Poland's answer to potato salad. The next time you make potato salad for home or a potluck, DON'T! Instead try this interesting change of pace. Polish style potato salad something like American potato salad, but better. From( HELEN'S PANTRY )

2 carrots
2 stalks celery
1 parsnip
4 to 5 potatoes
1 bunch green onions, chopped
2 c sour cream
1 c mayonnaise
1 Tbsp sugar
salt and pepper to taste
3 to 4 hard boiled eggs
1 c diced dill pickles
3 to 4 peeled and diced apples
1 c cooked navy beans
1 c green peas peas
1 Tbsp brown mustard
1 Tbsp vinegar

Steps:

  • 1. In a pot of salted water cook carrots, celery, and parsnip until tender. Separately cook 4 to 5 potatoes drain and set vegetables aside
  • 2. When vegetables are cooled dice finely, ( According to Polish standereds, the finer the dicing the more elegant the salad).
  • 3. To the diced vegetables add the hard boiled eggs, diced pickles, diced peeled apples, drained canned navy beans, canned peas, and chopped green onion.
  • 4. Lace with sauce made of 2 cups sour cream and 1 cup mayonnaise, tablespoon brown mustard, sugar and vinegar. Salt and pepper to taste. Chill before serving.

This recipe is adapted from one published in the Los Angeles Times about 20 years ago; they were featuring Polish food in that issue. This salad is perfect with cold Polish sausage or ham and some East European type bread. It makes a good lunch or a light supper. Note: most of the prep time is standing time, this is an easy recipe.

2 tablespoons lemon juice
1 teaspoon prepared mustard
1/16 teaspoon sugar
6 ounces French style green beans, cooked and drained
1 granny smith apple, peeled and chopped
2 ounces pickled cucumbers, finely chopped
1 medium onion, finely chopped
3 tablespoons sour cream
2 hard-cooked eggs, chopped
salt, to taste
pepper, to taste

Steps:

  • Combine lemon juice, mustard and sugar; and pour mixture over the green beans.
  • Toss and let stand for one hour.
  • Mix apple, cucumber and onion with the green beans.
  • Stir in the sour cream and eggs before serving.
  • Season to taste with salt and pepper.
  • Serve with cold meats and bread.
