1L coconut water
2-3 tbsp sugar, if your watermelon is not sweet (optional)

Steps:

  • In a blender, blend the watermelon and coconut water till fine. Place a fine-mesh sieve over a pitcher and carefully pour this through the sieve. Discard pulp.
  • Add in sugar if using, and stir until sugar dissolves.
  • Chill in the fridge until cold before consuming.

1 cup sugar
1 cup water
1 cucumber, sliced
ice
2 oz gin
1 ½ oz watermelon, juiced
½ oz lime juice
1 oz cucumber simple syrup
club soda, to taste
1 slice cucumber, for garnish

Steps:

  • In a small pot over medium heat, combine the sugar and water. Bring to a boil, stirring to dissolve the sugar completely.
  • Remove the pot from the heat and stir in the cucumber. Let steep, covered, for at least 4 hours or up to overnight.
  • Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much syrup as possible. Store in an airtight container in the refrigerator for up to 1 month.
  • In a cocktail shaker filled with ice, combine the gin, watermelon juice, lime juice, and simple syrup. Shake vigorously for 20 seconds.
  • Strain into a glass filled with ice and top with club soda.
  • Garnish with the cucumber slice.
  • Enjoy!
