Cherry Chocolate Chip Walnut cake Recipe - (4.5/5) image

1 box white cake mix
3 eggs
1 (21 oz) can cherry pie filling
1 C. mini chocolate chips
1 C. chopped walnuts
ICING
2 T. warm water
1 t. vanilla extract
1 t. almond extract or black walnut extract
1/4 t. salt
1-2/3 C. powdered sugar

Steps:

  • Preheat oven to 350. Mix all cake ingredients together using a spoon or spatula. Pour evenly into a greased bundt pan or a 9 x 13 cake pan. Bake 45-50 minutes in a bundt pan; 35-40 minutes in a 9 x 13 cake pan. Cake will be golden brown. Toothpick inserted in the center will come out clean. Optional icing: Combine first 4 ingredients. Add powdered sugar and mix well until desired consistency. Drizzle icing over cake. Store in airtight container.

2 tablespoons butter, softened
2 large eggs
1 teaspoon salt
2 cups all-purpose flour
2 teaspoons baking soda
2 cans (14-1/2 ounces each) pitted tart cherries
1 cup chopped walnuts
TOPPING:
2 cups heavy whipping cream
1/4 cup confectioners' sugar
1/2 cup sugar
2-1/2 teaspoons cornstarch
1/8 teaspoon red food coloring, optional

Steps:

  • In a large bowl, beat sugar and butter until crumbly; stir in the eggs and salt. Combine flour and baking soda; stir into sugar mixture until combined. Drain cherries, reserving 1/2 cup juice; set juice aside. Gently stir cherries and walnuts into sugar mixture. , Pour into a greased 13x9-in. baking dish. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack., For topping, in a small bowl, beat cream and confectioners' sugar until soft peaks form. Spread over cake; refrigerate for 2 hours. , In a small saucepan, combine sugar and cornstarch. Stir in reserved cherry juice until smooth. Stir in food coloring if desired. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Cool. Just before serving, drizzle over whipped cream. Refrigerate leftovers.

1 c hot water
1 c dates, chopped
1/2 c butter, softened
1 c sugar
1 1/2 c all purpose flour
1 c maraschino cherries, drained
1 c walnuts, chopped
1 egg
1 pinch salt
1 tsp vanilla extract
1 tsp baking soda

Steps:

  • 1. Add hot water to dates. Set aside.
  • 2. Cream butter, egg, salt, sugar and vanilla.
  • 3. Gradually add flour and soda.
  • 4. Add dates with liquid, cherries and walnuts. Mix thoroughly.
  • 5. Pour mixture into greased and lightly floured 13x9 baking pan.

1 cup glazed cherries, halved
2 1/4 cups self-rising flour (if you don't have self-rising flour, use all-purpose flour mixed with 1/2 tablespoon baking powder and 1/2 teaspoon salt)
3/4 cup unsalted butter (12 tablespoons)
2/3 cup white granulated sugar
3 large eggs
3/4 cup milk
1 1/2 cups finely chopped walnuts
1/2 cup shredded coconut
1/4 cup confectioners' sugar, for dusting (optional)

Steps:

  • 1. Preheat oven to 350°F (180°C). Butter and lightly flour a 9-inch square baking dish; set aside.
  • 2. In a large mixing bowl, toss the halved cherries with 5 Tbsp flour until coated. Add the butter, and beat until soft. Add sugar and continue beating until mixture is light and fluffy. Add the eggs, one at a time and beating well after each addition.
  • 3. Alternately fold in remaining flour and milk, starting with and ending with flour. Fold in the flour-coated cherries, walnuts and coconut.
  • 4. Spoon mixture in an even layer in the prepared baking dish, and bake for 50 to 60 minutes until toothpick comes out clean.
  • 5. Remove baking dish from oven and let cool in pan completely before slicing.
  • 6. Just before slicing, sift a little confectioner's sugar on top, if desired. Slice and serve. It's a great snack cake to serve with coffee or tea.

1 cup walnuts
1 -18 ounce white cake mix
1/2 teaspoon vanilla
6 drops red food coloring
8 ounces Cool Whip, thawed
1 (21 ounce) can cherry pie filling

Steps:

  • Coarsely chop 1/4 cup of the walnuts and set aside. Chop remaining 3/4 cup of walnuts medium-fine.
  • As package directs, prepare white cake mix, adding vanilla and the 3/4 cup of walnuts. Bake in two 9-inch layer pans. Cool for 10 minutes and then invent onto wire racks til cooled.
  • Fold the food coloring into the Cool Whip. Spread a 1 inch wide ring of topping onto outer edge of each cake layer. Spoon pie filling in center of each layer, using half of pie filling for each layer.
  • Place one layer on a serving plate, top with second layer of cake. Spread remaining topping on sides of cake. Sprinkle reserved 1/4 cup coarsely chopped walnuts on top of cake. Chill.

1/4 cup sugar
2 tablespoons all-purpose flour
1 tablespoon cold butter
1/4 cup chopped walnuts

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine flour and baking powder; gradually add to creamed mixture alternately with milk, beating well after each addition. , Spread half of batter in a greased 8-in. square baking dish.
