My Favorite Oriental Coleslaw image

I know there are other recipes for Oriental Coleslaw here. I mentioned in a thread on "everything else" that my local grocery store makes the best one I've ever tasted, and one of the girls behind the counter gave me the recipe!

4 packages chicken-flavored ramen noodles (reserve seasoning packets for dressing)
1 (1 lb) bag coleslaw mix
1 (4 ounce) bag sunflower seeds
3 bunches green onions, chopped
2 (4 ounce) cans sliced water chestnuts
1/2 cup vinegar
3/4 cup vegetable oil
1 cup sugar
2 tablespoons soy sauce

Steps:

  • In a large bowl, break up ramen noodles into smaller pieces.
  • Add coleslaw mix, sunflower seeds, green onions, and water chestnuts.
  • Stir to combine.
  • To make dressing: In a small bowl whisk together vinegar, oil, sugar, soy sauce and seasoning packets until combined.
  • Pour over salad, toss well to make sure dressing is evenly distributed.
  • If you want the noodles to soften, refrigerate overnight.

This salad is a delicious crunchy combination. I especially like this for summer barbeques for something different. I clipped it from Quick Cooking magazine a couple years ago.

Number Of Ingredients 8

2 medium carrots, chopped
1 (16 ounce) package frozen peas, thawed
1 (8 ounce) can sliced water chestnuts, drained
2 green onions, thinly sliced
1/2 cup shredded mozzarella cheese
1/2 cup prepared ranch salad dressing
5 slices bacon, cooked and crumbled
1/4 teaspoon pepper

Steps:

  • Cook carrots in a small amount of water until crisp-tender; drain and rinse in cold water.
  • Place in a serving bowl; add the peas, water chestnuts, onions and cheese.
  • In a small bowl, combine the salad dressing, bacon and pepper; mix well.
  • Pour over salad and toss to coat.
  • Chill until serving.

chicken-flavored ramen noodles (4 packages)
1 cup diced celery
1 (8 ounce) can sliced water chestnuts, drained
1 cup chopped red onion
1 cup diced green pepper
1 cup peas
1 cup mayonnaise

Steps:

  • Break each package of noodles into 4 pieces. Cook noodles in water according to package directions. Drain and rinse in cold water.
  • In large bowl, combine noodles, celery, water chestnuts, onion, pepper and peas.
  • Combine mayo with 3 of the seasoning packets. Fold into salad.
  • Cover and refrigerate 1 hour before serving.
