1 1/2 lbs slender green beans, trimmed
2 tablespoons olive oil
1/4 cup pine nuts (about 1 1/2 ounces)
2 cloves garlic, minced
18 large fresh basil leaves, chopped

Steps:

  • Cook beans in large pot of boiling salted water until crisp-tender, about 5 minutes.
  • Drain.
  • Place beans in bowl of ice water to cool.
  • Drain well.
  • Pat dry with paper towels.
  • Heat oil in heavy large skillet over medium-low heat.
  • Add pine nuts and sauté until light brown, about 6 minutes.
  • Add garlic; stir 1 minute.
  • Add green beans to skillet; sauté until heated through, about 5 minutes.
  • Stir in basil.
  • Season with salt and pepper.
  • Transfer to bowl and serve.

3 1/2 lbs green beans, trimmed halved diagonally
3 tablespoons olive oil
6 cloves garlic, minced
1 cup pine nuts, toasted
3/4 cup chopped fresh basil

Steps:

  • Cook green beans in large pot of boiling salted water until crisp tender, about 6 minutes.
  • Drain.
  • Place beans in large bowl of ice water to cool quickly.
  • Drain well.
  • (Can be made one day ahead. Wrap beans in paper towels, then plastic bags, and chill).
  • Heat oil in large pot over medium high heat.
  • Add garlic; stir 30 seconds.
  • Add beans; saute until heated through, about 8 minutes.
  • Add pine nuts and basil; stir 2 minutes.
  • Season with salt and pepper.
  • Makes 12 servings.

50 g pine nuts, toasted (optional)
200 g feta cheese, crumbled
1 bunch flat leaf parsley, chopped
100 g olives
olive oil
1 garlic clove, crushed
1 lemon, juice of
salt and pepper
1 pinch chili powder (optional)

  • Grab a bowl throw in all of the above, and mix--how easy is that!

I got this from our CSA newsletter. It's a wonderful dish, full of fresh summer flavor and easy to prepare.

1 lb fresh green beans, cleaned, trimmed and quartered
1 pint cherry tomatoes, halved
3/4 cup pine nuts, toasted (1/4 will be reserved for presentation)
1/2 red onion, sliced thin into half moons
1/2 cup fresh basil, sliced into thin strands (chiffonade)
1/4 cup balsamic vinegar (use a good one)
3 tablespoons olive oil
2 garlic cloves
1 teaspoon Dijon mustard
1 teaspoon sugar

Steps:

  • Blanch the green beans in salted boiling water for one or two minutes. Strain then plunge into an ice bath. Strain again, and spread them on a towel to dry while you prep the other ingredients.
  • Combine all ingredients through the basil, reserving 1/4 cup toasted pine nuts.
  • Whisk vinegar, oil, garlic, dijon mustard and sugar until emulsified. Toss with green bean mix. Let the salad marinate for up to an hour, top with the remaining pine nuts. You can serve it immediately, but the longer it marinates, the better it will taste. It was even more delicious for lunch the next day.
