WALDORF SALAD SKEWERS



Waldorf Salad Skewers image

1 Honeycrisp apple, cored and cut into 12 slices
1 lemon, juiced (optional)
16 green grapes
One 3-inch piece celery, sliced into 12 slices
24 salad leaves from a mesclun mix (baby gem, spinach and frisee)

Steps:

  • Toss the apple in lemon juice in a bowl if making ahead.
  • Using a 7-inch bamboo skewer, spear a green grape, an apple slice, a slice of celery, a green grape, and a group of 3 three salad leaves-a baby gem, a baby spinach and a piece of frisee, pierced through the middle onto the skewer.
  • Repeat with an apple slice, a celery slice, a green grape and three salad leaves. Add a third apple slice, a third celery slice and fourth grape. Repeat the process to build three more skewers.

My grandma always made stuffed celery at Thanksgiving and Christmas. As kids, we were always so hungry before the holiday meal we would sneak and get a piece of celery to curb our appetite. It was nearly all gone by meal time and we always got fussed at with hint of a grin from Grandma. Now I never have holiday meals without it!

1 bunch celery - large stalks washed, trimmed, and cut into 3 sections
2 (8 ounce) packages cream cheese at room temperature
¾ cup chopped pimento-stuffed green olives
2 cloves garlic, finely minced
1 pinch salt and freshly cracked black pepper to taste

Steps:

  • Thoroughly dry each piece of celery with paper towels. Mix the cream cheese, olives, garlic, salt, and black pepper in a bowl. Using a knife, spread a generous amount of cream cheese filling down the center indentation of each celery piece. Serve immediately or refrigerate.

½ small red onion, (about ¼ cup chopped)
¼ cup pecans (25 grams)
⅓ cup pecorino cheese powder (35 grams), see note 2
paprika, for sprinkling
black pepper, for sprinkling

Steps:

  • In a food processor, process cream cheese, onion, pecans and pecorino.
  • With a spoon, fill each celery cavity with a cream cheese mixture.

10 -12 stalks celery, cut into 1-2 inch pieces
1 (8 ounce) package cream cheese
1/2 cup black walnut, chopped
1 dash garlic powder
1/8 teaspoon salt
1/8 teaspoon black pepper

  • Combine cream cheese, nuts, garlic powder, salt and pepper and blend well.
  • Stuff the celery with the above mixture.

2 to 3 cups vegetable oil
1/2 cup all-purpose flour
1/2 teaspoon salt, plus extra for sprinkling
1/2 teaspoon black pepper
2 eggs, lightly beaten
1 1/4 cups panko breadcrumbs
4 celery stalks, cut into 3-inch sticks, 24 sticks in total
Special equipment: deep-fat thermometer

Steps:

  • Heat about 1 1/2 inches vegetable oil in a medium heavy pot over medium heat to 360 degrees F.
  • Whisk the flour, 1/4 teaspoon salt and 1/4 teaspoon pepper in a shallow bowl. Whisk 1 tablespoon water and the eggs in a separate shallow bowl. Place the breadcrumbs and remaining 1/4 teaspoon salt and pepper in a separate shallow bowl.
  • Toss one-third of the celery in the flour mixture, shaking off excess. Transfer the celery to the egg mixture and turn with a fork to coat. Lift out the coated celeries 2 at a time, letting the excess egg drip off. Place the celery in the breadcrumbs, slightly pressing the celery into the breadcrumbs to make sure they're well coated. Carefully drop the celery into the pot and fry in batches of 3, turning occasionally, until golden, 2 to 3 minutes. Transfer the celery to a wire rack or fresh paper towels, to drain, using a slotted spoon.
  • Repeat the coating and frying process with the remaining celery sticks. Keep the oil to 360 degrees F between batches. Sprinkle the celery with salt and serve immediately.

1 small white cabbage , shredded
4 sticks celery , sliced
2 green apples , peeled and diced
handful grapes , halved
6 tbsp light mayonnaise
1 tbsp white wine vinegar
50g walnuts , roughly chopped

Steps:

  • In a large bowl, combine the cabbage, celery, apples and grapes. Mix the mayo with the vinegar and season. Stir it into the vegetables so that they are well coated. Sprinkle on the walnuts and serve. Will keep in the fridge for up to 3 days.
