1 (28 ounce) can good quality baked beans
2 tablespoons dried onion flakes
1 tablespoon prepared mustard
1/4 cup chili sauce
2 (8 ounce) cans vienna sausages, drained
1/2 cup grated cheddar cheese

Steps:

  • Preheat oven to 375 degrees.
  • Combine the first 4 ingredients in large bowl.
  • Pour into 1 1/2 quart casserole.
  • Top with Vienna Sausage.
  • Sprinkle with grated cheese.
  • Bake until mixture bubbles.

This recipe was in Prevention Magazine a couple of years ago. My family and I love it during the hot summer months when you don't want to do much cooking. Goes over great at potlucks too.

12 ounces smoked low-fat turkey sausage, chopped
1/2 red pepper, chopped
1/4 cup chopped red onions or 1/4 cup sweet onion
2 cans cannellini beans, rinsed and drained
1/3 cup minced fresh parsley
pepper
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon olive oil

Steps:

  • Saute sausage 8 minutes or until cooked through.
  • Drain well.
  • In a large bowl, whisk mustard& vinegar.
  • Whisk in the oil.
  • Add remaining ingredients and toss well.
  • Chill until ready to serve or serve immediately.

1-1/2 pounds bulk spicy pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 can (31 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) chickpeas, rinsed and drained
1-1/2 cups ketchup
3/4 cup packed brown sugar
2 teaspoons ground mustard

Steps:

  • In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.
