WATERMELON FETA SALAD CUPS RECIPE BY TASTY

Steps:
- Cut the watermelon into 1½-inch (4 cm) cubes, removing the rind.
- Using a teaspoon measuring spoon or a melon baller, scoop out the center of each watermelon cube, only going about halfway through.
- In a large bowl, combine the cucumber, feta, mint, olive oil, and salt.
- Spoon the cucumber mixture into the watermelon cubes.
- Garnish with more mint. Chill until serving.
- Enjoy!

WATERMELON & FETA CHEESE 'CUBES' -- FOR TWO
I came across this highly unusual, yet delicious recipe in a book simply called ''Middle Eastern Cookery'' (I don't remember the author though). These cubes make a lovely starter just for 2, but obviously you can increase the recipe to serve more....these are a big hit at dinner parties. I do find that 5 cubes per person is a bit much -- 2-3 is much better for us, 10 cubes on a tray of appetizers would be fine for 5 guests for example.

Steps:
- Dig a small hole in each watermelon cube about 3/4 of the way down into the flesh. A melon baller will work well for this. Basically you want to create a cavity to fill.
- Mix together the onions, olives & oil. Place a small amount in each watermelon cube, filling them about halfway.
- Fill the cavities the rest of the way up with the crumbled feta & top each one with a mint leaf.
- Serve as a finger food.
