WALDORF SLAW

A wholesome, wintry salad that makes the perfect side dish to ham or a pork pie

1 small white cabbage , shredded
4 sticks celery , sliced
2 green apples , peeled and diced
handful grapes , halved
6 tbsp light mayonnaise
1 tbsp white wine vinegar
50g walnuts , roughly chopped

Steps:

  • In a large bowl, combine the cabbage, celery, apples and grapes. Mix the mayo with the vinegar and season. Stir it into the vegetables so that they are well coated. Sprinkle on the walnuts and serve. Will keep in the fridge for up to 3 days.

2 large Granny Smith apples, diced small
1 cup chopped walnuts
1/2 cup mayonnaise
1/3 cup poppy seed dressing

Steps:

  • In a large bowl combine slaw mix, diced apples, and chopped walnuts; set aside.
  • In a small bowl, stir to combine mayonnaise and poppy seed dressing. Pour dressing over slaw mixture and toss to combine. Cover and refrigerate 1 hour before serving.

1/4 cup light mayonnaise
1/4 cup low-fat sour cream
1 tablespoon fresh lemon juice
1 teaspoon sugar
1/2 teaspoon salt
1 (16 ounce) bag packaged coleslaw mix
1 Red Delicious apple, cored and cut into 1/2 inch pieces
1 granny smith apple, cored and cut into 1/2 inch pieces
1 stalk celery, thinly sliced
1/3 cup dark seedless raisins
1/2 cup walnuts, toasted and coarsely chopped
radish, with tops (to garnish)

Steps:

  • In a large bowl, mix mayonnaise, sour cream, lemon juice, sugar and salt until combined.
  • Add cabbage mix, apples, celery and raisins to bowl with dressing, toss well.

4 slices bacon, cut into 1/2-inch pieces
1/4 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon dijon mustard
1 teaspoon sugar
1 teaspoon celery seeds
2 apples (such as Gala or Fuji)
2 stalks celery, thinly sliced
2 carrots, shredded
1/2 cup walnuts
1/2 cup golden raisins
1 tablespoon chopped fresh parsley
Kosher salt and freshly ground pepper

Steps:

  • Cook the bacon in a medium skillet over medium heat, stirring occasionally, until golden brown and crisp, about 8 minutes; drain on paper towels.
  • Whisk the mayonnaise, vinegar, mustard, sugar and celery seeds in a large bowl until combined. Slice the apples into matchsticks, then add to the bowl with the dressing along with the celery, carrots, walnuts, raisins, parsley and bacon. Season with salt and pepper and toss.

FOR THE SALAD
4 slice(s) bacon
2 medium apples, granny smith
2 stalk(s) celery, thinly sliced
2 medium carrots, grated
1/2 cup(s) walnuts
1/2 cup(s) golden raisins
3-4 dash(es) salt and pepper
FOR THE DRESSING
1/4 cup(s) mayonnaise
2 tablespoon(s) apple cider vinegar
1 tablespoon(s) dijon mustard
1 teaspoon(s) sugar
1 teaspoon(s) celery seeds

Steps:

  • Cook the bacon in a medium skillet over medium heat, til golden brown. Drain on paper towels and chop into 1/2 inch pieces.
  • Wash, then cut and core the apple. Chop the apple into small chunks. Put the apples, bacon, celery, carrots, and golden raisins in a large bowl. Sprinkle with salt and pepper.
