WATERMELON & FETA CHEESE 'CUBES' -- FOR TWO

Watermelon & Feta Cheese 'cubes' -- for Two image

I came across this highly unusual, yet delicious recipe in a book simply called ''Middle Eastern Cookery'' (I don't remember the author though). These cubes make a lovely starter just for 2, but obviously you can increase the recipe to serve more....these are a big hit at dinner parties. I do find that 5 cubes per person is a bit much -- 2-3 is much better for us, 10 cubes on a tray of appetizers would be fine for 5 guests for example.

Time 10m

Yield 2 serving(s)

Number Of Ingredients 6

10 (2 inch) cubes seedless watermelon
1/2 cup red onion, finely minced
5 moroccan oil-cured olives, pitted & minced
1 tablespoon extra virgin olive oil
1/2 cup crumbled feta cheese
10 small mint leaves

Steps:

  • Dig a small hole in each watermelon cube about 3/4 of the way down into the flesh. A melon baller will work well for this. Basically you want to create a cavity to fill.
  • Mix together the onions, olives & oil. Place a small amount in each watermelon cube, filling them about halfway.
  • Fill the cavities the rest of the way up with the crumbled feta & top each one with a mint leaf.
  • Serve as a finger food.

WATERMELON AND FETA SALAD

Watermelon and Feta Salad image

A take on the Mediterranean combination of watermelon and feta, this refreshing zinger of a salad couldn't be more perfect. Unassumingly simple, the sweet melon, salty cheese and fragrant basil reach their peak when doused with white balsamic vinegar and dribbled with fruity olive oil. Rather than building tall, this salad builds wide - so use a large platter for the most dramatic presentation. Vinegared watermelon does not keep its crisp, juicy texture well, so be sure to dress it (and eat it) the moment the last basil leaf falls.
