2 medium potatoes
1/4 cup butter, melted
1 tablespoon finely chopped onion
1/2 teaspoon salt
1/8 teaspoon pepper
Dash paprika
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 425°. Cut potatoes into 1/4-in. slices; arrange in a single layer on 2 greased baking sheets. In a small bowl, mix butter, onion, salt, pepper and paprika; brush over both sides of potatoes., Roast 15-20 minutes or until potatoes are tender and golden, turning occasionally. Sprinkle with cheese.

The easiest and cheapest DIY potato chips loaded with Parmesan goodness - and yes, it tastes 100x better than store-bought!

3 russet potatoes
1/2 cup vegetable oil
2 tablespoons freshly grated Parmesan
Kosher salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley leaves
1 (5.3-ounce) container Yulu Honey Yogurt
Juice of 1 lime
1 teaspoon lime zest
Kosher salt and freshly ground black pepper, to taste

Steps:

  • To make the lime yogurt dipping sauce, whisk together yogurt, lime juice and lime zest in a small bowl; season with salt and pepper, to taste. Set aside. Using a mandoline or a sharp knife, cut potatoes to 1/4-inch-thick slices, widthwise. In a large bowl with water, immediately soak potatoes slices to remove the excess starch, about 30 minutes. Drain well and pat dry to remove excess water. Heat vegetable oil in a large stockpot or Dutch oven over medium high heat. Working in batches, add potato slices to the Dutch oven, 8-10 at a time, and cook until evenly golden and crispy, about 3-4 minutes. Transfer to a paper towel-lined plate. Sprinkle with Parmesan and season with salt and pepper, to taste. Serve, garnished with parsley, if desired.

Steps:

  • Preheat your oven to 350ºF (180ºC).
  • Slice pita bread into eighths and spread chips out on a parchment paper-lined baking sheet.
  • In a small bowl combine olive oil, Parmesan cheese, garlic, and parsley, and brush onto both sides of the chips.
  • Bake for 10-12 minutes until golden and crispy.

1 teaspoon garlic powder
1/2 cup Parmesan (finely grated)
2 tablespoons Parmesan (flaked/shredded)

Steps:

  • Preheat: oven to 425. Place: single layer of chips on baking pan.
  • Combine: 1/2 C. Parmesan, Sage/Thyme, 1 TBS Chives, Lemon Zest, Garlic Powder. Sprinkle: mixture onto chips.
  • Bake: 5 minutes (or until brown). Add: Remaining Chives and Flaked Parmesan.
