EASY WATERMELON MARGARITAS
There's nothing better than a frosty cocktail on a hot day and these easy Watermelon Margaritas are the ultimate refreshing drink.

Steps:
- Combine water and sugar in a small saucepan and bring to a simmer.
- Cook until the sugar has dissolved then remove from the heat and allow to cool completely. The simple syrup can be kept in the fridge for up to a month in a sealed jar.
- Combine the cubed watermelon, tequila, Cointreau, lime juice and simple syrup in a blender then blend until smooth.
- Dip the rims of serving glasses into lime juice and then into salt. Fill the glasses with ice then pour over the Margarita mix.
- Garnish with a lime wedge and serve.

WATERMELON MARGARITA
Steps:
- In a blender, puree the watermelon and sugar until smooth. Pour the puree through a fine mesh strainer. Transfer the liquid to a pitcher and add the lime juice, tequila and 4 ounces of the Triple Sec. Stir to combine.
- In a shallow dish, combine the kosher salt with the chili powder. In a second small plate, add the remaining 1-ounce of Triple Sec. Dip the rims of 4 margarita glasses in the Triple Sec, then coat them in the salt and chili mixture. Divide the margarita between the 4 glasses and garnish each with a lime wedge.
SALTY WATERMELON MARGARITA SALAD
Summery watermelon salads are a staple when the heat arrives, but this rendition has a few tricks up its sleeves. Taking inspiration from a margarita cocktail, we start off by quick-pickling the cucumbers to bring in a salty-tangy crunch and then toss everything with an orange-and-lime vinaigrette and heaps of creamy feta.

- Place the chopped watermelon in a large bowl and chill for 1 hour or up to overnight.
- Meanwhile, for the quick-pickle cucumbers: Combine 1/2 cup of the red wine vinegar, 1 teaspoon salt and freshly ground pepper to taste into a medium bowl, then whisk until the salt is fully dissolved. Add the chopped cucumbers and let sit for 1 hour, stirring occasionally.
- For the vinaigrette: Combine the olive oil, lime zest and juice, orange zest and juice, remaining 1/4 cup red wine vinegar, 1/2 teaspoon salt and freshly ground black pepper to taste in a small bowl, then whisk until emulsified.
- To assemble: Combine the watermelon, cucumbers, basil, feta and dressing in a serving bowl and toss until mixed well. Add salt and pepper to taste. Chill at least 30 minutes before serving.
WATERMELON MARGARITA WITH ESPELETTE SALT

- For the espelette salt garnish: To prepare the glasses, combine the salt, piment d'espelette and sugar in a shallow dish. Wet the edges of 4 rocks glasses with a lime wedge, then dip into the mixture. Fill the glasses with ice.
- For the margarita: Combine the watermelon juice, tequila, lime juice and triple sec in a cocktail shaker with ice. Shake vigorously, strain into the rimmed rocks glasses, garnish with lime wedges and serve immediately.

WATERMELON MARGARITA
Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

- Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
- In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory. If you'd like to compare, first try the mixture without, the liqueur, then add 1 ounce of it per serving.)
- Using one of the squeezed lime halves, run it along the rim of two rocks glasses, then dip the rims into the salt mixture. Fill the glasses with ice, then strain the margaritas into the glasses and enjoy immediately.
