1/3 cup all-purpose flour
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
2 large eggs
2-1/4 pounds walleye, perch or pike fillets
1-1/2 cups mashed potato flakes
1/3 cup vegetable oil
Tartar sauce and lemon wedges, optional

Steps:

  • In a shallow bowl, combine flour, paprika, salt, pepper, onion powder and garlic powder. In another bowl, beat the eggs. Dip both sides of fillets in flour mixture and eggs, then coat with potato flakes. , In a large skillet, fry fillets in oil for 5 minutes on each side or until fish flakes easily with a fork. Serve with tartar sauce and lemon if desired.

2 walleye fillets
1/2-cup flour; seasoned with salt and pepper
1/2-cup flour; seasoned with salt and pepper
2 eggs, beaten with a little milk
1/4-cup fresh breadcrumbs
1/4-cup ground hazelnuts
clarified butter or vegetable oil for frying
lemon wedges for garnish

Steps:

  • Mix breadcrumbs and hazelnuts together. Prepare fish by dredging it in the flour, dipping it in the egg wash and coating the fillets with the breadcrumb/hazelnut mixture. Heat a heavy skillet over medium-high heat and fry the walleye fillets in clarified butter until the crust is a golden brown. Flip the fish and repeat on the other side. The flesh of the fish should be white all the way through, but not dry and flaky. Serve with lemon wedges for garnish.

SAUTEED WALLEYE WITH CITRUS BUTTER



Sauteed Walleye With Citrus Butter image

4 6-oz. pieces walleye, skinned and cut in half
1 cup milk
salt to taste
Black Walnut Batter Mix, for dusting (recipe follows)
1 cup vegetable oil
citrus Butter (recipe follows)
1 tsp. parsley, chopped for garnish
1/2-cup cracker meal
1/2-cup Fry Krisp batter mix
1/2-cup black walnuts, finely chopped
BLACK WALNUT BATTER: Mix all ingredients together.
2 cloves garlic
1/2-cup butter, melted
1/3-cup orange juice
1/4-cup lemon juice
2 Tbs. soy sauce
2 tsp. lemon zest
2 tsp. orange zest

Steps:

  • WALLEYE: Rinse walleye and soak in milk for 1 hour. Season fish with salt and dust in Black Walnut Batter Mix. Heat oil in large saute pan. Place fish in pan and cook until golden, approximately 5-6 minutes. Remove from pan. Serve with warm Citrus Butter and parsley garnish.
  • CITRUS BUTTER: Place garlic and butter in blender and process until well blended. Transfer to bowl. Whisk in remaining ingredients.

PECAN-CRUSTED WALLEYE

¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon ground paprika
1 pinch cayenne pepper
1 pinch salt
1 cup ground pecan meal
4 (4 ounce) fillets walleye
1 tablespoon butter
1 tablespoon vegetable oil

Steps:

  • Beat the egg with the garlic powder, onion powder, paprika, cayenne pepper, and salt until evenly mixed. Spread the pecan meal into a shallow dish. Dip the walleye fillets into the egg mixture, then press into the pecan flour.
  • Heat the butter and vegetable oil in a large skillet over medium-high heat. Place the walleye fillets into the pan. Cook until golden brown on both sides and the fish flakes easily with a fork, 3 to 4 minutes per side.
