STRAWBERRY SORBET WITH BALSAMIC VINEGAR AND AMARETTI COOKIES



Strawberry Sorbet with Balsamic Vinegar and Amaretti Cookies image

Number Of Ingredients 8

2 10-ounce packages frozen strawberries in syrup, thawed
2 teaspoons fresh lemon juice
1 teaspoon vanilla extract
3 cups quartered fresh strawberries
2 teaspoons sugar
2 tablespoons balsamic vinegar*
4 amaretti (Italian macaroons),* crumbled
Balsamic vinegar and amaretti are available at specialty foods stores, Italian markets and some supermarkets.

Steps:

  • Place first 3 ingredients in blender. Pulse until smooth, about 1 minute. Transfer to ice cream maker. Process according to manufacturer's instructions. Transfer sorbet to container and freeze. (Can be prepared 2 days ahead.)
  • Place fresh strawberries in medium bowl. Sprinkle with sugar and toss. Add vinegar and toss. Let stand 15 minutes, stirring occasionally.
  • Scoop sorbet into bowls. Divide strawberries over sorbet. Spoon over juices accumulated in bowl. Sprinkle cookies over strawberries and serve.

1 cup butter, softened
3/4 cup sugar
1 tablespoon white vinegar
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
Colored sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in vinegar and vanilla. Combine flour and baking soda; gradually add to creamed mixture and mix well. , Roll into 1-in. balls. Place 2 in. apart on greased baking sheets. Flatten to 1/4-in. thickness; sprinkle with colored sugar., Bake at 350° for 8-10 minutes or until edges are lightly browned. Cool for 1 minute before removing from pans to wire racks. Store in an airtight container.

1 c butter, softened
1 c sugar
1 tsp raspberry vinegar
1 tsp baking soda
1 tsp rum extract
1 1/2 c flour
1 c chopped pecans

Steps:

  • 1. Combine the softened butter and the sugar. Mix them until they're light and fluffy.
  • 2. Add the vinegar and mix it in.
  • 3. Add the baking soda and mix it in.
  • 4. Add the rum extract and mix it in.
  • 5. Add the flour, mix thoroughly.
  • 6. Mix in the chopped pecans.
  • 7. Drop by spoonful onto a prepared baking sheet. Bake at 325* for 18-20 minutes, or until slightly golden on top.
  • 8. Remove from the oven and let the cookies cool on the baking sheet for 2 minutes. Transfer the cookies to a wire rack and cool completely. Store in a cookie jar or airtigh container, to keep them moist and soft.
  • 9. NOTES: 1) If you can't find raspberry vinegar, any fruit vinegar would work. Or just use white vinegar. 2) If you don't want to use rum extract, use any other flavor you like, or just use vanilla. 3) You might like to add mini chocolate chips, or press a chocolate candy into the center of each cookie before baking.

1 1/2 cup(s) all purpose flour
1 tablespoon(s) distilled white vinegar
1/2 teaspoon(s) baking soda

Steps:

  • In Large Bowl; with mixer at low speed, beat butter with sugar until blended. Increase Speed to high; beat until light & fluffy about 3 minutes. At Low speed beat in flour, vinegar, & baking soda until mixed; occasionally scraping bowl with rubber spatula. Cover bowl with plastic wrap & refrigerate dough 1 hour or until easy to handle.
  • Preheat Oven to 350, Drop dough by rounded teaspoons, about 2 inches apart, onto Ungreased Large cookie sheet Recipe says 17 to 20 minutes, but Check on your first batch, mine came out Much Sooner, they should only be Golden Brown at the Edges & Set, before you remove them from the cookie sheet (about 30 seconds)Remove with a pancake turner, (they are Very Thin)& onto a wire rack to Cool completely
  • Repeat with remaining dough. Makes about 4 dozen cookies

1 c sugar
1 1/2 c all purpose flour
1 tsp soda
1/2 tsp salt
2 tsp distilled vinegar
2 tsp vanilla

  • 1. Beat together butter and sugar. Every time the recipe says to beat, REALLY beat!
  • 2. Sift together flour, soda, and salt; and add to the butter mixture.
