1 tablespoon canola oil
1 cup chopped white onion (from 1 medium [8 oz.] onion)
2 large garlic cloves, minced (about 1 Tbsp.)
1 pound ground round
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 cup thick and chunky red salsa (from 1 [16-oz.] jar)
3/4 cup taco sauce (from 1 [8-oz.] jar)
1 cup beef broth
1 (15-oz.) can black beans, drained and rinsed
1/4 cup chopped fresh cilantro, plus more for garnish
Cooking spray
6 cups coarsely crushed tortilla chips (from 1 [13-oz.] bag)
2 (6-oz.) pkg.s pre-shredded Mexican cheese blend (about 3 cups)

Steps:

  • Preheat oven to 400°F with oven rack in top third of oven. Heat oil in a large skillet over medium-high. Add onion and garlic; cook, stirring often, until translucent, about 4 minutes. Add ground beef, chili powder, cumin, oregano, and paprika, and cook, stirring often, until beef is no longer pink, about 6 minutes. Stir in salsa, taco sauce, and broth; cook, stirring often, until slightly thickened, about 3 minutes. Stir in beans and cilantro.
  • Lightly coat a 13- x 9-inch, 3-quart baking dish with cooking spray. Spread one-third of the chips (about 2 cups) on bottom. Top with half of the beef mixture (about 3 cups). Spread another layer of tortilla chips over beef, and sprinkle with 1 1/2 cups of the cheese. Top with remaining half of beef mixture, and sprinkle with remaining chips and cheese. Cover with aluminum foil, and bake in preheated oven until mixture is starting to bubble around the edges, 15 to 20 minutes.
  • Uncover and continue to bake until lightly browned and bubbly, about 5 more minutes. Garnish with chopped cilantro.

A simple meal to whip up in less than an hour that even the kids are sure to love. Layers of seasoned ground beef, corn, tortilla chips and cheese are baked under a layer of Colby cheese. Monterey Jack is also good in place of the Colby cheese.

1 pound ground beef
1 ½ cups chunky salsa
1 (10 ounce) can whole kernel corn, drained
¾ cup creamy salad dressing (e.g. Miracle Whip)
1 teaspoon chili powder
2 cups crushed tortilla chips
2 cups Colby cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place ground beef in a large skillet over medium-high heat. Cook, stirring to crumble, until evenly browned. Drain grease. Remove from the heat, and stir the salsa, corn, mayonnaise and chili powder into the beef. In a 2 quart casserole dish, layer the ground beef mixture, tortilla chips and cheese twice, ending with cheese on top.
  • Bake for 20 minutes uncovered in the preheated oven, until cheese is melted and dish is thoroughly heated.

1 bottle (7 oz.) TACO BELL® Verde Salsa
3 cups tortilla chips (about 3 oz.)
1 can (14 oz.) TACO BELL® 99% Fat Free Refried Beans
1-1/2 cups KRAFT Mexican Style Finely Shredded Four Cheese
1 can (2.5 oz.) sliced black olives, drained
1/4 cup KRAFT Classic Ranch Dressing
1/4 cup TACO BELL® Thick & Chunky Medium Salsa
1/4 cup drained pickled jalapeño peppers

Steps:

  • Heat oven to 350°F.
  • Brown meat in large skillet; drain. Return meat to skillet. Stir in Verde Salsa; cook 2 to 3 min. or until heated through, stirring occasionally.
  • Spread chips onto bottom of 13x9-inch baking dish sprayed with cooking spray dish; top with layers of beans, meat mixture, cheese and olives.
  • Bake 15 to 20 min. or until cheese is melted and casserole is heated through.
  • Mix dressing and Thick & Chunky Salsa until blended; drizzle over casserole. Top with peppers.

1/2 lb ground beef
2 tablespoons onions, chopped
1 teaspoon garlic, minced
2/3 cup salsa verde
7 ounces refried beans
6 ounces tortilla chips
1 cup sharp cheddar cheese, shredded
1/4 cup diced tomato
4 ounces black olives, sliced
6 green onions, sliced
jalapeno pepper, sliced
sour cream
guacamole

Steps:

  • Sauté the beef, onions and garlic till the meat is browned and cooked through, drain off the fat. Transfer the meat mixture to a mixing bowl and let it cool. Once the meat is cool enough to handle crumble it into tiny pieces with your fingers. Mix in the salsa, refried beans, and the optional chilies in a bowl till all is thoroughly combined. Return everything to the skillet and heat till bubbly and warm throughout, lower heat and slowly simmer for 5 minutes.
  • Spread the chips in glass casserole dish, evenly top with the beef/bean mixture. Evenly spread the cheese over all and microwave on high till the cheese is melted, about 2 minutes in a 1000W oven.
  • Top the nachos with tomatoes, green onions, olives, peppers. Scoop the sour cream and guacamole into the corners.
