2 medium limes
1/3 cup sugar
8 cups cubed seedless watermelon (1 inch)
2 cups ice cubes
2 cups tequila
1 cup Triple Sec
1/4 cup lime juice

Steps:

  • Cut 1 lime into 12 wedges; reserve for garnishes. If desired, coat the rim of each glass with sugar: Cut remaining lime into wedges. Using these wedges, moisten the rims of 12 margarita or cocktail glasses. Sprinkle sugar on a plate; hold each glass upside down and dip rim into sugar. Discard remaining sugar., Place half the watermelon in a blender; cover and process until pureed (this should yield 3 cups). Add half each of the following: ice cubes, tequila, Triple Sec and lime juice. If desired, add sugar to taste. Cover and process until blended., Serve in prepared glasses. Repeat with remaining ingredients. Garnish with reserved lime wedges.

5 cups cubed watermelon, seeds removed
1/2 cup simple syrup (equal amounts sugar and water, heated until sugar melts), cooled
1/2 cup fresh lime juice
2 cups silver tequila
4 ounces orange liqueur
2 ounces melon liqueur
Watermelon wedges, for garnish

Steps:

  • Place watermelon in a food processor and process until smooth. Pour the pureed watermelon into 2 empty ice cube trays and freeze until firm, at least 4 hours. Place 8 martini glasses in the freezer to chill.
  • Place 2 cups of the watermelon ice cubes and the remaining ingredients in a blender and blend until smooth. Pour into 4 glasses and repeat with the remaining ingredients. Garnish each glass with a watermelon wedge.

½ cup white sugar
½ cup water
3 strips orange zest
2 cups cubed seeded watermelon
¾ cup white tequila
¼ cup lime juice
1 pinch salt or sugar for rimming glasses
1 lime, cut into wedges
2 cups crushed ice, or as needed

Steps:

  • Bring 1/2 cup sugar, water, and orange zest in a small saucepan to boil, stirring constantly. Simmer until sugar is dissolved, about 3 minutes. Remove simple syrup from heat and allow to cool completely.
  • Place watermelon in a blender or food processor. Pulse until pureed.
  • Stir watermelon puree into a large pitcher with simple syrup, tequila, and lime juice.
  • Place a small amount of salt or sugar into a saucer. Rub edge of margarita glasses with a lime wedge to moisten. Lightly dip the rim of the glass into the saucer to rim the glass; tap off excess salt or sugar.
  • Fill rimmed glasses with crushed ice; pour margarita mixture into glasses and garnish with lime wedges to serve.

Thinking ahead to Cinco de Mayo and stumbled on this recipe. Thought others might want to join me for the occasion so I am posting this untried.

5 cups watermelon, seeded & cubed
1 (6 ounce) can frozen limeade concentrate
1/2-2/3 cup tequila
3 tablespoons sugar
2 limes, for garnish

Steps:

  • Place the seeded watermelon cubes in a sealable plastic bag and freeze for a minimum of 8 hours. You can do this days ahead if you are planning a party.
  • Before starting to make the beverage itself, cut one of your limes into 8 wedges for garnish. Cut the second lime in quarters and use it to moisten the rim of of your serving glasses. Place the sugar in a shallow bowl or small (dessert) plate. One by one, wipe the rim of each glass with the quartered lime, then dip in the sugar until you have a nice rim.
  • Place half of the frozen watermelon, along with half the limeade and tequilla in a blender.
  • Blend until the beverage is mixed and there are no fruit bits but it is still frosty and slushy.
  • Pour into prepared glass and serve with a lime wedge for garnish.
  • Repeat with second half of ingredients.

7 1/2 pounds seedless watermelon, rind removed, fruit cut into 1-inch cubes
4 teaspoons superfine sugar
6 ounces (3/4 cup) silver tequila
24 basil leaves, plus sprigs for garnish
3 ounces (1/4 cup plus 2 tablespoons) triple sec
6 cups small ice cubes

Steps:

  • Place 24 watermelon cubes on a baking sheet lined with parchment. Cover, and freeze at least 1 hour (up to 2 days).
  • Puree remaining watermelon and the sugar in a blender until smooth. Pass through a sieve lined with cheesecloth into a bowl. (You should have 3 cups.)
  • Place tequila and basil in a glass pitcher, and crush with a wooden spoon. Stir in watermelon juice and triple sec.
  • Place watermelon cubes in glasses. Using a cocktail shaker, mix 3/4 cup margarita with 1 cup ice. Strain into a glass. Repeat. Serve garnished with basil.

1/2 English cucumber, peeled and coarsely chopped
1 lime, zested, plus juice of 1/2 lime, plus wedge for rimming glasses
1/4 cup course kosher salt
1 -ounce agave syrup or honey
3 ounces white tequila

Steps:

  • Liquefy the watermelon and cucumber in a blender and strain through a fine mesh sieve into a pitcher. Refrigerate until ready to use.
  • Mix the lime zest and salt on a small plate and reserve.
  • When ready to serve:
  • Mix 1/2 cup watermelon-cucumber juice with lime juice, agave and tequila in a cocktail shaker filled with ice; shake well to chill. Rub the rim of a martini glass with a lime wedge and dip it into the lime zest mixture. Pour the margarita into the salt-rimmed martini glass and enjoy!

  • In a medium saucepan, combine the lime zest, water, and sugar. Bring to a boil over medium heat, and cook, stirring, until the sugar dissolves. Remove from the heat. Cool to room temperature. (Can be made in advance; keep in a covered container in the refrigerator.)

1/2 small seedless yellow watermelon (about 2 1/2 pounds), peeled and cut into cubes (about 6 cups)
6 ounces tequila blanco
1 ounce elderflower liqueur, such as St. Germain
Coarse salt or Himalayan pink salt, for glasses

Steps:

  • Bring sugar, 1/3 cup water, and lime peels to a boil, stirring, until sugar has dissolved. Remove from heat; let cool completely. Strain into a pitcher with lime juice.
  • Working in batches, purée watermelon in a food processor or blender; strain through a coarse-mesh sieve (you should have 3 cups). Add melon purée, tequila, and elderflower liqueur to the pitcher with lime syrup and stir. Chill, covered, at least 2 hours and up to 2 days.

4 lime wedges
kosher salt, on a small plate
3/4 cup triple citrus tequila or 3/4 cup any good-quality tequila
1/2 cup triple sec
1/3 cup fresh lime juice

Steps:

  • Place the melon chunks in a plastic bag, and freeze until solid.
  • Run the lime wedge around the rim of a large stemmed cocktail glass. Dip the moistened rim in salt. Set the lime wedge and glass aside. Repeat with the remaining wedges and 3 more glasses.
  • Transfer about 3/4 of the melon chunks, separating them, to a blender. Add the tequila, triple sec, and lime juice, and blend until fairly smooth. 1/2 cup orange juice

Steps:

  • Blend the ingredients: Place tequila, orange liqueur, lime juice, and seedless watermelon in a blender and give 'em a good whirl. (You may have to do it in two batches depending on the size of your blender.) Note: If you happen have a juicer, simply juice the watermelon and stir it with the other ingredients in a pitcher.
  • Strain out the watermelon solids: Pour the ingredients through a fine mesh strainer into a pitcher, pressing the solids to get as much liquid out as you can.
  • Prep the glasses: Assuming you imbibe with flair, take a small plate or bowl and fill it with the salt. Next, rub the rim of a cocktail or coupe glass (or a canning jar) with a wedge of a wedge of lime. Dip the glass into the salt and give it a small turn or two.

Eight 1-inch-long strips lime peel
Kosher salt
16 ounces (2 cups) fresh lime juice (from about 16 small limes)
16 ounces (2 cups) tequila blanco ("silver tequila")
8 ounces (1 cup) Triple Sec, Cointreau, or other orange liqueur

Steps:

  • Cut the flesh from the melon (discard the rind), chop it into chunks, and transfer it, in batches if necessary, to a food processor or blender. Liquefy the watermelon. You should have about 1 quart watermelon juice. For each cocktail, salt the rim of an 8-ounce glass by first smearing it with a piece of lime peel and then dipping it in a saucer of kosher salt. Fill a cocktail shaker with ice, and add 4 ounces tequila, and 1 ounce orange liqueur. Shake vigorously and strain into the glass. Garnish with the lime peel. VARIATION: Watermelon Lime Cooler: If you're the abstemious type, omit the alcohol in this drink, pour it over ice, and you've got a really delicious summer cooler. You may want to add a splash of seltzer to make it a little less sticky. (You'll see what I mean).
