The original recipe is delicious, but this is my healthier version, with less fat and calories. It also freezes beautifully and individual portions can be reheated in 3 minutes in the microwave. As a single person, I can't eat 8 portions at one sitting, so I divide and freeze. But it's great if family visits, because I can have the portions ready to reheat, and it's also great if you're in a hurry in the morning and don't have time to cook before heading off to work.

8 frozen hash brown patties
2 (6 ounce) packages Canadian bacon, quartered
4 cups shredded Cheddar-Monterey Jack cheese blend
1 ¾ cups egg substitute (such as Egg Beaters® Southwestern Style)
1 cup 2% milk
½ teaspoon salt
½ teaspoon ground mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Arrange hash brown patties in a single layer in the prepared baking dish; top with Canadian bacon. Sprinkle Cheddar-Monterey Jack cheese over Canadian bacon.
  • Whisk egg substitute, milk, salt, and mustard together in a bowl; pour over cheese layer. Cover dish with aluminum foil.
  • Bake in the preheated oven for 1 hour. Remove aluminum foil and bake until a knife inserted in the center comes out clean and edges are golden brown, about 15 minutes.

8 frozen hash brown patties
4 cups shredded cheddar cheese
1 pound cubed fully cooked ham (2 cups)
7 large eggs
1 cup 2% milk
1/2 teaspoon salt
1/2 teaspoon ground mustard

Steps:

  • Preheat oven to 350°. Place hash brown patties in a single layer in a greased 13x9-in. baking dish. Sprinkle with cheese and ham. In a large bowl, beat eggs, milk, salt and mustard. Pour over ham. , Cover and bake 1 hour. Uncover; bake until edges are golden brown and a knife inserted in the center comes out clean, about15 minutes longer.

8 Tbsp butter, divided
3 c chopped veggies such as peppers, onions, and broccoli florets or whatever you choose
8 large eggs
2 c milk
2 c shredded cheddar cheese, divided
1 bag(s) (16 oz.) frozen hash brown potatoes, thawed
8 slice crisp bacon, chopped

Steps:

  • 1. Melt 7 Tbsp. butter in a large skillet over medium-high heat. Add vegetables and cook, stirring occasionally, until tender, about 8 minutes.
  • 2. Whisk eggs with milk in a large bowl. Add 1-1/2 cups cheese, the cooked vegetables, potatoes, and bacon; stir well.
  • 3. Pour into a 13x9" baking dish that has been buttered with 1 Tbsp. of the butter.
  • 4. Cover with foil and bake in a preheated 350º oven for 45 minutes. Uncover; sprinkle with remaining 1/2 cup cheese and bake 30 minutes more, or until eggs are thoroughly cooked.

My four kids went to visit my aunt and uncle in Wisconsin and came home ranting and raving about this great breakfast! I convinced my aunt to send the recipe and it is so easy and yummy! Also so easy to adapt to whatever you have in the fridge, onions, mushrooms, broccoli, sausage, etc!

8 frozen hash brown patties
4 cups shredded cheddar cheese (I never use all cheddar preferring to mix cheeses)
1 lb fully cooked cubed ham (2 cups)
10 eggs
1 cup half-and-half cream (I just use 2% milk)
1/2 teaspoon salt
1/2 teaspoon ground mustard
pepper
1 cup crisp diced bacon (optional)

Steps:

  • Place hash brown patties in 13x9 greased casserole.
  • Sprinkle with cheese, and ham.
  • In a bowl, beat eggs, half-and-half, salt and mustard well.
  • Pour over ham.
  • Sprinkle with pepper and bacon if desired.
  • Cover.
  • At this point it can be refrigerated and baked in the morning.
  • Bake at 350°F for 45 minutes covered, (I have have baked at 400°F for 30 minutes also).
  • Uncover and bake additional 15 minutes or longer until edges are golden brown and knife inserted in center comes out clean.
  • Cool slightly and cut around the hash brown patties to serve.
