3/4 cup flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup milk
1 1/2 cups apples (peeled and sliced)
3/4 cup brown sugar
1/4 cup butter
3/4 cup boiling water

Steps:

  • Mix first seven ingredients together in a casserole dish.
  • For the sauce:
  • In a small bowl mix the brown sugar, butter, and boiling water together.
  • The boiling water should be enough to melt the butter.
  • Pour sauce over apple mixture and bake uncovered for 40 minutes at 375°F.

1 cup packed brown sugar
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup 2% milk
3 medium tart apples, peeled and chopped
2 tablespoons butter, cubed
2 cups boiling water
Vanilla ice cream, optional

Steps:

  • Preheat oven to 400°. In a large bowl, mix the first five ingredients. Add milk; stir just until blended. Fold in apples. Transfer to a greased 2-1/2-qt. deep baking dish. Dot with butter., Pour boiling water over top. Bake, uncovered, 40-45 minutes or until golden brown. Let stand 15 minutes before serving. If desired, serve with ice cream.

4 cups peeled sliced mcintosh apples
2/3 cup maple syrup
1/3 cup raisins
1 cup all-purpose flour
1/8 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup butter, cut into pieces
1 egg
1/2 cup buttermilk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Grease 8 inch square baking dish.
  • In a saucepan, bring apples and syrup to a boil; simmer for three minutes or until apple is softened.
  • Add raisins and pour into baking dish.
  • In a bowl, combine flour, sugar, baking powder, baking soda and salt; cut in butter with a pastry blender to make fine crumbs.
  • Beat egg, buttermilk and vanilla together in another bowl; pour over flour mixture and stir until just combined.
  • Drop by large spoonfuls onto warm fruit.
  • Bake 30 minutes or until top is golden and cake tester comes out clean.
  • Serve warm.

With it, you can serve a caramel sauce and a crème anglaise or just plain old-fashioned ice cream.

1/2 cup granulated sugar
1/4 cup water
1/2 cup butter
1/2 cup brown sugar
3 eggs
1/2 cup dried cranberries
1/2 cup pecans
2 tart apples, peeled and chopped
1 orange, juice and zest of, grated
1/2 cup apple cider
1/4 cup flour
1 1/2 cups fresh breadcrumbs
1 pinch salt
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F (180°C). Butter a stainless steel or ovenproof china bowl about 6 cups (1.5 L) in size.
  • Combine sugar and water in heavy pot on medium heat. Heat until sugar has melted, bring to a boil and boil for 5 to 7 minutes or until caramel turns a golden colour. Pour into prepared bowl, swirling to coat. Reserve.
  • Cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time. Stir in cranberries, pecans, apples, orange zest and juice and apple cider.
  • In a separate bowl, combine flour, breadcrumbs, salt and cinnamon. Stir half of flour mixture into apple mixture until well blended then blend in remaining mixture.
  • Turn into the prepared bowl and cover with foil. Place in roasting pan. Pour hot water reaching halfway up sides of the bowl. Bake in centre of oven for 45 minutes. Remove foil and bake another 45 minutes or until a cake tester comes out clean. Let cool slightly and turn out onto a serving plate. Serve warm or cold.

1/4 cup butter, softened
1 cup sugar
1 egg
1 cup all-purpose flour
1 teaspoon baking soda

2 cups grated peeled tart apples
1/4 cup chopped walnuts
1 teaspoon vanilla extract
4 cups low-fat vanilla frozen yogurt

Steps:

  • In a bowl, beat together the butter, sugar and egg until blended. In a bowl, combine the flour, baking soda, salt, nutmeg and cinnamon; gradually add to the sugar mixture and mix well. Stir in the apples, walnuts and vanilla until well combined., Spread mixture into an 8-in. square baking dish coated with cooking spray. Bake at 350° for 35-40 minutes or until pudding is lightly browned and springs back when lightly touched. Serve warm with frozen yogurt.
