip & fold in watermelon. Spoon into crust.
  • Refrigerate for 2 hours or until set.

4 1/2 cups watermelon
1 packet unflavored gelatin
1 cup sugar
1 tablespoon lemon or lime juice
1 carton heavy whipping cream
1 pre-made pie crust. (or homeade if you have time)
powdered sugar
green food coloring
shredded chocolate

Steps:

  • In a blender, puree 2 1/2 cups watermelon until you have 2 1/4 cups. In a small bowl, mix 1/4 cup watermelon puree and gelatin. Put remaining 2 cups watermelon puree in a medium saucepan and bring to a boil, stirring constantly. Remove from heat and stir in gelatin mixture. Then stir in sugar and lemon or lime. Chill until consistency of an unbeaten egg white, about an hour. Whip 1 cup of heavy whipping cream. Fold whipped cream into watermelon mixture. Pour in to crust and freeze for 8 hours or over night. Whip about half a carton or heavy whipping cream. Add powdered sugar to taste and die green. Spread over pie, top with as much shredded chocolate as you want. You can store in the freezer for up to a week.
