1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup cold butter, divided
1/4 cup ice water
FILLING:
1/3 cup sugar
2 teaspoons cornstarch
1/8 teaspoon ground cinnamon
2 medium tart apples, peeled and thinly sliced
1 teaspoon lemon juice
1 large egg, beaten, room temperature
1-1/2 teaspoons water
GLAZE:
1/4 cup confectioners' sugar
1 teaspoon water

Steps:

  • In a small bowl, combine flour and salt; cut in 1/4 cup butter until crumbly. Gradually add water, tossing with a fork until a ball forms. On a lightly floured surface, roll dough into a 12x6-in. rectangle., Cut remaining butter into thin slices. Starting at a short side of dough, arrange half of the butter slices over two-thirds of rectangle to within 1/2 in. of edges. Fold unbuttered third of dough over middle third. Fold remaining third over the middle, forming a 6x4-in. rectangle. Roll dough into a 12x6-in. rectangle., Repeat steps of butter layering and dough folding, ending with a 6x4-in. rectangle. Wrap in plastic; refrigerate for 15 minutes. Roll dough into a 12x6-in. rectangle. Fold in half lengthwise and then widthwise. Wrap in plastic; refrigerate for 1 hour., Preheat oven to 450°. Meanwhile, in a small saucepan, combine the sugar, cornstarch and cinnamon. Add apples and lemon juice; toss to coat. Bring to a boil over medium heat, stirring constantly. Reduce heat; simmer, uncovered, until apples are tender, stirring often, 5-10 minutes. Remove from the heat., In a small bowl, combine egg and water. Roll dough into a 12-in. square; cut into four squares. Brush with half of the egg mixture. Spoon about 1/4 cup filling on half of each square; fold dough over filling. Press edges with a fork to seal. Place on an ungreased baking sheet. Brush with remaining egg mixture. With a sharp knife, cut three small slits in the top of each turnover., Bake until golden brown, 17-22 minutes. Remove to a wire rack. Combine glaze ingredients; drizzle over turnovers. Serve warm.

I am always trying to find new ways to use my canned apples and this recipe is a snap. If you don't can your own apple pie filling then you could use store bought but I would add a few more spices to the store bought to kick it up a bit.

apple pie filling - you will need 1/2 cup for each pastry
1 pkg pepperidge farm puff pastries
1/2 Tbsp melted butter
1/2 tsp sugar and cinnamon (each)

Steps:

  • 1. Thaw out your two sheets of pastry dough. Roll out on a floured service to make a 12" square and cut each sheet into 4 squares.
  • 2. Fill each square with 1/2 cup of applie pie filling (I used homemade), fold the pastry into a triangle and seal edges. I used a fork to crimp the edges. Put the sugar and cinnamon in the melted butter, stir and with a pastry brush, brush the top of each turnover.
  • 3. Place on a cookie sheet lined with parchment paper and bake at 375° for 15 minutes or until pastry is golden in color. Serve warm or cold.

These Easy Apple Turnovers are made all from scratch. The crust is flaky and the apple filling exquisitely delicious. I will even say it is an apple pie in a mini size. They are easy to grab-and-go. These are the perfect treat for breakfast or as a dessert. Super delicious and simple to make.

Number Of Ingredients 9

Puff Pastry ( 2 sheets) or My Homemade Dough
3 medium Apples (Granny Smith (1- 1 ½ pound))
1/4 cup brown sugar ((I use light))
1 Tablespoon unsalted butter ((melted))
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 egg
A pinch of salt.
1-2 teaspoons of water

Steps:

  • To make these apple turnovers I'm using my homemade pie crust.
  • First, remove the pastry dough out of the fridge. it's important to let it sit at room temperature before rolling into it. This will make the rolling process a lot easier.
  • Then, peel, core, and dice the apples and set them aside.
  • Next, on a medium saucepan melt over medium heat 1 tablespoon of unsalted butter.
  • Add the apples, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, 1/2 teaspoon fresh nutmeg, and a pinch of salt, and reduce the heat to low. Simmer for 3 to 4 minutes or until the apples are soft and caramelized. Remove from the stove and set aside to cool.
  • Now for the rolling part:
  • On a flat, dry surface sprinkle some flour and place the dough. This will prevent the dough from sticking. Then, with gentle smooth strokes roll out the dough. Always start from the center of the dough then work your way out into all directions turning the dough as you go.
  • Turn and roll the dough and cut into circles using a cookie cutter, a cup, or glass. Spoon out some of the cooled apple mixture (about 1 tablespoon) depending on the size of your circle. You can place it in the center of the circle and place another circle on top. Then, place them on a baking sheet.
  • Next, using a fork to seal the edges of the dough. Also, using a knife or a fork cut a few small slits in the top of each turnover. This not only will give a nice touch to the turnover, but it will prevent the filling from coming out, spilling, and burning. You can also place them in the refrigerator uncovered for 15 minutes.
  • Preheat the oven to 400°F (204°C).
  • Next, in a small mixing bowl whisk 1 egg with 1-2 teaspoons of water and brush over the turnovers. This will lead to a shiny golden brown pastry.
  • Bake them for 20-30 minutes or until they are puffed and golden.
  • Drizzle a very simple homemade glaze over the turnovers and Enjoy! To make the glaze you'll need powdered sugar and heavy whipping cream.

2 tablespoons lemon juice
4 cups water
4 Granny Smith apples - peeled, cored and sliced
2 tablespoons butter
1 cup brown sugar
1 teaspoon ground cinnamon
1 tablespoon cornstarch
1 tablespoon water
1 (17.25 ounce) package frozen puff pastry sheets, thawed
1 cup confectioners' sugar
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Combine the lemon and 4 cups water in a large bowl. Place the sliced apples in the water to keep them from browning.
  • Melt butter in a large skillet over medium heat. Drain water from apples, and place them into the hot skillet. Cook and stir for about 2 minutes. Add brown sugar, and cinnamon, and cook, stirring, for 2 more minutes. Stir together cornstarch and 1 tablespoon water. Pour into the skillet, and mix well. Cook for another minute, or until sauce has thickened. Remove from heat to cool slightly.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Unfold puff pastry sheets, and repair any cracks by pressing them back together. Trim each sheet into a square. Then cut each larger square into 4 smaller squares. Spoon apples onto the center of each squares. Fold over from corner to corner into a triangle shape, and press edges together to seal. Place turnovers on a baking sheet, leaving about 1 inch between them.
  • Bake for 25 minutes in the preheated oven, until turnovers are puffed and lightly browned. Cool completely before glazing.
  • To make the glaze, mix together the confectioners' sugar, milk and vanilla in a small bowl. Adjust the thickness by adding more sugar or milk if necessary. Drizzle glaze over the cooled turnovers.

  • In 2-quart saucepan, mix apples, brown sugar, 1 tablespoon of the water and the lemon juice. Cook over medium heat, stirring occasionally, until bubbly. Reduce heat to low; cover and cook 6 to 8 minutes, stirring occasionally, until apples are tender.
  • In small bowl, mix flour, granulated sugar and salt. Gradually stir into apple mixture, cooking and stirring until mixture thickens. Remove from heat; stir in butter and vanilla. Cool 15 minutes.

Easy Peasy Apple Turnovers image

This recipe was inspired by mliss29's recipe #292754 (which was greatly enjoyed by the DS's recreation group) but put a sweet flavour to it instead of savoury. Please note if you do like it sweet then certainly add the sugar for without it is just the flavour of your fruit and the spices.

3 puff pastry sheets (pre-rolled measuring 25cm x 25cm, defrost)
3 granny smith apples (or of choice)
4 whole cloves
1 teaspoon ground cinnamon
1/2 tablespoon lemon juice (fresh or bottled)
1 egg (whisked)
2 teaspoons sugar (optional)

Steps:

  • Preheat oven to 200 degree Celsius or 400 degrees Fahrenheit.
  • Peel, core and small dice apples.
  • Place apples, cloves, cinnamon and lemon juice in a medium saucepan and cook on a medium heat until just tender (DO NOT LET GO TO MUSHY STAGE) - about 3 minutes.
  • Remove cloves.
  • Divide each pastry sheet into 4 squares.
  • Place a heaping tablespoon of apple on the diagonal of the pastry square.
  • Pull over to form a triangle and seal using a fork, gently pushing in to the edge to seal, using edge of knife put 1 or 2 small slits into the pastry (to let steam escape).
  • Continue until all 12 turnovers are filled and sealed.
  • Brush top of turnovers with whisked egg (you will only use a small amount of the egg) and sprinkle with sugar.
  • Place on a cookie/baking tray covered with baking paper/parchment paper (I get 6 to a tray).
  • Put in oven and bake for 15 minutes.
  • TO SERVE.
  • Serve warm with custard, cream and or ice cream.
  • With just a sprinkle of icing sugar (confectioners sugar).
  • I have made up the apple mix and only made 6 turnovers and served the extra apple with them with custard.

2 granny smith apples, peeled, cored, and cut in chunks
3/4 cup sugar
1 tablespoon fresh lemon juice
1/8 teaspoon salt
1 tablespoon flour (not in original recipe from ATK(see chef note below)
1 (17 1/3 ounce) box frozen puff pastry, thawed (two sheets)
1/2 cup applesauce
1 teaspoon cinnamon

Steps:

  • Preheat oven to 400°F.
  • Pulse the applies, 1/2 cup of the sugar, the lemon juice, and salt in a food processor until the apples are coarsely chopped, about 5 pulses. Let the mixture sit for 5 minutes, then drain, reserving any accumulated juice.
  • Chef note: The 2nd time I made this, I mixed a tablespoon of flour with the sugar before I tossed the apples in it. I also mixed the applesauce right in with the apples. I think the flour helped keep it from being quite so runny--it was more like pie filling when it was cooked.
  • Unfold one sheet of puff pastry on lightly floured counter and roll into a 10-inch square. Cut into 4 5-inch squares. Mound 1 tablespoon applesauce and 1 tablespoon of the apple mixture in the center of each square.
  • Brush the edges of each square with juice drained off the apples and fold into triangles. Crump the edges together using a fork to seal. Lay the turnovers on a wire rack and freeze for 15 minutes. Repeat with remaining sheet of pastry and remaining applesauce and apple filling.
  • Toss the remaining 1/4 cup sugar with the cinnamon. Remove the rack from the freezer, brush the turnovers with the reserved apple juice, then sprinkle with the cinnamon sugar.
  • Lay the turnovers on two parchment-lined baking sheets and bake until well browned, 20 to 26 minutes, rotating and switching the baking sheets halfway through baking. Transfer the turnovers to a wire rack and let cool slightly before serving.
