4 tablespoons red onions, finely diced
2 tablespoons olive oil (okay to substitute grape seed oil)
1/2 cup dried mission figs, sliced (or other varieties of figs such as calmyrna)
2 tablespoons brown sugar, packed (I tested muscovado for a change)
2 tablespoons sherry wine vinegar or 2 tablespoons apple cider vinegar
6 ounces fresh baby spinach leaves
1/4 cup feta cheese, crumbled
1/4 cup hazelnuts, toasted and coarsely chopped
cracked black pepper

Steps:

  • In a pan over medium heat, sautè onion in the olive oil until softened, approximately 2 minutes.
  • Stir in the figs, brown sugar and vinegar. Simmer 30 *seconds*, stirring until the figs are coated well in the mixture.
  • In a large bowl, combine spinach leaves and the warm onion-fig mixture. Toss to coat.
  • Divide and place the salad on individual salad plates.
  • Garnish with feta, hazelnuts and black pepper.
  • Serve immediately.

12 ounces fresh spinach
1/4 cup olive oil
3 tablespoons minced shallots
1 1/2 tablespoons minced garlic
1/2 cup julienned red onion
2 ounces prosciutto, diced small
2 tablespoons honey
1 cup chicken stock
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
6 sliced fresh figs
kosher salt
freshly ground white pepper

Steps:

  • Clean and rinse the spinach leaves and keep them in the fridge until ready to use.
  • In a medium saute pan over medium high heat, add the olive oil, shallots and garlic.
  • Cook, stirring, 45 seconds.
  • Add the red onion and cook, stirring, one minute longer.
  • Add the proscuitto and toss just until hot.
  • Add the honey, bring to a boil, reduce heat and simmer for 2 minutes.
  • Add the chicken stock and vinegar to the pan to deglaze, scraping up any flavorful bits stuck to the bottom of the pan.
  • Bring to a boil, reduce the heat and simmer until the luquids are reduced by one quarter, about 5 minutes.
  • Remove the pan from the heat, drizzle in the extra virgin olive oil, add the sliced figs and salt and pepper to taste, and stir.
  • Distribute the spinache leaves among the serving places.
  • Spoon some of the warm ham and fig vinaigrette over each serving.

1 bunch spinach, washed and stemmed (or one package pre-washed baby spinach)
1 purple onion, sliced into rings
1/2 cup feta cheese, crumbled
16 kalamata olives, pitted if desired
4 tablespoons extra virgin olive oil
4 tablespoons red wine vinegar
fresh ground black pepper

Steps:

  • Heat a non-stick skillet, add olive oil, onion, feta cheese and olives. Saute until onions soften and cheese begins to melt.
  • Add vinegar and remove from heat. Immediately add spinach, turning the spinach with tongs so that it gets evenly coated with dressing in pan (when it begins to wilt it shrinks like crazy).
  • Divide salad between four plates, doing your best to evenly distribute onions and olives.
  • Grind black pepper over the top and serve immediately.
