VODKA & CRANBERRY BLUSH
A sophisticated dinner party cocktail with a crisp cranberry kick

Steps:
- Pour the vodka and Cointreau into a jug, then add the cranberry juice and orange juice. Stir well.
- Pare strips of peel from 2-3 limes. Fill 12 glasses with the crushed ice, then pour over the cocktail. Finish each glass with a strip of lime peel.

- Heat oven to 375°F. Cook pasta shells as directed on box. Rinse with cool water; drain.
- Meanwhile, in 2-quart nonreactive saucepan, heat 1 jar of pasta sauce and the vodka to boiling. Reduce heat; simmer 3 minutes, stirring occasionally. Remove from heat; stir in whipping cream. Set aside.
- In medium bowl, mix 1 cup of the cheese blend, the sun-dried tomatoes, ricotta and spinach.
- In ungreased 13x9-inch (3-quart) glass baking dish, spread 1 cup of pasta sauce from second jar (save remaining sauce for another use). Fill each pasta shell with about 3 tablespoons ricotta mixture; place over sauce in dish. Pour vodka pasta sauce over filled shells.
- Cover tightly with foil; bake 30 minutes or until sauce is bubbling. Uncover; sprinkle with remaining 1 cup cheese blend. Bake 5 minutes longer or until cheese is melted. Sprinkle with basil.

VODKA BLUSH PASTA SAUCE WITH FRESH PASTA
This is a Francesco Rinaldi ToBe Healthy pasta sauce recipe that I found in the GIANT Foods Healthy Ideas magazine that is distributed at our local GIANT grocery store. It sounds simple and easy and like something that my family would enjoy. Posting for safe keeping and I will adjust ingredients once I actually make it.

Steps:
- In a large saute pan, heat olive oil.
- Brown the prosciutto.
- Add garlic and pepper flakes and saute for about 30 seconds.
- Add the spaghetti sauce, diced tomatoes, parsley, basil and vodka. Bring to a simmer and cook 12-15 minutes (it is okay if it simmers a little longer).
- While the sauce is simmering, bring a large pot of salted water to a boil. Add pasta and cook according to package directions.
- With 5 minutes left on the pasta, add light cream to the spaghetti sauce mixture and stir to combine. Simmer for 5 minutes.
- Season sauce with salt and pepper to taste.
- Drain pasta and serve with sauce.

- Fill shaker 2/3 with fresh ice.
- Go light on the grenadine, it's more like a few drops. Maybe 1/4 tsp?. Look at the picture, it's very pale.
- Add ingredients.
- Shake and strain into chilled cocktail glass.
BOWTIE PASTA WITH VODKA BLUSH SAUCE AND CHICKEN RECIPE - (5/5)

- 1. Simmer sauce on LOW in small saucepan, stirring occasionally. 2. Heat olive oil in large pan on MEDIUM-HIGH, until oil faintly smokes, add chicken. Turn over when chicken changes color one-quarter of the way up and seared side has turned paper-bag brown, 3 - 4 minutes. 3. Reduce heat to MEDIUM, cook chicken 10-12 minutes, until internal temp reaches 165 degrees. 4. Add basting oil and butter to pan, swirl. Baste chicken with spoon, 1-3 minutes. Transfer to clean platter. 5. Toss pasta with warm sauce. Divide evenly on 4 plates, top with chicken. Sprinkly each serving with 1 tsp cheese.
VODKA BLUSH PENNE (& SMOKED SALMON)
This is scrumptious. I love it w/ smoked salmon flaked & added to it. My son likes it without, so it is your choice. Your kitchen will smell lovely cooking this dish!

Steps:
- 1. Melt butter & oil over med heat. Add shallots & garlic & toss about 2-3 mins. (Don't burn garlic!) Remove from heat.
- 2. Add vodka & stir. Return to heat. Cook & stir about 7 mins until vodka reduces by half. Add broth & tomatoes (w/juice) & boil. Reduce heat & season w/ salt & pepper. Simmer 20-25 minutes.
- 3. Whisk in cream & bring to light boil. Remove from heat. Add pasta & basil & toss. Serve w/ Parm on top. NOTE: If you prefer to add smoked salmon, sautee lightly & then place atop or in sauce directly. Yum. :)

CHRISTY'S PENNE/ITALIAN SAUSAGE IN VODKA BLUSH
I created this recipe for my daughter. She loves Blush sauce as opposed to a straight marinara or straight cream sauce. I serve this with a salad and ciabatta rolls. Enjoy!

- 1. Boil pasta according to package directions and drain.
- 2. Combine all sauce ingredients and simmer on medium heat - stirring often so cream cheese melts completely.
- 3. Slice smoked sausage into thick "quarterlike" slices and sautee in butter/garlic on medium heat until they start to brown slightly.
- 4. Combime pasta/blush sauce/smoked sausage together - stirring thoroughly -- the pasta will fill with the sauce.
- 5. After plating, sprinkle with mozzarella and parmesan cheese.
