VICKI'S CLASSIC POTATO SALAD

Number Of Ingredients 10

6 medium potatoes (2 lbs)
1/2 cup finely chopped onion
1/3 cup sweet pickle relish
1 1/4 cups mayonnaise, Helman's preferred
2 teaspoons sugar
2 teaspoons celery seeds
2 teaspoons vinegar
2 teaspoons mustard, Maille preferred
1 1/2 teaspoons salt
2 eggs, hard-boiled, coarsely chopped

Steps:

  • In a covered saucepan cook potatoes in boiling, salted water for 25-30 minutes or until tender. Drain well.
  • Peel and cube potatoes and transfer to a large bowl.
  • Add onion and egg.
  • Combine mayo, sugar, celery seed, vinegar, mustard, salt, and relish.
  • Pour over potato mixture and toss to coat. Cover and chill.
  • Better the second day.

This has been a holiday tradition and special occasion dish in our home and with our friends...I usually serve them with baked ham, but when the meal calls for mashed potatoes, and you want to give your family a treat, I suggest you try these! YUM!

6 -8 large potatoes, peeled and diced
1 teaspoon salt
1/8 teaspoon garlic salt
1 teaspoon grated onion
2 tablespoons butter or 2 tablespoons margarine
8 ounces cream cheese, softened
1 (8 ounce) container sour cream
1 cup grated cheese (optional)

Steps:

  • Cook potatoes in salted water until tender.
  • (About 10 minutes from time water gently boils) Drain.
  • Combine potatoes with salts, onion, butter, cream cheese, and sour cream.
  • Whip until mixture is smooth and fluffy.
  • Place in buttered 2-qt.
  • casserole.
  • Top with grated cheese if desired.
  • (May be covered and refrigerated overnight or frozen at this point, if desired) Bake at 350 for 30 minutes or until golden brown.

Vicky was a friend I met while living in Monterey CA. We both ended up moving to the same location in Germany, which is where I first tasted her delicious potato variations. Each version serves about 6-8, but the nutritional facts come out as if you are making both versions, therefore I am listing the number of servings as if you have made both versions at the same time.

6 potatoes, scrubbed, diced (enough to fill pan)
salt, to taste
pepper, to taste
1 tablespoon fresh rosemary (to taste)
2 tablespoons olive oil, to taste
4 -6 cups frozen hash browns (diced)
2 cups cheese, shredded (she just said lots)
sour cream, to taste
garlic, to taste
parsley, to taste
salt, to taste
pepper, to taste

Steps:

  • Vicky's Potatoes three different ways: All will be cooked in a preheated oven at 450F for 35 minutes; Also, use a 9x13" sized casserole dish.
  • Rosemary Version: Cut up potatoes into bite sized pieces and coat well with olive oil, season with salt & pepper, and sprinkle with rosemary. Bake at a high temp until tender.
  • Cheese Version: Use frozen hash browns, lots of cheese, butter, and just a little sour cream, garlic, salt & pepper, parsley and bake until tender & creamy.
  • Seasoning Packet version: Sometimes Vicky also made a version, using the same cooking temp/time, but just tossed the diced plain potatoes with about 1/2 cup of herb potato seasoning, which comes in a packet.

Here's a great scalloped potato recipe that's so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.

4 cups thinly sliced potatoes
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 teaspoon salt
1 dash cayenne pepper
1 cup grated sharp cheddar cheese
1/2 cup grated cheese, to sprinkle on top
paprika

Steps:

  • In a small sauce pan, melt butter and blend in flour.
  • Let sit for a minute.
  • Add all of cold milk, stirring with a whisk.
  • Season with salt and cayenne.
  • Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
  • Reduce heat and stir in cheese.
  • Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
  • Pour half of cheese sauce over potatoes.
  • Repeat with second layer of potatoes and cheese sauce.
  • Sprinkle the remaining cheese on top.
  • Top with some paprika for color.
  • Bake uncovered for about 1 hour at 350°F.
