ROASTED ASPARAGUS & SHIITAKE MUSHROOMS

Roasted Asparagus & Shiitake Mushrooms image

A great side to roast chicken, these vegetables are also delicious served on a bed of mixed greens and drizzled with a little more oil and vinegar. They are equally good warm or at room temperature.

JAPANESE SPRING ROLLS

Japanese Spring Rolls image

Make and share this Japanese Spring Rolls recipe from Food.com.

Provided by SumoKitchen

Categories     Pork

Time 30m

Yield 10 spring rolls, 10 serving(s)

Number Of Ingredients 11

200 g sliced pork (you can get this from any Asian supermarket, usually sold frozen)
1 leek
1 sheet of spring roll paper
300 ml bamboo shoots
6 shiitake mushrooms
2 tablespoons sugar
2 tablespoons soy sauce
1 tablespoon sesame oil
2 tablespoons potato starch
salt & pepper
flour

Steps:

  • For a more detailed description with step by step photos, please visit: http://sumokitchen.com/JapaneseRecipes/spring-rolls/.
  • If you are using dry shiitake, soak them at least 30 minutes in water to return them to fresh state. Boil the bamboo shoots for 1 minute, then drain to get rid of the smell. Chop the meat, shiitake, bamboo shoots and leek thinly.Add a little oil to the pan and fry the meat until it changes colour. Then add the chopped ingredients from step one, stirring, add a pinch of salt and pepper and the sugar. Add the soy sauce and sesame oil. In a separate bowl, add 2tbs potato starch to 2tbs water (make sure it's cold water!) and mix. Then add to the frying pan, mix and heat through until sticky. Leave to cool - if you have time, place in the fridge. When you deep fry the rolls, they's less chance of them exploding if the insides are cold.Mix 1tbs flour and 1tbs water well to create a glue. Then add a small portion of the meat mix to a sheet of the spring roll paper, which should be lying at an angle, like a diamond. Then follow the folding steps as above, using the glue on the tip of your finger to seal it at the final stage.Heat oil to roughly 180 degrees and start frying the rolls carefully until golden. Then lay out on kitchen paper to let the oil soak up before serving. If you have spring rolls sheets left over, you can add tuna, ham, cheese or any other filling. Another idea is to cut up the sheets thinly, then deep fry them and put in salads to give some crunch.
  • If you'd like dipping sauce, I recommend 1part rice vinegar with 1 part soy sauce or just black vinegar on its own.

VEGETARIAN SPRING ROLLS

Vegetarian Spring Rolls image

Spring rolls, a popular street food in San Francisco chef Charles Phan's native Vietnam, are usually made with shrimp and pork. But in this vegetarian version, adapted from his book The Slanted Door: Modern Vietnamese Food, he uses shiitake mushrooms, tofu and cabbage "to mimic the flavor profile and texture of the shrimp and pork," he explains.

Time 45m

Yield makes 10 rolls; serves 10 to 12

Number Of Ingredients 17

1 1/2 cups dried cellophane noodles
1 1/2 teaspoons oil
1 1/2 tablespoons minced garlic
1 cup shredded carrots
4 celery stalks, cut into matchsticks (about 1 cup)
1/2 cup dried shiitake mushrooms, soaked in warm water for 20 minutes, drained and thinly sliced
1/4 cup dried sliced tree ear mushrooms, soaked in warm water for 20 minutes and drained
3 1/2 cups shredded cabbage
1/2 teaspoon kosher salt
Pinch ground black pepper
1 teaspoon sugar
1 cup mung bean sprouts
1 1/2 cups fried tofu, thinly sliced
Twelve 12-inch round sheets rice paper
3 cups cooked rice vermicelli noodles
35 to 40 mint leaves
Homemade or store-bought peanut sauce, for dipping

Steps:

  • Soak the cellophane noodles in warm water for 20 minutes. Drain the noodles and cut into pieces about 3 inches long.
  • To make the filling, in a large skillet or saute pan over medium-high heat, warm the oil until shimmering. Add the garlic and cook until light brown. Add the carrots and celery and cook until the vegetables are soft, about 3 minutes. Add the shiitake and tree ear mushrooms and cabbage and cook, stirring, until the cabbage is wilted, about 5 minutes.
  • Add the salt, pepper, and sugar, and stir until combined. Add the bean sprouts and stir for about 1 to 2 minutes. Add the cellophane noodles and stir for another minute. Add the fried tofu, stirring gently to combine. Transfer the filling to a colander and set aside until the mixture is well drained.
  • Fill a large bowl with very warm water. Dip one sheet of rice paper halfway into the water and quickly rotate to moisten the entire sheet. Lay the wet rice paper on a flat work surface. Spread about 1/3 cup of the filling over the bottom third of the rice paper. Spread about 1/4 cup of the vermicelli over the filling, and top with a few mint leaves. Fold in the left and right sides of the rice paper, then fold the bottom edge up and over the filling tightly and roll toward the top end to form a tight cylinder. Repeat with the remaining rice paper and filling.
  • The rolls can be made up to 2 hours in advance. Cover the rolls with a damp towel until ready to serve. Just before serving, cut each roll crosswise into three or four pieces and serve with the peanut sauce.

ASIAN SPRING ROLLS

Asian Spring Rolls image

Categories     Garlic     Herb     Mushroom     Pork     Appetizer     Side     Fry     Lime     Mint     Carrot     Shallot     Soy Sauce     Gourmet

Yield Makes 40 spring rolls

Number Of Ingredients 26

For the spring rolls:
2 ounces cellophane (bean-thread) noodles*, soaked in boiling-hot water to cover for 20 minutes, drained well, and chopped
6 dried shiitake mushrooms*, soaked in hot water to cover for 20 minutes, rinsed, squeezed dry, the stems discarded, and the caps sliced thin
3/4 pound lean ground pork
3 garlic cloves, minced
3 large shallots, minced
1 tablespoon minced peeled fresh gingerroot
1 large carrot, shredded
1/3 cup chopped fresh coriander
1/3 cup chopped fresh mint leaves
1 cup chopped mung bean sprouts*
2 tablespoons soy sauce
1 1/2 teaspoons salt
1 teaspoon sugar
20 spring-roll wrappers*
an egg wash made by beating 1 large egg with 1 teaspoon water
vegetable oil for deep-frying
For the dipping sauce:
1/4 cup soy sauce
1/4 cup fresh lime juice
2 tablespoons water
2 garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
2 tablespoons sugar
a 2-inch fresh red or green chili, seeded and minced (wear rubber gloves), or 1/4 teaspoon dried hot red pepper flakes, or to taste
scallion brushes for garnish if desired
*available at Asian markets, some specialty foods shops, and many supermarkets

Steps:

  • Make the spring rolls:
  • In a large bowl combine well the noodles, the mushrooms, the pork, the garlic, the shallots, the gingerroot, the carrot, the coriander, the mint, the sprouts, the soy sauce, the salt, and the sugar. Put 1 spring-roll wrapper on a work surface, keeping the remaining wrappers covered with plastic wrap, cut it in half diagonally, and arrange one half with the longest side facing you. Spread a rounded tablespoon of the filling down the long side, leaving a 2-inch border at each end, and brush the edges with some of the egg wash. Fold the corners of the long side over the filling and, rolling away from you, roll up the filling in the wrapper, sealing the roll, using some of the remaining egg wash if necessary. Make more spring rolls with the remaining filling, wrappers, and egg wash in the same manner, transferring them as they are made to a wax-paper-lined baking sheet and keeping them covered with plastic wrap. In a deep fryer heat 1 1/4 inches of the oil to 375°F. on a deep-fat thermometer and in it fry the spring rolls in batches, turning them, for 2 to 3 minutes, or until they are golden, transferring them as they are fried with a slotted spoon to paper towels to drain. The spring rolls may be made 5 days in advance, cooled completely, and kept frozen in plastic freezer bags. Reheat the rolls, unthawed, on a rack set in a shallow baking pan in a preheated 450°F. oven for 10 minutes.
  • Make the dipping sauce:
  • In a small bowl stir together the soy sauce, the lime juice, the water, the garlic paste, the sugar, and the chili.
  • Cut the spring rolls diagonally into 1-inch-thick slices if desired. Arrange the spring rolls or slices on a platter with the dipping sauce and garnish the platter with the scallion brushes.
  • To make brush scallions:
  • Trim the roots and the green parts from scallions, leaving about 2 1/2 inches of stalk. Make crisscross cuts about 1/2 inch deep at both ends of each stalk and spread the fringed ends gently. Put the scallions in a bowl of ice and cold water and chill them for 2 hours, or until the fringed ends have curled. Drain the scallions well.

WILD MUSHROOM SPRING ROLLS

Wild Mushroom Spring Rolls image

Provided by Food Network

Yield 48 to 60 miniature spring roll

Number Of Ingredients 25

1 pound assorted mushrooms, such as shiitake or oyster or hanshimiji
2 tablespoons vegetable oil
3 large shallots, peeled and finely chopped
2 tablespoons finely grated ginger
2 teaspoons five spice powder
1/2 cup finely chopped scallions
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons Asian toasted sesame oil
1 pound package egg roll wrappers
1/2 cup water
1/2 cup peanut oil for frying
1/4 cup warm honey
2 tablespoons soy sauce
1/2 pound raw shrimp, peeled, de-veined, and roughly chopped
1/2 cup bok choy, chopped
1/2 teaspoon dried chili pepper flakes
2 tablespoons vegetable oil
2 tablespoons sesame oil
2 tablespoons low sodium soy sauce
3 tablespoons rice wine vinegar
2 tablespoons sugar
3 tablespoons cornstarch
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Remove any hard fibrous stems from the mushrooms and clean carefully by brushing the mushrooms with a damp cloth or mushroom brush to remove excess dirt. Place the mushrooms in a food processor and pulse quickly to chop into 1/4-inch bits.
  • Heat 2 tablespoons vegetable oil in a large skillet over high heat until hot but not smoking. Add the mushrooms to the pan and saute until the mushrooms begin to sweat, about 2 to 3 minutes. Add the chopped shallots and ginger and saute until translucent. Sprinkle in the five spice powder and chopped scallions, season with salt and pepper and stir in the sesame oil. Set aside to cool.
  • Lay out the egg roll wrappers and cut into 4 equal squares. Brush a square of wrapper with some water, place a dollop of the mushroom mixture in the center and roll the sides of the wrapper inwards to enclose the filling. Rolling away from yourself, roll up the wrapper into a cigar shape and enclose the filling completely. Seal the ends with some of the water. Continue to finish filling the wrappers and refrigerate them several hours to firm them before cooking.
  • Heat the oil in a deep skillet to 345 degrees. Fry the spring rolls, in batches, until crisp. In a bowl, combine the ingredients of the dipping sauce and serve with the spring rolls.
  • Place all of the ingredients into the bowl of a food processor and pulse rapidly to a very coarse texture. Do not make too soft or pasty. Fill the springroll wrappers with the shrimp filling and follow all directions for cooking.;

FRESH AVOCADO AND SMOKED-SALMON SPRING ROLLS

Fresh Avocado and Smoked-Salmon Spring Rolls image

Spring rolls, made with moistened rice paper wrappers, are surprisingly easy to assemble -- and are ideal for a buffet or light lunch. The filling for these rolls contains a creamy-crunchy, sweet-and-savory mix of jicama, smoked salmon, and avocado.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Yield Makes 12 rolls

Number Of Ingredients 9

1 tablespoon low-sodium soy sauce
1 teaspoon cayenne pepper
1/3 cup minced red onion
2 teaspoons almond oil
1 cup jicama, diced
8 ounces smoked salmon, thinly sliced
2 medium, almost-ripe avocados, pitted, peeled, and diced
12 8-inch dried rice-paper wrappers
Sweet-and-Sour Chili Sauce, for serving

Steps:

  • Combine soy sauce, cayenne pepper, onion, and almond oil in a medium bowl. Mix well. Mix in jicama, salmon, and avocado. Cover and marinate in the refrigerator for 10 minutes.
  • Fill a medium bowl with warm water. Dip one of the wrappers in the water for 15 seconds, or until softened. Carefully transfer it to a dry work surface.
  • Arrange 2 to 3 tablespoons of the filling in an even horizontal mound just below the center of the wrapper. Roll up the rice paper to form a tight cylinder, folding in the sides about halfway. Assemble the remaining spring rolls the same way. Cover finished rolls with a damp cloth to prevent them from drying.
  • Serve fresh rolls whole or cut in half, with Sweet-and-Sour Chili Sauce.

YUMMY SPRING ROLLS WITH SHITAKE MUSHROOM FILLING

Yummy Spring Rolls With Shitake Mushroom Filling image

Fresh mushrooms replace dried in these yummy spring rolls. Instead of mung bean sprouts, try spicy radish sprouts, lentil sprouts, or even wheat berry sprouts! Adapted from Deborah Madison's Vegetarian Cooking for Everyone.

Categories     Greens

Time 22m

Yield 8-10 spring rolls

Number Of Ingredients 11

1 tablespoon cornstarch
1 1/2 tablespoons soy sauce
1 1/2 tablespoons roasted peanut oil (or use toasted sesame oil-about 1 tsp.)
8 -10 fresh shitake mushroom caps, thinly sliced (I save stems for stock)
1 bunch scallion, preferably thick ones, sliced diagonally
1 tablespoon minced ginger
1 large carrot, julienned (about 3/4 cup)
3 cups very thinly sliced napa cabbage
salt
1 cup large bean sprouts
peanut oil, to fry

Steps:

  • Mix the cornstarch, soy sauce, and 1/3 cup water in a small bowl. Set aside.
  • Heat the oil in a wok or a wide skillet. When a haze appears, add the mushrooms, scallions, ginger, and carrot and stir fry for about 3 minutes. Add the cabbage, sprinkle with 1 teaspoons salt, and stir fry until bright green and starting to turn limp, about 2 minutes.
  • Stir in cornstarch mixture and stir fry until the veggies are coated and the pan is dry, 1-3 minutes. Turn off the heat. Taste for salt and move the vegetables to a bowl to cool.
  • Form the spring rolls by laying the egg roll wrapper on the counter at a diagonal, with a corner facing you. Heap 2 tbls. of the filling crosswise, near the base. Cover it with sprouts before rolling. Fold up the lower corner, fold in the outer corners, then wrap. Repeat, using the rest of the filling. Place the egg rolls on a plate and cover with wax paper, then with plastic, until ready to cook.
  • To cook, heat 1/2" peanut oil in a medium skillet until hot enough to quickly sizzle a corner of an egg roll. Add two egg rolls and fry until golden, about 2 minutes. Turn and fry the second side, then remove to paper toweling to drain. Continue frying the rest. Serve hot with or without dipping sauce. Enjoy!
