A sophisticated dinner party cocktail with a crisp cranberry kick

200ml/7fl oz each vodka and Cointreau
600ml cranberry juice
400ml orange juice
strips of peel from 2-3 limes
crushed ice , to serve

Steps:

  • Pour the vodka and Cointreau into a jug, then add the cranberry juice and orange juice. Stir well.
  • Pare strips of peel from 2-3 limes. Fill 12 glasses with the crushed ice, then pour over the cocktail. Finish each glass with a strip of lime peel.

Spinach-Stuffed Manicotti with Vodka Blush Sauce image

Special enough for guests yet easy enough for weeknight dinners, this meatless manicotti entrée is a delight to serve!

1 box (8 oz) uncooked manicotti pasta shells (14 shells)
2 jars (25.5 oz each) Muir Glen™ organic garden vegetable pasta sauce
1/4 cup vodka
1/2 cup whipping cream
2 cups shredded Italian cheese blend (8 oz)
1/2 cup sun-dried tomatoes in oil, drained, chopped
1 container (15 oz) ricotta cheese
1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain
2 tablespoons julienne-cut fresh basil leaves

Steps:

  • Heat oven to 375°F. Cook pasta shells as directed on box. Rinse with cool water; drain.
  • Meanwhile, in 2-quart nonreactive saucepan, heat 1 jar of pasta sauce and the vodka to boiling. Reduce heat; simmer 3 minutes, stirring occasionally. Remove from heat; stir in whipping cream. Set aside.
  • In medium bowl, mix 1 cup of the cheese blend, the sun-dried tomatoes, ricotta and spinach.
  • In ungreased 13x9-inch (3-quart) glass baking dish, spread 1 cup of pasta sauce from second jar (save remaining sauce for another use). Fill each pasta shell with about 3 tablespoons ricotta mixture; place over sauce in dish. Pour vodka pasta sauce over filled shells.
  • Cover tightly with foil; bake 30 minutes or until sauce is bubbling. Uncover; sprinkle with remaining 1 cup cheese blend. Bake 5 minutes longer or until cheese is melted. Sprinkle with basil.

Vodka Blush Pasta Sauce With Fresh Pasta image

This is a Francesco Rinaldi ToBe Healthy pasta sauce recipe that I found in the GIANT Foods Healthy Ideas magazine that is distributed at our local GIANT grocery store. It sounds simple and easy and like something that my family would enjoy. Posting for safe keeping and I will adjust ingredients once I actually make it.

1 tablespoon olive oil
1/4 lb prosciutto, chopped
1 garlic clove, minced
1 teaspoon crushed red pepper flakes
1 (16 ounce) jar spaghetti sauce (recipe suggests using Francesco Rinaldi ToBe Healthy Tomato & Basil sauce)
1 (14 1/2 ounce) can diced tomatoes
2 tablespoons fresh parsley, minced
1 tablespoon fresh basil, minced
1/4 cup vodka
1/2 cup light cream
salt and pepper, to taste
1 lb cooked pasta (fettuccine, penne or farfalle)

Steps:

  • In a large saute pan, heat olive oil.
  • Brown the prosciutto.
  • Add garlic and pepper flakes and saute for about 30 seconds.
  • Add the spaghetti sauce, diced tomatoes, parsley, basil and vodka. Bring to a simmer and cook 12-15 minutes (it is okay if it simmers a little longer).
  • While the sauce is simmering, bring a large pot of salted water to a boil. Add pasta and cook according to package directions.
  • With 5 minutes left on the pasta, add light cream to the spaghetti sauce mixture and stir to combine. Simmer for 5 minutes.
  • Season sauce with salt and pepper to taste.
  • Drain pasta and serve with sauce.

2 1/2 ounces vodka
3/4 ounce fresh lime juice
1 dash grenadine

Steps:

  • Fill shaker 2/3 with fresh ice.
  • Go light on the grenadine, it's more like a few drops. Maybe 1/4 tsp?. Look at the picture, it's very pale.
  • Add ingredients.
  • Shake and strain into chilled cocktail glass.

1 package Farfelle, prepared
1 package, 24 ounces Vodka Blush Sauce
1 TBS Olive Oil
1 lb Lemon and Garlic Marinated Chicken Breast Cutlets
1 tbs Basting Oil
1 tsp Butter
4 tsp Shredded Parmigiano-Reggiano Cheese

Steps:

  • 1. Simmer sauce on LOW in small saucepan, stirring occasionally. 2. Heat olive oil in large pan on MEDIUM-HIGH, until oil faintly smokes, add chicken. Turn over when chicken changes color one-quarter of the way up and seared side has turned paper-bag brown, 3 - 4 minutes. 3. Reduce heat to MEDIUM, cook chicken 10-12 minutes, until internal temp reaches 165 degrees. 4. Add basting oil and butter to pan, swirl. Baste chicken with spoon, 1-3 minutes. Transfer to clean platter. 5. Toss pasta with warm sauce. Divide evenly on 4 plates, top with chicken. Sprinkly each serving with 1 tsp cheese.

1 Tbsp ex vir oo
1 Tbsp butter
2 clove garlic, minced
2 small or 1 large shallot(s), minced
1 c vodka
1 c chicken broth
1 28-oz can plum tonatoes, crushed
1/2 c heavy cream
1 lb penne, cooked al dente (i like mezze penne-the smaller)
1/2 bunch fresh basil, torn into pieces
fresh grated parm, salt & pepper

Steps:

  • 1. Melt butter & oil over med heat. Add shallots & garlic & toss about 2-3 mins. (Don't burn garlic!) Remove from heat.
  • 2. Add vodka & stir. Return to heat. Cook & stir about 7 mins until vodka reduces by half. Add broth & tomatoes (w/juice) & boil. Reduce heat & season w/ salt & pepper. Simmer 20-25 minutes.
  • 3. Whisk in cream & bring to light boil. Remove from heat. Add pasta & basil & toss. Serve w/ Parm on top. NOTE: If you prefer to add smoked salmon, sautee lightly & then place atop or in sauce directly. Yum. :)

1 Pkg. (1 lb.) Lemon & Garlic Marinated Chick Breast Cutlets
1 Tbsp. Wegman's basting oil
1 tsp. butter
4 tsp shredded parmigiano-reggiano cheese, divided

Steps:

  • 1. Simmer sauce on LOW in small saucepan, stirring occas. 2. Heat olive oil in large pan on MED-High, until oil faintly smokes; add chicken. Turn over when chick changes color 1/4 way up and seared side has turned paper-bag brown, 3-4 min. Reduce heat to MED.; cook chick 10-12 min. until internal temp reaches 165 degrees. 3. Add basting oil and butter to pan; swirl. Baste chick with spoon, 1-3 min. Transfer to clean platter 4. Toss pasta with warm sauce. Divide evenly on 4 plates, top with chick. Sprinkle ech serv. with 1 tsp. cheese.

I created this recipe for my daughter. She loves Blush sauce as opposed to a straight marinara or straight cream sauce. I serve this with a salad and ciabatta rolls. Enjoy!

VODKA BLUSH SAUCE
26 oz spaghetti sauce (your favorite)
8 oz cream cheese
1/2 c half & half
1 shot of vodka
salt & pepper (to taste)
MEAT MIXTURE
1 pkg smoked sausage (i use eckrich)
1 Tbsp real butter (salted)
1 Tbsp minced garlic
1 tsp kosher salt
PASTA
1 lb penne rigate pasta
TOPPING(S)
parmesan cheese
finely shredded mozzarella cheese

Steps:

  • 1. Boil pasta according to package directions and drain.
  • 2. Combine all sauce ingredients and simmer on medium heat - stirring often so cream cheese melts completely.
  • 3. Slice smoked sausage into thick "quarterlike" slices and sautee in butter/garlic on medium heat until they start to brown slightly.
  • 4. Combime pasta/blush sauce/smoked sausage together - stirring thoroughly -- the pasta will fill with the sauce.
  • 5. After plating, sprinkle with mozzarella and parmesan cheese.
