1 (1-pound) beef tenderloin
Canola oil
Kosher salt
2 tablespoons coarsely ground fresh black pepper
4 croissants, halved and toasted
8 slices aged Cheddar
Horseradish Mayonnaise, recipe follows
1 bunch watercress, washed and dried
1/2 cup prepared mayonnaise
1 tablespoon whole grain mustard
2 tablespoons prepared horseradish, drained
Salt

Steps:

  • Heat grill to high. Rub meat with oil and season with salt and the black pepper. Grill on both sides until slightly charred and cooked to medium-rare doneness, about 4 minutes per side. Remove from the grill and let rest 5 minutes. Slice into 1/4-inch thick slices.
  • Lay toasted croissant halves on a flat surface and top each half with a slice of the cheese. Divide the steak among 4 of the slices and combine halves make 4 sandwiches. Wrap each sandwich in foil, place on the grill and grill for 1 minute on each side. Remove from the grill and foil, lift 1 slice of the bread from each sandwich, and spread with a few tablespoons of Horseradish Mayonnaise. Top with a few sprigs of watercress and serve.
  • Whisk together all ingredients in a small bowl. Season, to taste, with salt. Cover and refrigerate for at least 30 minutes before using.

1/4 cup nonfat Greek style yogurt or 1/3 cup regular, plain nonfat yogurt
2 tablespoons mayonnaise
1/4 cup prepared white horseradish, squeezed of excess juice (about 3 tablespoons)
1/4 teaspoon salt
1/8 teaspoon pepper
1 bunch watercress, thick stems removed
8 slices whole-grain pumpernickel bread
12 ounces lean roast beef, thinly sliced
2 medium tomatoes sliced
1/2 small red onion, thinly sliced

Steps:

  • If using regular yogurt, place it in a strainer lined with paper towel and set the strainer over a bowl. Let the yogurt drain and thicken for 20 minutes.
  • Combine thickened or Greek-style yogurt, mayonnaise, horseradish and salt and pepper in a small bowl and stir to incorporate.
  • Place 1/4 cup watercress each on 4 slices of bread and drizzle with 2 tablespoons horseradish mayonnaise. Layer with 3 ounces roast beef per sandwich, tomato slices and onion slices. Top with another slice of bread and wrap in waxed paper, then aluminum foil.

1/2 cup finely chopped watercress leaves
1 tablespoon coarse-grained Dijon mustard
1 teaspoon fresh lemon juice
1/3 cup water
1/3 cup dry white wine
1 shallot, thinly sliced
4 fresh parsley sprigs
1 fresh thyme sprig
6 6-ounce center-cut salmon fillets with skin

Steps:

  • Mix first 4 ingredients in small bowl to blend; season to taste with salt and pepper.
  • Combine 1/3 cup water, wine, shallot, parsley, and thyme in large skillet. Place salmon fillets, skin side down, in skillet; sprinkle with salt and pepper. Cover skillet tightly and simmer over medium-low heat until salmon is barely opaque in center, about 10 minutes. Remove from heat; let stand, covered, 5 minutes. Transfer salmon to platter; discard wine mixture. Cover salmon with plastic wrap and chill until cold, at least 4 hours. (Watercress mayonnaise and salmon can be made 1 day ahead. Cover separately and keep chilled.)

3 cups fresh lemon juice
1/2 to 1 whole habanero chile, chopped (only use the whole if you like it hot)
1 teaspoon grated lemon zest
1 cup best-quality mayonnaise
Salt and freshly ground pepper
1 small red onion, finely diced
1 large stalk celery, finely diced
2 tablespoons chopped fresh flat-leaf parsley
4 (8-ounce) tuna steaks
Olive oil
8 slices hearty bread (Italian, French, ciabatta, or country white)
Watercress

Steps:

  • Heat grill to high. Place lemon juice in a small saucepan and bring to boil on the grates of the grill. Cook until reduced to 1/2 cup. Remove from the grill and let cool slightly. Leave grill on high heat.
  • Place lemon syrup, habanero, lemon zest, and mayonnaise in a blender and blend until smooth. Season with salt and pepper, to taste, and transfer to a large bowl. Add the onions, celery, and parsley and set aside.
  • Brush tuna with oil and season with salt and pepper on both sides. Grill for 3 minutes per side or until slightly charred and cooked to medium doneness. Remove from the grill and let rest 5 minutes before cutting into small dice or flaking with a fork. Add the flaked tuna to the mayonnaise mixture and gently mix until combined. Steps:

  • Mince garlic with a large heavy knife, then mash to a paste with a pinch of salt using flat side of knife. Whisk together garlic paste, mayonnaise, anchovy paste, lemon juice, rosemary, and pepper in a small bowl.
  • Toast tortillas 1 at a time directly on burner (gas or electric) over moderately high heat, turning over and rotating with tongs, until slightly puffed and browned in spots but still flexible, about 30 seconds each. Transfer to a clean kitchen towel as toasted and stack, loosely wrapped in towel.
  • Spread mayonnaise (about 2 tablespoons, or more to taste) on top of each tortilla, then divide roast beef and watercress among tortillas, covering about half of rounds. Tuck in sides of tortillas and roll up tightly to enclose filling, then cut in half.

16 asparagus spears , trimmed
400g potato , cut into chunks
400g skinned smoked haddock , cut into large chunks
16 quail eggs
25g butter
2 tbsp milk
50g plain flour
2 eggs , beaten
100g breadcrumb
sunflower oil , for frying
100g bag watercress
1 tbsp lemon juice
150ml mayonnaise

Steps:

  • For the Scotch eggs, tip the potatoes into a large pan and cover with water. Bring to the boil, then tip in the haddock and then the quail's eggs. Cook the eggs for exactly 2 mins, then remove them and cool under cold running water. Continue cooking the haddock until it flakes, and the potatoes until soft. Drain the fish and potatoes well, then mash with the butter and milk until you have a thick mash. Set aside to cool.
  • Meanwhile, peel the eggs. When everything is cool, pat out spoonfuls of mash mix and mould them around the eggs so that they are completely encased. Roll the covered eggs in the flour, then the beaten egg and finally the breadcrumbs. Chill for 1 hr to firm up, or overnight if you're assembling ahead.
  • For the watercress mayonnaise, blitz the watercress with the lemon juice until finely chopped, then stir through the mayonnaise. Blanch the asparagus for 4 mins, then drain under cold water. This can all be done a day in advance.
  • To serve, heat a good layer of sunflower oil in a frying pan. Fry the eggs until crisp on all sides, then drain on kitchen paper. Serve with the asparagus and watercress mayonnaise for dipping everything into.

1 bunch watercress, cleaned
2 tablespoons fresh squeezed lemon juice
1 egg yolk*
1 tablespoon Dijon mustard
8 ounces olive oil
Salt
Pepper
Dash hot pepper sauce
1 tablespoon fresh squeezed lemon juice
2 1/4 pounds smoked salmon, sliced thin
1 black radish, sliced paper thin
1 mini loaf sliced pumpernickel bread

Steps:

  • Add the watercress and lemon juice to the blender. Blend until smooth. Place the watercress in cheesecloth and squeeze out excess water. Set aside. Add the egg yolk and mustard to the blender and blend for 15 seconds. Slowly drizzle in the oil until the mixture has the consistency of mayonnaise. Season with salt and pepper. Fold the pureed watercress into the mayonnaise. Reseason with hot pepper sauce and lemon juice.
  • Spread watercress mayonnaise on 18 slices of pumpernickel bread. Top with 2 ounces of smoked salmon. Top with 1 slice of black radish. Place another slice of bread on top.

Shop-bought mayo isn't a patch on homemade, especially this vibrant, peppery version - gorgeous with poached salmon

1 tbsp each lemon juice and white wine vinegar
100ml olive oil
200ml groundnut or vegetable oil
2 egg yolks
1 heaped tsp Dijon mustard
½ small crushed garlic clove
75g bag watercress , leaves and stalks

Steps:

  • Mix together 1 tbsp each lemon juice and white wine vinegar. In a measuring jug, mix 100ml olive oil and 200ml groundnut or vegetable oil.
  • In a food processor, whizz 2 egg yolks with 1 heaped tsp Dijon mustard and a generous pinch of salt until fully mixed. With the processor still running, add a few drops of the oil mix, incorporating each drop before adding the next. Now very slowly drizzle the oil in - the mayo should begin to thicken and then stiffen. If the mixture looks too thick, add 1 tsp of your lemon/vinegar mix. Keep adding the oil in the same way, alternating with 1 tsp at a time of the lemon/vinegar mix, until all the oil is incorporated and the mayo is the required consistency. Now whizz in ½ small crushed garlic clove.
  • Whizz a 75g bag watercress, leaves and stalks, with the mayo and season. Add a little warm water, lemon juice or vinegar to loosen, if needed. Chill and use within 1 day - great with poached salmon.
