1 Double Brie Cheese Wheel (small)
4 ounces Prosciutto (thinly sliced)
2 tablespoons Sugar-Free Preserves

Steps:

  • Lay four slices of prosciutto in a 5-inch pie pan.
  • Put two slices going the other way.
  • Cut the brie in half, spread 1 tablespoon of sugar-free preserves on the first half, then put the other half back on and spread preserves on top.
  • Cover the brie with the six slices of bacon.
  • Bake at 400F for 20 minutes, then broil for 2 to 3 minutes.

1 baguette, sliced diagonally into 1/4-inch slices (about 40 slices)
8 ounces Brie cheese
2 tablespoons honey
4 ounces thinly sliced prosciutto, cut crosswise into 1/3-inch-wide ribbons (about 6 slices),
Finely chopped fresh thyme leaves, for serving (optional)

Steps:

  • Preheat the broiler. Line a baking sheet with foil.
  • Arrange the baguette slices on the prepared baking sheet. Cut the Brie into 1/4-inch-thick slices and put 1 slice on each piece of baguette. Broil until the cheese is melted, 1 to 2 minutes.
  • Drizzle the toasts with the honey and then top with some prosciutto and a sprinkle of thyme leaves if using.

1 (8 ounce) package cream cheese, softened
15 ounces brie cheese, softened and rind removed (or use containers of creme de Brie, if available)
1/2 cup grated parmesan cheese
3 tablespoons brandy (optional) or 3 tablespoons cognac (optional)
1 1/2 cups chopped prosciutto (about 6 ounces)
1/4 cup green onion, chopped
1/2 teaspoon red pepper flakes (or cracked black pepper)

Steps:

  • Preheat oven to 375 degrees F.
  • In a medium bowl, combine the sour cream, cream cheese, brie, and Parmesan cheese; beat with electric mixer at medium speed until smooth.

1/2 cup finely chopped pecans
1-1/2 cups all-purpose flour
2 teaspoons sugar
1/2 cup cold butter, cubed
1 egg yolk
1 tablespoon water
1 teaspoon Dijon mustard
FILLING:
3 shallots, thinly sliced
1 tablespoon olive oil
2 cups fresh baby spinach
4 thin slices prosciutto or deli ham
3 eggs
2/3 cup 2% milk
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg
1/8 teaspoon crushed red pepper flakes
4 ounces Brie cheese, rind removed and cubed
1/4 teaspoon minced fresh thyme

Steps:

  • Preheat oven to 350°. In a food processor, process pecans until finely chopped. Add flour and sugar; cover and pulse until blended. Add butter; cover and pulse until mixture resembles coarse crumbs. In a small bowl, whisk egg yolk, water and mustard. While processing, gradually add egg yolk mixture until dough forms a ball., Press onto the bottom and up the sides of an ungreased 14x4-in. fluted tart pan with removable bottom. Bake 18-22 minutes or until crust is lightly browned. Cool on a wire rack., In a large skillet, saute shallots in oil until tender. Add spinach; cook 1-2 minutes longer or until wilted.
