Jumbo Fluffy Walnut Apple Muffins image

A large fluffy muffin with a sweet buttery topping. My jumbo muffin tins hold 1 cup per muffin, so this is scaled for my tins.

½ cup butter
1 ¼ cups white sugar
1 teaspoon vanilla extract
½ teaspoon salt
2 eggs
1 ¾ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon ground cinnamon
½ cup milk
2 cups peeled, cored and sliced apples
½ cup walnuts
¼ cup white sugar
½ teaspoon ground cinnamon
3 tablespoons all-purpose flour
2 tablespoons butter, cubed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Coat top and insides of jumbo muffin pan with cooking spray, or line with muffin papers.
  • In a large bowl, cream together 1/2 cup butter, 1 1/4 cups sugar, vanilla, and salt until light and fluffy. Beat in eggs, one at time. Mix together the 1 3/4 cups of flour, baking powder, and 1/2 teaspoon cinnamon. Stir in the flour mixture alternately with the milk, mixing just until incorporated. Fold in apples and walnuts. Scoop into muffin cups to fill 3/4 full. Lightly sprinkle the tops with cinnamon crumble.
  • To make Cinnamon Crumble: In a small bowl, combine 1/4 cup white sugar, 1/2 teaspoon of cinnamon, 3 tablespoons all-purpose flour, and 2 tablespoons cubed butter. Mix together using a pastry blender, or two butter knives. The crumble topping should resemble small peas.
  • Bake in preheated oven for 30 minutes, or until tops are golden brown, and a toothpick inserted into the center comes out clean. If they are browning too quickly, cover with tin foil. Remove from pans, and cool on wire rack.

1 cup chopped peeled tart apple
1/2 cup sugar
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 large egg
1/3 cup 2% milk
3 tablespoons canola oil
1 teaspoon vanilla extract
3 tablespoons chopped walnuts
3 tablespoons raisins

Steps:

  • In a small bowl, combine the apple and sugar; set aside. Combine the flour, baking powder, cinnamon and salt. In another bowl, whisk the egg, milk, oil and vanilla; stir into dry ingredients just until moistened. Fold in the apple mixture, walnuts and raisins. , Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter. , Bake at 375° for 18-20 minutes or until a toothpick inserted in the center comes out clean. STREUSEL:
1 1/3 cups ground sunflower seeds, pepitas and flaxseed or almond meal
1 cup coconut sugar or xylitol
2 apples, peeled and grated
1 1/2 tablespoon coconut flour
1 tablespoon ground cinnamon
1 1/2 teaspooon baking powder
2 free range eggs
2 tablespoon oil
1/2 cup walnuts, rolled oats, pepitas or sunflower seeds
1/3 cup coconut, shredded
2 tablespoon coconut sugar or xylitol
1 large teaspoon ground cinnamon
2 tablespoon maple syrup or rice syrup
1 tablespoon coconut oil or butter

Steps:

  • Note: If you don't want to go to the trouble of making the streusel then add the 1/2 cup walnuts and 1/3 cup coconut to the muffin mix at stage 1. Preheat oven the 350°F. (180°C) Add ground seeds or almond meal, sugar, coconut flour, cinnamon and baking powder to a large mixing bowl and stir to combine. Add the grated apple and stir through making sure that there are no clumps and the dry mix is evenly distributed through the grated apple. This will ensure that the apple doesn't end up in clumps when baked. The mix will be very wet. Make a well in the centre then add the egg and oil. Mix them together quickly to break up the eggs and combine with the oil Quickly fold the egg mixture through the mix then spoon or pour into the muffin pans. Bake for 15 minute then add the streusel and bake for another 5 minutes or until done. It's ok to take them out of the oven, just be quick! If not adding the streusel then bake for 20 minutes or until done. Add the walnuts, coconut and cinnamon to a blender or food processor and light pulse to combine and break up the mixture until it resembles course bread crumbs. Alternately you can chop the walnuts into small pieces then add them to the coconut. Add the syrup and oil/butter the pulse again until they cover the whole mix. If you're not using a blender then distribute evenly with your fingertips until the mixture is moist and sticky. Use the seed mix for the flour and sunflower seeds, pepitas or oats for the streusel.

  • Grind the flax seed to a course powder using a blender or coffee grinder.

Stir in apples and let sit for 10 minutes so that the apples release their juices. Stir in the melted butter and nuts. Fold into dry ingredients. 4. Divide batter among 12 greased or lined muffin tins. Bake for 14 to 16 minutes, until a testing stick comes out clean. Let cool for a few minutes before removing them from the pans as they are very tender.

I was looking to use up some apples from a recent apple picking execution and came up with this tasty treat adapted from other low fat recipes. These are moist and delicious. Hope you like them too:-)

1 cup(s) unbleached white flour
1 cup(s) whole wheat flour
1 cup(s) brown sugar, firmly packed
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1 teaspoon(s) vanilla extract
1/4 cup(s) vegtable oil or canola oil
2 large eggs
3/4 cup(s) butter milk
2 medium golden delicousious apples or your choice
1/2 cup(s) walnuts
1 teaspoon(s) cinnimon
1/2 teaspoon(s) nutmeg
1 cup(s) unsweatened apple sauce

Steps:

  • Mix together flour, cinnimon, nutmeg, salt, baking soda. In separate add 2 beaten eggs with brown sugar until well incorporated add oil vanilla and butter milk. Mix wet to dry with whisk. Add finely chopped apples and chopped walnuts. Spray muffin tins or use paper cups. Bake in pre-heated 400 deg. oven for 20 min cool on rack for 10min and enjoy. ( mix apple sauce in with the rest of the wet ingredients)

These are easy to make, Nice apple flavor. Great with a big glass of cold milk, or a cup of hot coffee or tea. You can cut the recipe in half if you want.

1 cup(s) butter
3/4 cup(s) sugar
2 medium eggs, beaten
5 cup(s) sifted cake flour
1 teaspoon(s) salt
8 teaspoon(s) baking powder
2 cup(s) milk
2 1/2 cup(s) peeled and diced apples
2 teaspoon(s) vanilla
1/2 teaspoon(s) apple extract (optional)
1 cup(s) chopped walnuts (optional)
- sugar and cinnamon for topping

Steps:

  • Cream butter and the sugar until light and fluffy, add the beaten eggs and beat until well combined. add the vanilla and apple extract to the milk
  • add the dry ingredients to the sugar mixture alternating with milk. beat until well combined, fold in the chopped apples and walnuts.
  • Fill greased or cup cake paper lined muffin cups, about 2/3 full. Sprinkle with sugar and cinnamon ( I use about 2 teaspoons on each)
  • Bake in pre heated 400 degree oven for 20-25 minutes or until a tooth pick comes out clean.
  • After Muffins have cooled completely I drizzle mine with powder sugar that I have mixed with a little cream and apple extract just thin enough to drizzle but it firms up after sitting for a few minutes

1 cup walnuts, chopped
2 tablespoons ground flax seeds
2 teaspoons baking powder
1 tablespoon cinnamon
1/2 teaspoon salt

1 cup unsweetened applesauce
1/2 cup coconut oil, melted
1/2 cup sour cream

Steps:

  • Preheat oven to 325. Line muffin tins with foil or paper baking cups.
  • Combine all dry ingredients. In a separate bowl, combine all wet ingredients.
  • Stir wet ingredients into dry ingredients until well blended.
  • Spoon into baking cups.
  • Bake muffins 30 minutes or until a toothpick comes out clean. Cool for 20 minutes.
