This easy watermelon juice is the perfect drink for a hot summer day! I love to top off my glass with sparkling water for a fun, fizzy twist.

8 cups cubed seedless watermelon
2 tablespoons fresh lime juice
1/2 teaspoon ginger juice
Sparkling water (optional)
Fresh mint (optional, for garnish)

Steps:

  • Place the watermelon cubes in a blender and blend.
  • Place a nut milk bag or a few layers of cheesecloth over a large bowl and strain the juice.
  • Transfer to a pitcher and stir in the lime juice and ginger juice. Serve with sparkling water and garnish with fresh mint, if desired.

WATERMELON WITH GINGER-MINT SIMPLE SYRUP

3/4 cup sugar
2 tablespoons fresh chiffonaded mint leaves, plus the stems of 1 bunch, and whole mint leaves, for garnish
1 teaspoon roughly chopped fresh ginger
3/4 cup water
2 cups cubed watermelon

Steps:

  • In a medium saucepan, mix the sugar, mint stems, ginger, and water over medium high heat, stirring until sugar dissolves. Bring to simmer for 2 to 3 minutes then remove from heat. Let the mixture steep 20 minutes before straining through a fine sieve. Chill the syrup. To serve, drizzle the chilled syrup over the watermelon cubes and garnish with fresh mint leaves.

LEMONGRASS-GINGER JULEP

2 sprigs fresh mint, plus more for garnish
Ice
1 1/2 ounces Kentucky bourbon
3/4 ounces Lemongrass-Ginger Simple Syrup, recipe follows
Cold club soda
Lime
6 stalks lemongrass
2 cups sugar
One 1-inch slice fresh ginger

Steps:

  • Add the mint and ice to a cocktail shaker and muddle. Add the bourbon and the Lemongrass-Ginger Simple Syrup and shake vigorously to combine. Serve on the rocks in a Collins glass. Top with club soda, a squeeze of lime juice and garnish with a sprig of mint.
  • Trim the lemongrass stalks so you have the bases only. Bash with the back of a knife (or a meat mallet) so the oils and aroma release more easily.
  • Combine the lemongrass, sugar, 2 cups cold water and ginger together in a medium saucepan and set over medium heat. Simmer until the sugar dissolves. Reduce the heat and allow to sit so the lemongrass and ginger steeps in the syrup. Once the syrup is fragrant, 30 to 40 minutes, strain and use.

WATERMELON GINGER BEER

The recipe for this batch drink, from Nicole Taylor's book, "Watermelon and Red Birds," includes the juice from a red-fleshed watermelon, ideally from one with seeds. (They can be hard to find; seedless melons work too.) If you own a juicer, proceed with the seeds and all and don't worry about straining. Watermelon is over 90 percent water and is a nutrient-dense food. This drink can serve as an everyday accompaniment at breakfast, lunch, dinner or with a snack.

2 tablespoons fresh fennel fronds (optional)
Filtered water
6 cups (1-inch) cubed red watermelon (from about 3 pounds watermelon)
2 cups ginger beer, homemade or store-bought (see Tip)

Steps:

  • Divide the fennel fronds, if using, between two ice cube trays. Fill with filtered water and freeze until solid, 4 to 8 hours.
  • Meanwhile, place the watermelon in a blender or food processor and blend until smooth. Scrape the sides of the blender or food processor using a rubber spatula and blend again.
  • Place a fine metal sieve over a large bowl and strain the pureed watermelon through the sieve. (This should yield 2 to 3 cups of juice). Store in the refrigerator until ready to serve; it will keep in the refrigerator in an airtight container for up to 3 days.
  • To serve, fill four highball glasses or rocks glasses with the ice cubes. Stir the watermelon juice and add ½ cup to each glass. Top off with ½ cup ginger beer.

10 cups 1-inch pieces peeled watermelon (from about 8-pound watermelon), seeded, divided
3 cups cold water, divided
1/3 cup fresh lime juice
1/4 cup (or more) sugar
1 1/2 tablespoons fresh ginger juice* (from one 3-ounce piece of ginger)
Ice cubes
Lime wedges
*To make ginger juice, peel a 3-ounce piece of ginger and grate it over a plate. Wrap in cheesecloth; twist at both ends to squeeze out the juice. Or put the grated ginger in a finemesh sieve and press to release the juices. In a pinch, bottled ginger juice is available at natural foods stores.

Steps:

  • Place 2 1/2 cups watermelon and 3/4 cup cold water in blender. Puree until smooth. Pour agua fresca into large pitcher. Repeat 3 more times with remaining watermelon and cold water. Add lime juice, 1/4 cup sugar, and ginger juice to pitcher and stir to blend. Add more sugar by tablespoonfuls, if desired. Refrigerate until well chilled, at least 3 hours. DO AHEAD Can be made 8 hours ahead. Keep chilled. Stir before serving.
  • Fill glasses with ice cubes; pour agua fresca over. Garnish each glass with lime wedge and serve.

1 tablespoon plus 1 1/2 teaspoons fresh lemon juice
2 1/2 teaspoons finely grated (preferably on a Microplane zester) lemongrass
1 1/2 teaspoons finely grated (preferably on a Microplane zester) fresh ginger
Coarse salt
Ice cubes
Garnish: trimmed lemongrass stalks

Steps:

  • Puree watermelon in a blender until smooth. Strain mixture through a fine sieve into a pitcher. Stir in lemon juice, lemongrass, ginger, and 1/8 teaspoon salt. Refrigerate until chilled, about 20 minutes.
  • Divide juice among 6 ice-filled glasses, and garnish with lemongrass stalks.

2 teaspoons grated fresh ginger (or 1/4- 1/2 tsp. powdered ginger)

Steps:

  • Place the watermelon and ginger in a blender.
  • Process for 2 minutes, or until smooth.
  • Add 6 ice cubes and process until the ice is crushed.
  • Pour into chilled glasses and garnish with a thin slice of watermelon.
