5 tablespoons olive oil, divided
1 medium red onion, halved, cut into 1/3-inch-thick wedges with some core attached
1 7-ounce package feta cheese, coarsely crumbled
2 tablespoons Sherry wine vinegar

Steps:

  • Place spinach in large bowl. Heat 2 tablespoons oil in heavy large skillet over high heat. Add onion; sauté until brown and softened, about 7 minutes. Transfer to bowl with spinach; remove skillet from heat. Add remaining 3 tablespoons oil and cheese to skillet. Stir to melt cheese slightly, about 1 minute. Stir in vinegar. Season to taste with salt and pepper. Pour over spinach; toss to coat and wilt slightly.

For shrimp:
2 garlic cloves
1 1/2 tablespoons fresh lemon juice
1/4 cup olive oil
1 tablespoon minced fresh oregano leaves
freshly ground black pepper to taste
1 pound medium shrimp (about 35)
eight 10-inch wooden skewers
1 1/2 cups orzo (rice-shaped pasta; about 11 ounces)
1/2 pound sugar snap peas
2 medium vine-ripened tomatoes
6 scallions
1 cup packed fresh flat-leafed parsley leaves
For dressing:
1/2 garlic clove
2 tablespoons fresh lemon juice
1/4 cup fresh flat-leafed parsley leaves
2 teaspoons minced fresh oregano leaves
freshly ground black pepper to taste
1/4 cup olive oil
1/3 cup crumbled feta (about 2 ounces)

Steps:

  • Prepare shrimp:
  • Mince garlic and in a bowl whisk together with lemon juice, oil, oregano, pepper, and salt to taste. Shell shrimp and devein, if desired, and add to marinade, stirring to coat well. Marinate shrimp, covered and chilled, 1 hour. Prepare grill. Soak skewers in warm water 30 minutes.
  • While grill is heating, fill a 6-quart kettle three fourths full with salted water and bring to a boil for orzo. Trim sugar snap peas. Chop tomatoes and thinly slice white and pale green parts of scallions. Finely chop parsley.
  • Make dressing:
  • Chop garlic and in a blender blend with remaining dressing ingredients until dressing is emulsified.
  • Stir orzo into boiling water and cook until al dente. Add snap peas and cook 15 seconds. Drain pasta and peas and transfer to a large bowl. Cool pasta 5 minutes and stir in feta, tomatoes, scallions, and parsley. Add dressing to salad and toss well. Season salad with salt and pepper.
  • Thread shrimp onto skewers, discarding marinade. Grill shrimp on an oiled rack set 5 to 6 inches over glowing coals until just cooked through, 1 to 2 minutes on each side. (Alternatively, grill shrimp in a hot lightly oiled well-seasoned ridged grill pan over moderately high heat.) Push shrimp off skewers into salad and toss gently.

WARM ROASTED MUSHROOM AND FETA SALAD

This is one of my favorite salad appetizers for a cool winter night. Roasting mushrooms brings out their earthy and wood flavors, and it also sends some tantalizing aromas through the kitchen. To prepare the mushrooms, it's best to clean them with just a damp paper towel, and to roast them in a rimmed pan that will catch all the juices. You can use mixed Asian greens for this dish or choose your own selection.

4 cups mixed mushrooms, such as cremini, shiitake and oyster
1/2 red onion, finely diced
4 cups mixed baby Asian greens, such as mizuna or tatsoi, or curly endive
1/3 cup crumbled feta cheese
1/3 cup chopped toasted pecans, walnuts or pine nuts (see note)
2 tablespoons extra-virgin olive oil
1 tablespoon freshly squeeze lemon juice
1 teaspoon Dijon or horseradish mustard
Salt and freshly ground black pepper

Steps:

  • To prepare the salad, preheat the oven to 350 degrees F.
  • Line a foil baking sheet or other large rimmed pan with parchment paper or foil, making sure to cover the pan completely and over the rim so it catches all the juices from the mushrooms.
  • Place the mushrooms in a single layer on the prepared pan, Bake for 15 to 20 minutes, until they have started to soften and lose their juices. Carefully tip the pan to pour the liquid into a bowl; set aside. Let the mushrooms cool slightly, then chop into bite-sized pieces. In a medium bowl, toss the mushrooms with the red onion.
  • To serve, divide the greens among the plates and top with the warm mushrooms. Scatter the feta and pecans over the mushrooms. Add the olive oil, lemon juice, and mustard to the reserved mushroom juice, mix well, and season, to taste, with salt and pepper. Drizzle over the salads and serve immediately.
  • Note: To toast the nuts, place them in a skillet over medium-high heat. Toss them continuously in the skillet until they begin to turn a light golden color. Transfer the nuts to a plate and spread them out in a single layer to cool.

I'm copying this recipe as is but will probably sub half the ingredients-- I don't care for goat cheese, I'll probably use feta. And I never heard of hazelnut oil; I'd sub with olive or sunflower oil. Lemon pepper would also be a nice sub for black pepper in the seasoning the cheese.

2 tablespoons extra virgin olive oil, divided
2 teaspoons cumin seeds
2 garlic cloves, crushed (1 tsp minced garlic)
2 teaspoons grated gingerroot (I'd use powdered ginger)
1 1/2 cups split red lentils
3 cups vegetable stock
2 tablespoons of fresh mint, chopped
2 tablespoons fresh cilantro, chopped
2 red onions, thinly sliced
4 cups baby spinach leaves
1 teaspoon hazelnut oil
100 g soft fresh goat cheese (I'll use crumbled feta)
4 tablespoons plain yogurt, strained
pepper
1 lemon, cut in quarters
toasted rye bread

Steps:

  • Heat 1 tbsp olive oil in a large saucepan over medium heat. Add the cumin seeds, garlic, and ginger and cook for about 2 minutes, stirring constantly.
  • Stir in the lentils and vegetable stock. Let cook, covered (but with venting for the steam), for 20 minutes on medium-high heat.
  • After 20 minutes, remove from heat and stir in the mint and cilantro.
  • In a frying pan (or skillet), heat the other tablespoon of olive oil over medium heat, add the onions, and cook for about 10 minutes or until softly translucent and browned.
  • Toss the spinach in the hazelnut oil in a bowl, then divide between 4 serving plates.
  • Mash the goat (or feta) cheese with the yogurt in a small bowl and season to taste with pepper.
  • Divide the lentils between the serving plates and top with the onions and cheese mixture. Garnish with lemon quarters and serve with toasted rye bread, pitas, or melba toast.

4 small beets, trimmed, leaving 1 inch of stems attached
4 cloves garlic, chopped, divided
1 teaspoon olive oil
3 heads baby bok choy, chopped
2 tablespoons peanut oil
1 ½ teaspoons butter
⅓ cup crumbled feta cheese

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Place the beets, 1/4 of the chopped garlic, and the olive oil on a piece of heavy aluminum foil; fold the foil around the beets into a sealed packet.
  • Roast beets in the preheated oven until easily pierced with a fork, 40 minutes to 1 hour. Let beets cool just until they can be handled, then rub with a paper towel to remove skins. Chop into 1/2-inch cubes; set aside.

1 purple onion, sliced into rings

An incredible salad. Cook so the spinach just gets warm and coated with the carmalized onion dressing! It smelled and tasted so good, I'm going to have to wait until next time to snap a picture of it. I usually serve this salad with some sort of white fish and other veggie as a main course. It may seem like a lot of butter, but it's what makes up the dressing and is necessary. I used "I can't believe it's not Butter" to cut the saturated fat in half that real butter would give and it came out great! The idea for this salad came out of a vegetables book in the grocery store and was a real winner!

4 tablespoons butter or 4 tablespoons I Can't Believe It's Not Butter® Spread
1 large sweet onions (sliced into thick bite sized pieces) or 2 medium yellow onions (sliced into thick bite sized pieces)
8 -10 large mixed mushrooms (cut in half)
1/2-1 teaspoon anchovy paste (a squirt from the tube about 3/4 inch to 1 inch long)
1 (4 ounce) package feta cheese (crumbled)
1/4-1/2 cup almonds or 1/4-1/2 cup pecans
1 (9 ounce) bag fresh spinach leaves or 5 -6 cups fresh spinach leaves

Steps:

  • Melt the butter in a deep frying pan or pot that will eventually be able to handle all the spinach being tossed around in it.
  • Toss in the onions and mushrooms and turn down the heat to medium low / low medium. Allow onions and mushrooms to caramelize for approx 30 minutes until onions are soft, transparent and golden stirring occasionally. This is a prime time to get the main course a cookin! These onions can be made well in advance and then reheated for just the moment you want to serve the salad. If the onions start to dry out with the amount of butter used add a little more. 4 Tbsp Butter worked out for me at the heat I caramelized the onions on.
  • Stir in the squirt of anchovy paste (optional), pine nuts (or nut of choice) and the crumbled feta a little sea salt and black pepper for taste with the caramelized onions and mushrooms. Once these are somewhat warm and melted, carefully fold in the spinach leaves until they're all coated, making sure not to cook too long. We don't want them soggy or wilted, just coated and warm. Serve immediately and enjoy!

1 small pumpkin or 1 small butternut squash, peeled and cut into 1 " pieces
2 tablespoons extra virgin olive oil
1 red onion, thinly sliced

1/4 teaspoon cayenne (to taste)
1 orange, juice of
4 ounces feta cheese
2 ounces almonds, toasted

Steps:

  • Cook pumpkin in a saucepan of lightly salted boiling water for 3-5 minutes or until just tender. Drain.
  • Heat olive oil in a large frying pan over medium heat and add onion and garlic and cook for about 5 mins or until onion is soft. 100g spinach leaves
1 red pepper , deseeded and sliced
1 red chilli , deseeded and thinly sliced

400g can chickpeas , drained
40g feta cheese or vegetarian alternative, crumbled

Steps:

  • Whisk together 1 tsp olive oil, the lemon juice, smoked paprika and a little seasoning to make a dressing. Divide the spinach between 2 serving bowls.
  • Heat the remaining 2 tsp olive oil in a non-stick frying pan. Stir-fry the pepper for 5 mins over a high heat until starting to caramelise at the edges. Add the chilli, spring onions and tomatoes and stir-fry for 1 min. Tip in the chickpeas and cook for a further min, then stir in the dressing.

4 garlic cloves, minced
4 teaspoons lemon juice

3/4 cup feta cheese, crumbled

Steps:

750g Jerusalem artichokes , scrubbed and quartered
2 tbsp olive oil
4 blood oranges , plus juice of 1 (about 2 1/2 tbsp)
2 tsp Sherry vinegar
1 tbsp extra virgin olive oil
½ tsp clear honey
50g blanched hazelnuts , very roughly chopped
1 tsp cumin seeds , lightly crushed
100g feta , crumbled
25g pack flat-leaf parsley , roughly chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the artichokes, olive oil and half the orange juice in a large roasting tin. Season well, and roast for 45 mins, turning halfway through, until tender and turning golden.
  • Meanwhile, use a serrated knife to remove the skin and pith from the remaining oranges, then segment the flesh or cut into thin wheels. Put the Sherry vinegar, remaining orange juice, the extra virgin olive oil and honey in a jug and whisk to combine. Season to taste.

Warm Brussels Sprout Salad With Smoked Feta and Candied Pecans image

This recipe came to The Times by way of Amy Lawrence, and her husband, Justin Fox Burks, who developed it for their blog, the Chubby Vegetarian. The trick to this salad is to blanch the brussels sprouts in salty water to remove the bitterness. The candied pecans combined with smoky feta creates a heavenly dish. "Even the little kids eat it,'' said Ms. Lawrence.

1 pound brussels sprouts (15 to 20 larger ones work best here)
1/4 cup vegan cane sugar
1 1/2 cups whole roasted and salted pecans
4 ounces smoked feta
4 tablespoons olive oil
2 tablespoons golden balsamic vinegar
Sea salt flakes and cracked black pepper (to taste)

Steps:

  • Start by tearing apart the brussels sprouts. Cut off about 1/3 of the stem end and pull the leaves apart; this takes some time, but it's worth it. Start by pressing outward with your thumbs on the cut side. This will yield the largest leaves and make for a fluffier salad. When you get to the core, just split it in half and throw it in with the leaves.
  • Blanch the leaves in boiling, salted water (as salty as the sea) until they turn bright green. This will take 10 seconds. Run the leaves under cold water to stop the cooking. Dry the sprout leaves in a salad spinner or lay them out on a clean towel to dry.
  • Spread the sugar in a cold 10-inch frying pan and melt it over medium heat. Once the edges of the sugar start to melt, stir the sugar until all the lumps disappear. Remove from the heat. Toss the pecans in the melted sugar until coated. It will look a bit like spun sugar as you stir the pecans into the sugar, and the pecans will stick together as they cool. Transfer to a plate to cool completely. Once the pecans have cooled, break the mass apart using your hands. Roughly chop the pecans.
  • Cut the feta into a 1/4-inch dice. If you cannot find smoked feta in your area, just use feta cheese and add 1/4 teaspoon Liquid Smoke to the dressing.
  • Now you're ready to assemble the salad. Place 4 tablespoons of olive oil and 2 tablespoons of vinegar into a large frying pan over low heat. The heat should not be so high that the dressing sizzles. Once the dressing is warm, place the sprout leaves in the pan and toss with the dressing. Transfer to a large plate. Sprinkle with cheese and nuts. Add salt and pepper to taste.

500 g fresh pumpkin or 500 g butternut squash
500 g kumara (sweet potato)
50 g pine nuts
100 g feta
3 tablespoons light olive oil
1 1/2 tablespoons balsamic vinegar
1 tablespoon coarse grain mustard

Steps:

  • Skin pumpkin and kumara. Dice into large cubes and either 1) boil until just cooked, or 2) if you have enough time, roast vegetables until just cooked instead.
  • Toast pine nuts under a broiler (grill) until it smells like popcorn when they'll be just browning. Give them a shuffle every few minutes to keep them turned while they're toasting.
  • Dice feta into smaller cubes.
  • Mix together the oil, balsamic and wholegrain mustard. Toss the pumpkin, kumara, feta and pine nuts with the dressing and serve.

1 red pepper, deseeded and cut into quarters
2 zucchini, thickly sliced
2 garlic cloves
2 tablespoons olive oil
12 ounces couscous
9 ounces cherry tomatoes, halved
6 ounces feta cheese, crumbled
12 basil leaves, finely shredded
1 lemon, cut into wedges
1 tablespoon white wine vinegar
1 tablespoon basamic vinegar
4 tablespoons olive oil
1 lemon, juice
salt & freshly ground black pepper

Steps:

  • Preheat the oven to 425°F.
  • Place the peppers, zucchini and garlic cloves in a bowl with a little oil and stir to coat everything lightly. Tip into a roasting tin and roast for 30 minutes, until tender.
  • Meanwhile, pour 2 1/2 cups boiling water over the cous cous and leave to soak until all the water has been absorbed.
  • Remove the vegetables from the oven and discard the garlic cloves.
  • Place the peppers in a plastic bag, knot the end and leave for 10 minutes; then peel off the skin and cut the flesh into strips.
  • Place the couscous in a large serving bowl. Stir well to break up any lumps and add the warm vegetables, cherry tomatoes, feta and basil.
  • Toss together. Whisk all the dressing ingredients together and pour over.
  • Serve.

1/2 lb. feta cheese, sliced 3/4" thick
1/4 cup EVOO
2 teaspoons oregano
1/4 - 1/2 teaspoon crushed red pepper
1/4 teaspooon finely grated lemon zest
2 garlic cloves, thinly sliced
2 pounds greens (kale, chard, beet) stemmed and coarsely chopped
S&P
Assorted olives and pita wedges

Steps:

  • Preheat oven to 375 degrees. Cut the feta into large tiangles and arrange them on a sinle layer in a baking dish. In a small bowl, combine 2 tablespoons EVOO with oregano , crushed red pepper, lemon zest and half of the garlic. Spread the marinade over the feta and let stand for at least 5 minutes or up to an hour. In a large skillet, heat the remaining 2 tablespoons EVOO over moderate heat. Add the remaining garlic and cook over moderate heat, stirring, until pale golden, 1-2 minutes. Add the greens, a handful at a time, and cook until tender, about 4 minutes. Pour off any liquid and season with S&P, and keep warm. Bake the feta for 5 minutes, until heated through. Spoon the greens onto 4 plates, add feta, olives. Drizzle any feta juices over and serve.

1-1/2 Tbs. olive oil
1/2 C. (about 10) Sun-Maid Calimyrna Figs or Mission Figs, stemmed and quartered
2 Tbs. packed brown sugar
2 Tbs. sherry or cider vinegar
8 C. (6-oz.) baby spinach leaves, rinsed and dried
1/4 C. crumbled feta cheese
1/4 C. toasted, chopped hazelnuts
Cracked black pepper

Steps:

  • In a medium skillet or saucepan over medium heat, saute onion in olive oil for 2 minutes or until softened. Stir in figs, brown sugar and sherry or vinegar.
