BANANA-WALNUT MINI LOAVES

Steps:
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas. , Combine the flour, cardamom, baking soda, cinnamon and nutmeg; gradually add to banana mixture just until moistened. Fold in walnuts. , Pour into six greased 4-1/2x2-1/2x1-1/2-in. loaf pans. Bake at 350° for 22-26 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , In a small bowl, combine the spread ingredients. Serve with bread. Refrigerate leftovers.

Steps:
- In a large bowl, combine the flour, sugar, baking powder and salt. Combine the marmalade, orange juice, oil and egg; stir into dry ingredients just until moistened. Stir in walnuts. Pour into three greased 5-3/4x3x2-in. loaf pans., Bake at 350° for 40-50 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

WALNUT MINI-LOAVES
Steps:
- In a bowl stir together the flour, the baking powder, the salt, and 1/2 cup of the walnuts. In another bowl cream together the shortening and the brown sugar, beat in the egg, the milk, and the vanilla, and stir in the flour mixture until the batter is just combined. Divide the batter between 2 greased and floured 5- by 2-inch mini-loaf pans, sprinkle it with the remaining 1/4 cup walnuts, and bake the loaves in the middle of a preheated 375°F. oven for 30 to 35 minutes, or until a tester inserted in the center comes out clean. Serve the loaves warm.
