1 teaspoon lemon juice

3 apples -- peeled, cored, and chopped
1 cup thinly sliced celery
½ cup chopped walnuts
½ cup raisins

Steps:

  • In a medium bowl, whisk together the mayonnaise, sugar, lemon juice, and salt.
  • Stir in the apples, celery, walnuts, and raisins. Chill until ready to serve.

1/4 cup low-fat plain yogurt
1 tablespoon fresh lemon juice
1/2 teaspoon honey
1/2 teaspoon coarse salt
1/4 teaspoon ground pepper
1 about 2 cups apple, cored and cut into 1/2-inch pieces
1 about 1/2 cup celery, thinly sliced crosswise
1/2 cup halved red seedless grapes
4 boston lettuce leaves
1/2 cup chopped toasted walnuts

Steps:

  • In a medium bowl, whisk together yogurt and lemon juice and honey; season with coarse salt and ground pepper.
  • Add apple, celery, red seedless grapes, and toasted walnuts; toss to coat with dressing. Cover; refrigerate until ready to serve, up to overnight.
  • Divide salad in half; serve each portion on 2 Boston lettuce leaves.

3 tart apples - peeled, cored and chopped
1 tablespoon lemon juice
1 cup seedless grapes
2 stalks celery, chopped
2 green onions, chopped
2 tablespoons mayonnaise
2 tablespoons plain yogurt
3 tablespoons apple juice
¼ teaspoon celery seed
1 bunch watercress, trimmed and chopped
2 tablespoons chopped walnuts

Steps:

  • In a large bowl, combine the apples and lemon juice. Add the grapes, celery, and green onions; toss.
  • In a small bowl, whisk together the mayonnaise, yogurt, apple juice and celery seeds. Spoon over the apple mixture, and toss gently.
  • Wash the watercress, and dry thoroughly. Arrange greens on individual salad plates. Mound the apple mixture on top, and sprinkle with the walnuts.
