This is a variation of the classic salad with apples, grapes, celery and nuts. If you aren't a walnut fan, pecans make an excellent substitute. Creamy salad dressing can be substituted for mayonnaise.

2 cups chopped apples
1 ½ lemons, juiced
¼ cup chopped celery
¼ cup chopped walnuts
¼ cup raisins
¼ cup seedless grapes, halved
½ cup heavy cream, whipped
¼ cup mayonnaise
1 pinch ground nutmeg

Steps:

  • In a large bowl, toss together the apples and lemon juice. Stir in the celery, nuts, raisins and grapes.
  • Fold together the whipped cream and mayonnaise; add to salad and mix well.
  • Sprinkle with nutmeg and chill before serving.

This is my version of Waldorf Salad; it's very fast and easy.

½ cup mayonnaise
2 ½ tablespoons distilled white vinegar
1 apple - peeled, cored, and chopped
1 large stalk celery, diced
½ cup raisins
½ cup chopped walnuts
salt and pepper to taste

Steps:

  • In a mixing bowl, whisk together the mayonnaise and vinegar.
  • Add the apples, celery, raisins and walnuts if desired. Add salt and pepper to taste.
  • Mix together well and serve chilled.

I couldn't ever find the perfect Waldorf salad - one that wasn't too mayonaise-y tasting, yet one that still held enough of the original flavor to be called a Waldorf. So I mixed and matched and experimented, and finally came up with a perfect twist on the classic Waldorf Salad recipe. Now I get requests for it at every family get together!

2 Granny Smith apples, cored and diced
1 Red Delicious apple, cored and diced
1 Asian pear, cored and cubed
1 stalk celery, diced
½ cup sliced almonds
1 cup golden raisins
1 cup seedless green grapes, halved
1 ½ cups sweetened dried cranberries
1 ¼ cups plain yogurt
¼ cup white sugar
⅓ cup brown sugar
¾ cup mayonnaise
3 tablespoons lemon juice
½ teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the Granny Smith apples, Red Delicious apple, Asian pear, celery, almonds, golden raisins, grapes and cranberries. In a separate bowl, stir together the yogurt, white sugar, brown sugar, mayonnaise, lemon juice and cinnamon. Pour the dressing over the fruit mixture and stir gently until evenly coated.

Updated Waldorf Salad with Apple Vinaigrette image

1 tablespoon safflower or grapeseed oil
1/2 cup whole-wheat pearl couscous
Kosher salt
1/4 cup apple cider vinegar
1 tablespoon honey
Kosher salt and freshly ground black pepper
1/3 cup safflower or grapeseed oil
1 large Gala apple, cored and cut into 1/4-to- 1/2-inch dice
1 small fennel bulb, chopped into 1/4-to- 1/2-inch pieces
1 cup small green seedless grapes, halved
3/4 cup walnut pieces, toasted
6 outer leaves from a large radicchio

Steps:

  • Make the couscous: In a small saucepan, heat the oil over medium-high heat. Add the couscous and toast until lightly golden, about 4 minutes. Add 3/4 cup water and 1/4 teaspoon salt and bring to a boil. Lower the heat so the water simmers; cover the pan and cook until the liquid is absorbed, about 10 minutes. Uncover the pan and set aside to cool.
  • Make the vinaigrette: In a small bowl, whisk together the vinegar, honey, 1 1/2 teaspoons salt, 1/4 teaspoon pepper and the oil.
  • Make the salad: In a large bowl, toss together the apple, fennel, grapes, walnuts and couscous. Drizzle the vinaigrette over the salad, tossing until coated.
  • Put 1 radicchio leaf on each plate. Spoon the salad into each leaf, allowing some to spill over.
