Talk about comfort food...these are so good! My aunt calls them Beef Birds, my Mom always called them Bacon Rolls. I have seen similar recipes under the name Roulades. My brother always asked for this for his "Birthday Dinner" meal when we were kids. LOL Jazz it up with any herbs and spices you like. I usually get about 24 birds, leftovers freeze well. This recipe is very forgiving, I have even simmered 2 hours with no problems. Prep time is approximate, you may be faster than me. Serve with potatoes to soak up all that delicious gravy! Hope you enjoy as much as we do!

2 lbs round steaks
1 lb bacon, more if needed
1 large yellow onion, cut into small chunks that will fit on the meat strip
salt
pepper
1 teaspoon garlic powder (or more to taste)
1 (10 1/2 ounce) can beef broth
2 -3 cups water
1 cup flour
1/4 cup cooking oil, more if needed

Steps:

  • Pound steak to 1/4 inch thickness, using a meat mallet or edge of heavy plate.
  • Cut meat into strips, approximately 3x5 inches. Season flour with salt, pepper and garlic powder and dredge the meat in the flour. (save the remaining flour to thicken the gravy).
  • Add a 1/2 slice of bacon (size to cover the meat strip) and thin chunks of onion to the meat, leaving the end of the meat free of onion so you can roll up more easily. Roll it up, with the bacon and onion on the inside and secure with 2 toothpicks.
  • In Dutch Oven or heavy pot, heat oil and brown birds well on all sides. You will have to do this in batches. Do NOT skimp on browning well, it really makes the dish.
  • Return birds to the pot. Add beef broth and enough water up to 3 inches in pot. Cover and simmer on low until fork-tender, about 1 1/2 hours, check after 1 hour.
  • Remove birds. Skim some, but not all of the fat from the pot. Make gravy using pan juices, flour and water, or however you like to make your gravy.

You can make the roll ups the night before and just set up to cook in the a.m. An easy meal to come home to. You can also use boneless chicken breast for this recipe with little change.

2 lbs boneless beef round steak
1/2 cup carrot, grated
1/3 cup zucchini, chopped
1/4 cup sweet red pepper, chopped
1/4 cup green pepper, chopped
1/4 cup green onion, sliced
2 tablespoons parmesan cheese, grated
1 tablespoon fresh parsley, minced or 1 tsp dried parsley flakes
1 -2 clove garlic, minced
salt & pepper, to taste
2 tablespoons vegetable oil
1 jar meatless sauce
pasta (of your choice)
parmesan cheese (to top if desired)

Steps:

  • Cut the meat into 6 pieces and pound each piece to about 1/4 inch thickness.
  • Combine the vegetables, Parmesan cheese and seasonings: place 1/3 cup in the center of each piece.
  • Roll meat up around filling and secure them with toothpicks.
  • Brown the roll ups in oil in a skillet.
  • Transfer the roll ups to a 5 qt.
  • slow cooker and top with spaghetti sauce.
  • Cover and cook on low for 6 hours or until the meat is tender.
  • Cook Pasta.
  • Take the toothpick out and serve roll up over pasta.
  • Sprinkle with additional Parmesan if desired.

There seems to be 2 types of biscuits/cookies that go under this name. These are the Australian version, old-fashioned meltingly soft buttery shortbreads sandwiched together with a butter icing. This recipe came from Super Food Ideas, and it is perfect.

250 g butter (at room temperature)
80 g powdered sugar icing (a confectioner's sugar/cornflour blend sold here in Oz; substitute icing sugar)
1 teaspoon vanilla essence
265 g plain flour (1 3/4 cup)
50 g cornflour (cornstarch, (1/3 cup)
icing sugar, for dusting
60 g butter (at room temperature)
80 g icing sugar (1/2 cup)
1 tablespoon cocoa

Steps:

  • Preheat oven to 160 deg Celsius Line 2 baking trays with baking paper.
  • Beat butter, icing sugar/mixture and vanilla essence with an electric mixer until pale and creamy.
  • Sift together flour and cornflour, and add to the butter mixture.
  • Mix together gently with a wooden spoon, and then with your hands.
  • Use lightly floured hands to roll mix into walnut-sized balls.
  • Put on trays about 5cm apart, and flatten with a lightly floured fork to about 1cm thick.
  • Bake for about 15 minutes, swapping trays in oven halfway through (ie. at 7 minutes), until cooked through.
  • Cool on baking trays.
  • Filling: Use an electric mixer to beat butter, icing sugar/mixture and cocoa together until well-combined.
  • Sandwich cooled biscuits together with the filling then lightly dust with icing sugar.
  • Vary the filling flavour by substituting the cocoa with one of the following:.
  • grated rind of 1 orange.
  • grated rind of 1 lemon.
  • 1 tbsp of passionfruit pulp.

The aromatic scent of holidays and Mum's home baking, mixed spice is an essential jar on the spice rack. Mixed spice is a blend of sweet spices traditionally used in English cooking to provide a warming backnote. This typically English spice mixture can be purchased ready-mixed, but I prefer to make my own, as I find it difficult to find in France and I have my own special blend. It is essential for fruit cakes, Christmas plum pudding, mincemeat and hot cross buns; mixed spice is also a great addition to other fruity desserts such as apple & fruit pies, crumbles and compotes. Try it in cream cheese desserts, pickles, chutneys and mulled wine too. Make it up and buy the spices needed in small quantities, as the mixture soon loses its full rich flavour. Allspice, cinnamon, cloves, nutmeg and ginger are the usual blend of spices, but I sometimes like to add a few ground cardamom seeds as well as some ground coriander seeds. This spice mixture makes an unusual and attractive gift - tie a ribbon around the neck of the jar, with pretty paper and then add a seasonal recipe tag.

2 inches piece cinnamon sticks
2 teaspoons cloves
2 teaspoons ground nutmeg
2 teaspoons ground ginger
1 teaspoon ground cardamom (optional)
1 teaspoon ground coriander (optional)

Steps:

  • Grind the allspice, cinnamon and cloves to a fine powder and then mix well with the ground nutmeg and ginger.
  • Add the finely ground cardamom and corainder seeds, if using, and mix well again.
  • Use at once or store in an airtight jar in a cool dry place, and away from light.
  • Makes an unusual and attractive gift, especially at Christmas - add a recipe tag and tie a ribbon around the top of the jar with pretty seasonal paper or material.
