1 cup cola (do not use diet soda)
1/4 teaspoon Worcestershire sauce
1 tablespoon cider vinegar
2 garlic cloves or 1 teaspoon minced garlic
1/2 teaspoon dry mustard
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 (1 1/4 ounce) package onion soup mix
2 medium onions, chopped
2 lbs moose (if using deer meat, add 1 tbls. oil to cooking liquid) or 2 lbs venison (if using deer meat, add 1 tbls. oil to cooking liquid)
1/2 cup ketchup
2 tablespoons butter

Steps:

  • In a bowl add 1st 8 ingredients.
  • Reserve 1/2 cup for sauce later.
  • Trim excess fat from meat if using chuck roast.
  • Put meat and onions into a 4 quart crock pot or dutch oven.
  • Pour liquid over meat.
  • Crock pot: Cover & cook 5-6 hours on high.
  • Dutch oven: Cook covered for 3 hours at 325°F.
  • Remove meat from liquid and serve with sauce.
  • Sauce: Heat reserved spiced liquid, ketchup, and butter in a sauce pan until heat until butter melts.
  • Set aside in fridge.
  • Heat through and serve with meat.

2 tablespoons cajun seasoning
2 tablespoons kosher salt
3 meaty racks venison side ribs (1 1/2 - 2 lbs each)
1 large onion, sliced
2 jalapeno peppers, sliced
2 (10 ounce) bottles tasty ale (your favourite)
1 pint blueberries
1/4 cup butter, melted
1/2 cup brown sugar
1/4 cup honey
1/4 cup hot sauce (Louisiana style)
2 tablespoons gourmet style barbecue sauce (your favourite)
salt
pepper

Steps:

  • In medium bowl, combine Cajun seasoning & salt; rub ribs with spice mixture, pressing the spices into the meat to adhere.
  • Lay onion & jalapenos in the bottom of a roasting pan, top with ribs and add ale.
  • Cover & braise/roast in a preheated 375F oven for 1 ½ - 2 hours, until meat is tender & bones can be easily pulled from the meat.
  • Mash half the berries, then whisk together with the butter, brown sugar, honey, hot sauce, BBQ sauce and salt & pepper to taste; set aside for basting.
  • Remove ribs from pan & discard braising liquid; grill ribs at medium-high (450 - 500F), basting liberally with the sauce, for 8 - 10 minutes per side.
  • Remove from grill, slice between bones & serve with extra sauce; garnish with remaining blueberries.

6 -8 cups water
salt & pepper (optional)
onion (optional)
sweet baby rays barbecue sauce
hamburger bun

Steps:

  • Combine venison meat, water, onion, salt and pepper in your crock pot for at least 4 hours or until completely cooked.
  • Drain all juice produced in cooking process along with onions.
  • Place meat on cutting board and pull apart with fork (it should be really tender).
  • Put meat back in crock pot and add BBQ sauce.
  • Put on your favorite bun and eat! That's it!

1 (12 ounce) bag cranberries
1/2 cup water
1/8 cup diced sweet onion
1/4 cup dark brown sugar
1/4 tablespoon tomato paste
1/2 tablespoon steak sauce
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
5 drops liquid smoke
1/2 teaspoon black pepper
1/4 tablespoon ground ginger
2 drops hot sauce
tarragon, oregano, chili powder, thyme and paprika
1 teaspoon garlic salt
1/2 teaspoon dried mustard
1/4 teaspoon salt
liquid stevia, as needed
1 lb ground venison
1 tablespoon oil (canola, etc)
salt and pepper
aged cheddar cheese, sliced
red onion, sliced
kaiser roll

Steps:

  • For the Cranberry Sauce: Place all ingredients, except stevia, into a stock pot and bring to a boil. Boil for 15 minutes or until the liquid is reduced to 1/3. Keep stirring to prevent the sugars from burning to the bottom of the pan.
  • Remove from stove and allow to cool for about 15 minutes (this is to keep the blender from exploding on you).
  • Place in a blender and puree.
  • Strain the puree through a fine mesh strainer, using a wooden spoon to press and strain the sauce.
  • Refrigerate. This sauce will hold for a few weeks in the refrigerator!
  • Yield 1 ½ cups.
  • For the Venison Burger: Mix the ground venison, oil, salt and pepper well. You can also add some pork fat if you like -- I like my burgers very lean so I don't add fat. You just have to be careful they don't fall apart on the grill, so add as much oil as you need to hold them together.
  • Grill or broil for about 4 minutes per side.
  • To build the burger, slice the Kaiser rolls. Place one or two slices of the Aged cheddar on the roll. Place a burger over the cheese and add as much cranberry BBQ sauce as desired. Top with a slice of red onion.

6 slices hickory smoked bacon
½ egg
½, 8 ounce canned tomato sauce
½ medium onion, finely chopped
½ cup dry bread crumbs
¾ tsp. salt

BUFFALO SWEET POTATO/PUMPKIN HASH
1 cup Tropical Food's Buffalo Nuts®
1 sweet potato, diced
1 edible pumpkin, diced
2 tbsp. butter, melted
Salt and pepper to taste
BLACKBERRY BBQ SAUCE
½ cup blackberry preserves
1 ½ cups ketchup
1/8 cup brown sugar
1/8 tsp. cayenne pepper
¼ tsp. mustard powder
2 tsp. red wine vinegar

Steps:

  • VENISON MEATLOAF In a large bowl lightly beat egg; add tomato sauce, onion, bread crumbs, salt and pepper. Add venison and mix well. Roll and press into 6 rounds. Wrap meatloaf in one slice of bacon per round. Bake, uncovered, at 350 degrees for 15 minutes, until a meat thermometer reads 160 degrees. BUFFALO SWEET POTATO/PUMPKIN HASH Using a food processor, make powder out of Tropical Food's Buffalo Nuts®. Cut both sweet potato and pumpkin into small dice. Melt butter in a large sauté pan. Add potato and pumpkin and sauté until soft, adding water as needed. Stir in Buffalo Nuts® powder, salt and pepper to taste. BLACKBERRY BBQ SAUCE In a medium bowl, mix together blackberry preserves, ketchup, brown sugar, cayenne pepper, mustard powder, and red wine vinegar. Serve sauce over venison meatloaf with buffalo sweet potato/pumpkin hash.

3 tablespoons garlic powder
2 ½ tablespoons salt
1 tablespoon ground black pepper
4 pounds boneless venison roast
4 cups water
1 (18 ounce) bottle hickory and brown sugar barbecue sauce (such as Sweet Baby Ray's®), divided
16 (2 ounce) kaiser rolls, split

Steps:

  • Mix onion, garlic powder, salt, and pepper together in a small bowl.
  • Use a knife to cut small scores on both sides of venison roast, then tenderize all over with a blade-style meat tenderizer. Rub spice mixture all over roast.
  • Pour water into a slow cooker and set temperature to High. Place roast in the center of the slow cooker; it's okay if some of the spice mixture comes loose in the water. Cover and cook until you can easily pull the roast in half using a knife and fork, about 3 hours.
  • Drizzle 1/4 cup barbecue sauce over roast. Continue to cook on High until venison is tender and can be easily pulled apart with a fork, 3 to 3 1/2 more hours.
  • Turn slow cooker to Warm. Remove excess water. Shred roast using a knife and fork.
  • Return meat to the slow cooker and stir in the remaining barbecue sauce.
  • Serve shredded meat and sauce on rolls.

Steps:

  • Place venison, garlic, vinegar, worcestershire sauce and seasoning in crock po. Cook on high for 1 - 2 hours until meat is cooked.
  • Cook bacon and crumble or chop. Add bacon, catsup, molasses and brown sugar. Turn crock pot on low and cook for the rest of the day.

I came up with this recipe as a way to get more of my family to eat venison. Some of my family prefer chopped BBQ sandwiches. For them after i pull the meat i put it on the cutting board and run the knife through it until it is as fine as i want. You can use other cuts of venison if you wish.

2 lbs venison tenderloins
4 tablespoons bbq seasoning (i use KC Masterpiece)
3 tablespoons olive oil
1 quart beef stock
2 tablespoons steak seasoning (i use Kansas Style)
8 buns
3/4 cup cider vinegar
3/4 cup ketchup
3/4 teaspoon crushed red pepper flakes
1 teaspoon sugar
1/4 cup water
salt (to taste)
pepper (to taste)

Steps:

  • For Pulled Venison: Heat dutch oven with olive oil.
  • Sprinkle BBQ seasoning on all sides of venison tenderloin.
  • Sear meat on all sides remove from dutch oven.
  • Add beef stock and steak seasoning to dutch oven and place meat back in dutch oven.
  • Braise meat until tender (155-160 on a meat thermometer).
  • Remove meat from liquid place on cutting board and pull with 2 forks.
  • Place meat in a dish and add BBQ dip to meat.
  • For BBQ Dip: While venison meat is cooking.
  • Combine all ingredients in a small sauce pan and bring to a simmer.
  • Cook, stirring, until the sugar dissolves.
  • Remove from the heat and let stand until meat is done and pulled.
  • Place pulled meat in a pan and pour BBQ dip over it and let soak inches.
  • Sandwich Assembly: Open buns and place pulled venison and your favorites topping and condiments on them.
