FRIED MATZOH
A delicious fried egg dish.

Steps:
- Heat vegetable oil in a non-stick frying pan over low heat.
- Pour hot water into a bowl. Break matzoh sheets into small chunks and soak in hot water, about 2 minutes.
- Whisk eggs and 1/8 teaspoon kosher salt in a separate bowl.
- Strain matzoh and shake to remove excess water; stir matzoh into egg mixture.
- Pour the heated oil out of non-stick frying pan; place 1/2 tablespoon butter in hot pan.
- Pour matzoh and egg mixture into hot butter; cover and cook until a 'pancake' forms, about 10 minutes.
- Slide matzoh 'pancake' onto a plate.
- Place remaining 1/2 tablespoon butter in hot pan.
- Place a second plate over matzoh 'pancake' and flip plates over so the uncooked side is on the bottom.
- Lie matzoh 'pancake' in melted butter; cover pan and cook until bottom of pancake is browned, about 8 minutes. Remove from heat and season with kosher salt.

MATZO BREI
Matzo brei (pronounced like fry) is one of the few dishes from my childhood that I'll never outgrow. The dampened shards of matzo mixed with beaten eggs and milk and then cooked in butter will never go out of style. I like to serve this matzo brei recipe in one big piece, but you can also scramble the mixture. -Lily Julow, Lawrenceville, Georgia

- Coarsely crumble matzo crackers into a fine mesh sieve set over a large bowl; reserve crumbs in bowl. Place sieve under cold running water until matzo is softened, about 15 seconds; drain. Stir softened matzo, eggs, milk, crumbs and salt until combined. , Melt 3 tablespoons butter in a large skillet over medium-high heat; add half of the matzo mixture. Cook, without stirring, until bottom is golden brown, 3-4 minutes; flip. Cook until bottom is golden brown and eggs are cooked through, 3-4 minutes. Transfer to platter. Repeat with remaining butter and matzo mixture. Serve hot with maple syrup if desired.

VERGINIA'S MATZOS AND EGGS
This is an old, traditional breakfast or brunch in my husband's family, but I've never tried it or made it. Actually, lol, I never really "got" it, but you might :) Mike always gets his Mom to make him a batch to bring home when he visits.

Steps:
- In a colander or strainer break up matzos into small pieces (1-2 ")
- Start heating margarine in a frying pan at medium heat. Run matzos under hot water until damp (not soggy)
- Shake excess water off then add to margarine already heating in frying pan.
- Constantly flip matzos while frying (kind of browned).
- Pour beaten eggs over matzos in pan, stir and flip constantly until eggs are cooked. Add salt and pepper to taste afterwards.
