2 cups cubed ham

Steps:

  • Mix flour with the sour cream.
  • Add half and half cream and ham.
  • Cook over medium heat until slighty thickened, Stirring contantly.
  • Serve over fried verenika.
  • May add ham base for flavor.

Cheese-filled dumplings served with ham and cream gravy.

2 ½ cups dry cottage cheese
2 eggs
¼ teaspoon ground black pepper to taste
3 ¾ cups all-purpose flour
⅓ cup nonfat dry milk powder
¾ teaspoon baking powder
½ teaspoon salt
2 eggs
¾ cup water
4 teaspoons vegetable oil
3 tablespoons butter
1 cup cubed ham
3 tablespoons all-purpose flour
½ teaspoon salt
⅛ teaspoon black pepper
2 ½ cups warm milk

Steps:

  • In a blender, combine cottage cheese, 2 eggs and ground black pepper to taste. Cover and blend until smooth, or beat with an electric mixer until smooth; Set aside.
  • In a large bowl, stir together flour, milk powder, baking powder and 1/2 teaspoon salt. In a small bowl, beat together 2 eggs, water and oil; combine with flour mixture.
  • On a floured surface, knead dough about 10 times or until smooth. Divide dough in half and roll out each portion to a 1/8 inch thickness. Using a 4 inch round cutter, cut out rounds of dough.
  • Place 1 tablespoon of filling in the center of each circle. Moisten the edge and fold over to form a half moon shape; pinch to seal.
  • Bring a large pot of water to a boil. Add half of the dumplings and cook for 8 to 10 minutes or until tender; remove with a slotted spoon and drain. Repeat with remaining dumplings.
  • While the dumplings are cooking, prepare the gravy. In a medium saucepan, melt the butter over medium-low heat. Stir in ham, and cook until ham is light brown. Add 3 tablespoons flour, 1/2 teaspoon salt, and 1/8 teaspoon ground black pepper. Stir. Pour in milk all at once, stirring constantly; cook and stir until thick and bubbly. Serve over the dumplings.

VERENIKA (OR VERENKI) CASSEROLE

This is a fast version of regular verenika, which is individual dumplings filled with a cottage cheese mixture, boiled, then fried, and then served with a ham gravy. But it has the flavor of the original verenika dish. Once a year, regular verenika is served at our MCC sale to raise funds for the Mennonite Central Committee. I got the recipe from our church cookbook and have changed it just a little.

10 -12 ounces Reames frozen noodles, cooked and drained
1 (24 ounce) carton cottage cheese, -rinsed and drained
2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup sour cream
1/2 lb of chopped ham
1/2 cup chopped onion
2 cups country cream gravy (i have made this by using a package of pioneer brand gravy mix or by making a white sauce. see recip) or 2 cups white sauce (i have made this by using a package of pioneer brand gravy mix or by making a white sauce. see recip)

Steps:

  • Boil frozen egg noodles as per package directions, drain and place in bottom of greased casserole dish - I use 9 x 11 inch pan.
  • Mix drained cottage cheese with the two eggs, salt and pepper.
  • Layer over the noodles.
  • Add spooonfuls of sour cream over the top of the casserole.
  • Saute chopped onions and ham until onions are tender.
  • Stir in to the cream gravy and pour on top of the casserole.
  • Bake at 350 for 30 to 40 minutes.

Verenika are a type of Scandinavian cheese dumpling. This recipe is from a Mennonite friend of my grandmother who would take it to potlucks and family gatherings. I have modified it for health and for use in a slow cooker.

24 ounces low fat cottage cheese
3 eggs
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 cup nonfat sour cream
2 cups fat-free evaporated milk
2 cups lower sodium ham, diced into 1 inch cubes
7 dry lasagna noodles

Steps:

  • Mix all ingredients except the noodles.
  • In a four quart slow cooker, place half of the ingredient mixture. Layer noodles over the mixture in the cooker. it is ok to break them to fit.
  • Cover noodles with remaining mixture.
  • Cook on low 5-6 hours. Serve with salad, peas and bread.

1 lb ham steak, cubed
1 quart buttermilk
1 (12 ounce) can evaporated milk
1 (16 ounce) container sour cream
3 tablespoons ham soup base (can adjust to taste)
cornstarch (to thicken)

Steps:

  • Place the ham in the bottom of a large pot over medium heat for a few minutes to get the flavor and juices out.
  • Pour in the buttermilk, evaporated milk, sour cream, and ham base.
  • Heat through, but do not bring to a boil.
  • Mix the cornstarch (I start with a tablespoon or two) with cold water and stir into the gravy. Keep stirring for a minute or two to keep it from settling at the bottom. Repeat this until it is the consistency you want.
