In the 1930s, producers of a popular radio program called Jake and Lena invited listeners to write in for this recipe. My mother changed the name from Jake and Lena Cookies to Poor Man's Cookies because they contained no eggs, milk or nuts. Despite the name, the cookies are rich in taste!

1 cup shortening
1 cup packed brown sugar
1/2 cup sugar
1/4 cup water
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoons salt
2 cups rolled oats

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Beat in water and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in oats., Drop dough by tablespoonfuls onto greased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Allow to stand 2 minutes before removing to a wire rack to cool.

1 1/2 cups flour
3 tablespoons Dutch process cocoa powder
1/2 teaspoon salt
1 cup sugar
1 teaspoon baking soda
2 teaspoons vanilla
1 teaspoon white vinegar
6 tablespoons vegetable oil
1 cup cold water

Steps:

  • Preheat 350 degrees F.
  • Place the dry ingredients in a bowl. Make 3 small holes in the mixture. Pour the vanilla in one hole, the vinegar in another and vegetable oil in another. Pour water over the top and mix. Pour into a lightly greased 8 by 8 inch pan. Bake for 30 to 35 minutes.

3 tablespoon chocolate cocoa
1/2 cup milk
1 cube butter
3 cups oatmeal
1 tablespoon vanilla
1/2 cup peanut butter

Steps:

  • Mix sugar, cocoa, milk and butter together in large saucepan and boil for 3 minutes; stir continuously to prevent burning.
  • Remove from heat and quickly stir in oatmeal, vanilla and peanut butter.
  • Drop spoonfuls onto wax paper quickly.

This cake is make without milk or eggs and is moist, dark and delicious. A brain child of the depression era when ingenious cooks developed a cake that could be made without expensive and scarce ingredients.

1 ½ cups all-purpose flour
1 cup white sugar
4 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
1 tablespoon cider vinegar
6 tablespoons vegetable oil
1 cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift flour, sugar, salt, soda, and cocoa together into an 8x8 inch ungreased cake pan. Make three depressions. Pour oil into one well, vinegar into second, and vanilla into third well. Pour water over all, and stir well with fork.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.
