2 cups rice, washed and drained
2 teaspoons salt
500 ml coconut milk
500 ml water
2 tablespoons coconut milk, extra

Steps:

  • Put the rice, salt and 2 cups coconut milk and water in a pan. Over medium heat bring to a boil, stirring occasionally.
  • Reduce heat, cover with lid and simmer very gently until the rice is done, about 20-25 minutes.
  • Just before serving, add thick coconut milk and fluff up with a fork (not a spoon or you will mush up the rice). Serve with beef or chicken stew and vegetables of your choice.

2 cups coconut milk
2 3/4 cups water
2 cups rice
1 teaspoon salt

Steps:

  • Clean and wash rice.
  • Bring the coconut milk and water to a boil.
  • When boiling, pour in the rice.
  • Add salt.
  • Leave to cook on medium heat.
  • When nearly dry, cover well.
  • Turn down the heat and leave to cook for 10 minutes.
  • (If you have a rice cooker, put all of the ingredients in the rice cooker and turn it on.).
  • Watch it to make sure it does not burn, adding more water if needed to keep it from burning.

4 cups thin coconut milk
1 pinch salt
2 tablespoons thick coconut milk

Steps:

  • In a saucepan, put rice, thin coconut milk, and a pinch of salt. Heat to boiling. Reduce heat and simmer until rice is done. Add more thin coconut milk if rice cooks dry before it is done. This should take around 20 minutes.
  • Add the thick coconut milk right before serving.
  • This goes great with chicken or beef and vegetables.
