1 package (8 ounces) cream cheese, softened
2 tablespoons orange juice concentrate
1 tablespoon sugar
4 teaspoons grated orange zest
1/8 teaspoon ground cinnamon
1/4 cup finely chopped dried cranberries
1/4 cup finely chopped pecans
Assorted crackers

Steps:

  • In a small bowl, beat the cream cheese, orange juice concentrate, sugar, zest and cinnamon until blended. Fold in cranberries and pecans. Cover and refrigerate for at least 1 hour. Serve with crackers.

3/4 cup jellied cranberry sauce
1 to 2 tablespoons prepared horseradish
1 tablespoon honey
1-1/2 teaspoons lemon juice
1-1/2 teaspoons Worcestershire sauce
1/8 to 1/4 teaspoon cayenne pepper
1 garlic clove, minced
Miniature hot dogs or smoked sausage links, warmed
Sliced apples or pears

Steps:

  • In a small saucepan, combine the first seven ingredients; bring to a boil, stirring constantly. Reduce heat. Cover and simmer for 5 minutes, stirring occasionally. Serve warm with sausage and/or fruit.

I find any excuse possible to serve this. Great around the holidays but worthy of being made all year round. It is the dish I am most often asked to bring to a gathering requiring finger foods or appetizers. Really good on Townhouse Wheat Crackers. If I don't have any orange juice concentrate, I use just enough fresh squeezed juice to make it the right consistency and the zest from the orange for more flavor. *PLEASE NOTE!!* You REALLY need to make this ahead of time! The flavors must blend for it to taste good!

8 ounces cream cheese, softened
1/2 cup chopped pecans
1/2 cup dried cranberries
1/4 cup orange juice concentrate

Steps:

  • Using an electric mixer, beat at medium speed and cream the cream cheese until soft and fluffy.
  • Add remaining ingredients and stir to combine.
  • Cover with plastic wrap and refrigerate until flavors blend, at the very least 60 minutes.

ROASTED GARLIC CRANBERRY CREAM CHEESE SPREAD



Roasted Garlic Cranberry Cream Cheese Spread image

Lightly sweet and savoury with a delicate but addicting flavor. The original recipe called for currants and almonds, but since I didn't have either, I came up with this winning variation. Prep time doesn't include soaking the cranberries or refrigeration.

2 heads roasted garlic
1/2 cup dried cranberries
8 ounces cream cheese
salt
pepper

Steps:

  • Macerate, i.e.soften, the cranberries by soaking in water (or rum to add a touch of flavor) for 20-30 minutes.
  • Microwaving briefly might also work.
  • Bring the cream cheese to room temperature (leave out or microwave 30-60 seconds) unless it's whipped.
  • Make garlic into paste (squeeze out of skins and mash) Mix garlic paste and cranberries into cream cheese.
  • Add salt and pepper to taste (those who prefer sweet to savory may also want to add a teaspoon of sugar or another sweetener).
  • Refrigerate for at least two hours.
  • Serve with crackers or in tea sandwiches.
