3 heirloom tomatoes (preferably green or orange), seeded and cut into 1-inch cubes
1 sweet onion, thinly sliced
3 tablespoons chopped fresh mint
1 cup crumbled feta cheese
1 teaspoon salt

Steps:

  • Gently toss the watermelon, tomatoes, onion, and mint together in a large bowl; add the feta cheese, season with the salt, and gently toss again to combine.

1 tablespoon olive oil, plus more
1 (4-pound) seedless watermelon, rind removed, cut into 1/2"-thick slices
1 teaspoon kosher salt, divided
4 multicolored heirloom tomatoes, thinly sliced
1/2 teaspoon freshly ground black pepper, plus more
6 ounces feta, thinly sliced (about 1 1/4 cups)

Steps:

  • Prepare a grill for medium-high heat or heat a grill pan or cast-iron skillet over medium-high; oil grate or pan.
  • Using a 2" diameter ring cutter or thin drinking glass, cut watermelon into circles; you should have 20-22 pieces (reserve scraps for another use). Season watermelon on both sides with 1/2 tsp. salt. Grill watermelon until well charred, about 2 minutes per side. Transfer to a plate and set aside until cool to the touch, about 10 minutes.
  • Meanwhile, toss tomatoes, 1 Tbsp. oil, 1 tsp. salt, and 1/2 tsp. pepper in a large bowl.
  • Layer watermelon, tomato mixture, and cheese in alternating layers on a platter, draining any extra liquid from tomatoes before using. Drizzle with oil, season with pepper, and serve.

1 5 oz package of baby arugula
2 large tomatoes- washed and cut up into 1 inch cubes
1 7 oz package of crumbled feta cheese
8 c seedless watermelon cut into 3/4 inch cubes
2 Tbsp balsamic vinegar glaze

Steps:

  • 1. Mix all ingredients together and drizzle with balsamic glaze and sprinkle with pepper. I use extra balsamic glaze but use to taste :)
  • 2. Balsamic glaze can usually be found in the vinegar section of your local grocery store but if you cant find it, you can make it yourself: boil 3/4 cup balsamic vinegar in a small saucepan until reduced to 3 tablespoons, 6 to 7 minutes

1 teaspoon (or more) fleur de sel or coarse kosher salt
5 tablespoons extra-virgin olive oil, divided
1 1/2 tablespoons red wine vinegar
3 tablespoons chopped assorted fresh herbs (such as dill, basil, and mint)
6 cups fresh arugula leaves or small watercress sprigs
1 cup crumbled feta cheese (about 5 ounces)
1/2 cup sliced almonds, lightly toasted

Steps:

  • Combine melon and tomatoes in large bowl. Sprinkle with 1 teaspoon fleur de sel and toss to blend; let stand 15 minutes. Add 4 tablespoons oil, vinegar, and herbs to melon mixture. Season to taste with pepper and more salt, if desired.

1 small jalapeno pepper, seeded and finely chopped
Lime-Orange Vinaigrette, recipe follows
1 pkg. (7.75 oz.) DOLE® Extra Veggie™ with Grape Tomatoes
8 (1/4-inch thick) slices watermelon*
Salt and ground black pepper, to taste
1/4 cup finely chopped DOLE Red Onion
1/4 cup crumbled feta cheese
Lime-Orange Vinaigrette:
2 tablespoons lime juice,
2 tablespoons orange juice
2 tablespoons olive oil
2 teaspoons sugar,
1 teaspoon red wine vinegar
1/8 teaspoon ground cayenne pepper and salt

Steps:

  • Remove tomato pouch from salad blend and cut tomatoes in half; set aside.
  • Cut 8 (4x4-inch) squares or (4-inch) circles from watermelon; season each with salt and pepper, to taste.

1/3 cup extra virgin olive oil
1 tablespoon roughly chopped fresh dill
1 tablespoon roughly chopped Italian parsley
6 heirloom tomatoes (various cuts)
1/2 medium seedless yellow watermelon (cut into chunks)
1/2 medium seedless red watermelon (cut into chunks)
1 cup French feta cheese (diced)
Sea salt and freshly ground pepper

Steps:

  • In a small bowl combine oil, dill, and parsley. Set aside. Next arrange tomato pieces, watermelon chunks and diced feta on a plate. Season evenly with salt and pepper. Finish plate by drizzling oil/herb mixture evenly over the tomato, feta, and watermelon. Serve.

1 lb. (2 cups) seedless watermelon, cut into cubes
8 oz. feta cheese, cubed
1/2 cup pitted black olives, coarsely chopped
1 tsp. finely chopped fresh mint (Reserve extra for garnish, if desired.)
*Torn spinach leaves (optional)
Dressing:
1 Tbsp. aged balsamic vinegar (or red wine vinegar)
2 Tablespoons extra virgin olive oil
1 tsp. honey (or 1 1/2 tsp. granulated sugar)
1 tsp. finely chopped basil
Fine sea salt, to taste
Black pepper, to taste

Steps:

  • Combine cheese*, spinach*, olives, and mint with cubed ingredients. Dressing: Combine oil, vinegar, honey, salt, pepper, and basil in a small, lidded container. Shake very well to combine ingredients. Drizzle lightly over salad ingredients. (I use little more than half of the dressing.) Stir gently. Refrigerate or serve. May garnish salad lightly with additional chopped mint leaves. *Unless serving immediately, do not add cheese or spinach in advance. Just before serving, mix cheese and spinach into the dressed salad.
