WATERMELON-LIME GELATIN SQUARES



Watermelon-Lime Gelatin Squares image

8 cups chopped seedless watermelon
3/4 cup sugar
2 tablespoons fresh lime juice
1 1/2 tablespoons Sambuca or anisette liqueur (optional)
2 tablespoons unflavored gelatin powder (about three 1/4-ounce packets)
Cooking spray
About 16 small fresh mint leaves

Steps:

  • Puree the watermelon, sugar, lime juice and Sambuca in a blender until smooth, working in batches if necessary. Pour through a fine-mesh sieve into a large liquid measuring cup.
  • Pour 1 cup of the watermelon mixture into a small saucepan and bring to a boil. Meanwhile, pour another 1 cup of the watermelon mixture into a large bowl and sprinkle the gelatin on top; let stand 1 minute. Pour the hot watermelon mixture into the bowl and stir until the gelatin dissolves. Stir in the remaining watermelon mixture from the measuring cup.
  • Spray an 8-inch-square cake pan with cooking spray, wiping out the excess. Pour in the watermelon mixture. Skim the foam from the surface and refrigerate the gelatin until slightly thickened, about 20 minutes. Arrange the mint leaves on top in rows, then push them just below the surface. Refrigerate until fully set, at least 4 hours.
  • Unmold the gelatin: Invert onto a cutting board, then re-invert onto another cutting board and cut into squares.

2 envelopes (1/4 ounce each) unflavored gelatin
1/2 cup sugar
Pinch salt
1 tablespoon fresh lemon juice
3 1/2-pound piece seedless watermelon, rind removed, cut into chunks, plus more, diced, for garnish

Steps:

  • In a small bowl, sprinkle gelatin over 1/4 cup cold water. Set aside to soften, about 5 minutes.
  • Meanwhile, in a small saucepan, combine sugar, salt, and 1/4 cup water. Heat over high, stirring occasionally, just until sugar is dissolved, 2 to 3 minutes; remove from heat. Stir in gelatin mixture until dissolved; set aside.
  • In a blender, combine lemon juice and half the watermelon chunks; puree. Add remaining watermelon chunks; puree. Pour puree through a fine-mesh sieve into a large bowl or glass measuring cup, and discard solids. (You will need 3 cups of puree; reserve any extra for another use.)
  • Stir gelatin mixture into puree; skim off and discard any foam on the surface. Divide mixture among 6 serving cups. Cover and refrigerate until set, at least 3 hours and up to 3 days. Serve gelatins, garnished with diced watermelon.

4 cups diced seedless watermelon
1 cup white sugar
3 tablespoons lemon juice
1 dash salt
¼ cup cold water
1 (.25 ounce) envelope unflavored gelatin
1 cup chilled heavy cream

Steps:

  • Combine the watermelon, sugar, lemon juice, and salt in a large mixing bowl; stir to coat evenly. Cover the bowl with plastic wrap and refrigerator for 30 minutes.
  • Blend the mixture in a blender until smooth; return to the bowl.
  • Pour the cold water into a saucepan. Sprinkle the gelatin over the cold water; let stand 1 minutes. Place the saucepan over low heat; cook for 2 minutes. Stir the gelatin mixture into the blended watermelon mixture. Add the heavy cream; beat with an electric hand mixer at medium speed until the mixture is fluffy.
  • Transfer the mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency. Transfer ice cream to a one- or two-quart lidded plastic container; cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

6 cups seeded chopped watermelon
5 cups sugar
1/3 cup white wine vinegar or white balsamic vinegar
1/4 cup lemon juice
2 to 3 drops red food coloring, optional
2 pouches (3 ounces each) liquid fruit pectin

Steps:

  • Place watermelon in a food processor; cover and process until pureed. Line a strainer with 4 layers of cheesecloth and place over a bowl. Place pureed watermelon in prepared strainer; cover with edges of cheesecloth. Let stand 10 minutes or until liquid measures 2 cups., Discard watermelon pulp from cheesecloth; place liquid in a large saucepan. Stir in sugar, vinegar, lemon juice and food coloring if desired. Bring to a full rolling boil over high heat, stirring constantly. Stir in pectin. Continue to boil 1 minute, stirring constantly. , Remove from heat; skim off foam. Ladle hot mixture into 5 hot half-pint jars, leaving 1/4-in. headspace. Wipe rims. 1 (12 ounce) container frozen whipped topping, thawed
2 cups watermelon
1 (9 inch) prepared graham cracker crust
