This recipe came from a WW Cookbook from the 80's, long before points. It is easy to make and YUMMY to eat. I changed the margarine for light butter. I also added the zest from a lemon aand capers.

4 teaspoons light butter
2 cups sliced mushrooms
8 medium scallions, cut into 1 inch pieces
4 garlic cloves, minced
1 lb bay scallop
4 tablespoons dry sherry
2 tablespoons grated parmesan cheese
2 teaspoons grated parmesan cheese
2 teaspoons lemon juice
1 lemon, zest of
2 teaspoons capers
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon red pepper flakes (optional)
2 ounces provolone cheese, shredded
cooked brown rice

Steps:

  • Heat butter in skillet unti it bubbles and is hot.
  • Add mushrooms, scallions, and garlic. Saute, stirring constantly, for about 4 minutes.
  • Add scallops and saute 3 minutes.
  • Stir in sherry, Parmesan cheese, lemon juice and zest, capers, and seasonings. Bring mixture to a boil.
  • Sprinkle with provolone cheese, cover, and cook until cheese is melted (about 2 minutes). Do not over cook, scallops will be tough.
  • Serve over rice.

I have had this recipe for years. It's really easy, but tastes like something special. Add a green salad or fruit salad for a complete meal. Cook time does not include rice preparation.

6 ounces long grain and wild rice blend
1/4 cup melted butter
1/4 cup lemon juice
1/2 tablespoon chopped parsley
1/2 teaspoon onion powder
1/2 teaspoon celery salt
1 lb sea scallops, drained

Steps:

  • Cook rice according to package. Set aside. Combine buter, lemon juice and celery salt in a large skillet. Bring to a boil. Add scallops. Cook over high heat, stirring constantly, until scallops are done - about 6 - 8 minutes. Serve over cooked rice.

2 tablespoons olive oil
1 tablespoon balsamic vinegar
20 basil leaves
1 lb cherry tomatoes
6 ounces mozzarella cheese
salt
pepper
1 teaspoon olive oil
1 small onion
8 ounces dried rice

Steps:

  • In a large serving bowl, mix together 2 tablespoons olive oil with the vinegar, basil, tomatoes, mozzarella, salt and pepper. Set aside while rice cooks.
  • Heat remaining teaspoon of olive oil in a medium saucepan over medium heat. Add onion and cook until softened, about 3 minutes. Add rice and ¾ pint water. Bring to the boil, cover and simmer until water is absorbed and rice is tender, about 15 - 20 minutes.
  • Toss rice with tomato mixture; serve warm or at room temperature.

12 sea scallops (about 1-1/2 pounds)
1/8 teaspoon salt
1/8 teaspoon pepper
3 tablespoons olive oil, divided
1 tablespoon fresh minced chives
1 tablespoon balsamic vinegar
2 garlic cloves, minced
2 teaspoons minced fresh tarragon
2 teaspoons honey
1 teaspoon Dijon mustard
1 package (5 ounces) spring mix salad greens
1 cup shredded carrots
1/2 cup chopped tomato

Steps:

  • Pat scallops dry with paper towels; sprinkle with salt and pepper. In a large skillet, heat 2 tablespoons oil over medium-high heat. Add scallops; sear 1-2 minutes on each side or until golden brown and firm. Remove from pan; keep warm., In same pan, combine chives, vinegar, garlic, tarragon, honey, mustard and remaining oil. Bring to a boil; cook and stir until slightly thickened, about 30 seconds., Divide greens, carrots and tomato among four plates; top with scallops. Drizzle with dressing; serve immediately.

Scallops aren't the cheapest seafood on the market, but their buttery flavor is worth the expense. This is a simple, wholesome recipe that will satisfy, whether it is just you or guests. I buy frozen scallops from the grocer, thaw them, and they work just fine. For the rice I like to use a quick-cooking Rice Select royal blend--texmati white, brown, wild, and red for some variety. Some of the grains are nutty flavored and slightly al dente, which contrasts with the rest of the ingredients. Serve the same wine you cook with: a dry chablis is recommended. 4 tablespoons butter
2 medium onions, chopped
3 tablespoons oil (olive is good)
1 1/2 cups raw natural rice
1 cup fresh parsley, chopped
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/2 cup dry white wine
1/4 teaspoon thyme
1 bay leaf, crumbled
1 1/2 lbs sea scallops
boiling water

Steps:

  • Assemble and prepare all ingredients
  • In a 5-quart casserole, melt butter, cook onion until translucent. Remove and reserve.
  • In casserole, heat oil and cook rice until it is well coated and begins to turn golden. Add reserved onion, parsley, and seasonings. Cover.
  • In a saucepan, heat wine with thyme and bay leaf. Add scallops and enough boiling water to cover. Reduce heat and simmer for 5 minutes. Remove and reserve scallops; strain and reserve broth.
  • Add 2 cups of broth to rice mixture in casserole; if necessary, add more boiling water to have 2 cups. Stir once, cover, bake at 350 F for 20 minutes.
  • Stir in scallops, cover, and bake for an additional 10 minutes.

WARM SCALLOP RICE SALAD FROM WW

This is from the WW program and is a very old recipe, so I don't have the points info. I can give you the old daily requirement tho. It is 1 fat, 1 protein, 1/2 veggie, and 1 bread. This was tasty enough for me to make it even when I wasn't dieting, and since it is made in the microwave and in one dish easy clean up too.

1/4 c sliced scallions
1/4 c diced red bell pepper
1 clove garlic, minced
2 oz uncooked fast cooking whole grain brown rice
5 oz bay scallops, quarted
1/4 tsp each salt and pepper or to your taste
1 Tbsp lemon juice
2 tsp olive oil
1 1/2 tsp red wine vinegar
1 1/2 tsp prepared horseradish
1/4 tsp hot sauce, or to your taste
2 to 3 c mixed greens

Steps:

  • 1. Put the scallions, pepper and garlic in a 1 quart glass dish. Cover and microwave on high for 2 minutes, or until the scallions are tender.
  • 2. Add in the rice 3/4 cup water, stir, and microwave on high for 5 minutes, stirring half way thru cooking. Cover and microwave on medium for 3 minutes.
  • 3. Stir in scallops, cover and microwave on med for 3 minutes. Let stand for 1 minute, or until opaque.
  • 4. Stir in remaining ingredients and serve over mixed greens.
