A very yummy and easy dinner, especially if you cook the chicken ahead of time! After one bite of this dish my DH said "This one's a definite keeper!" It's also kid friendly!

Number Of Ingredients 5

4 boneless skinless chicken breasts, cut up in chunks
1 (14 ounce) can chicken broth
3/4 lb Velveeta cheese, cut into chunks (12 oz)
2 cups uncooked pasta (rotini, macaroni, or shells)
16 ounces frozen vegetables (Italian blend works well)

Steps:

  • Spray large skillet with Pam.
  • Add Chicken and cook on medium until no longer pink.
  • Stir in chicken broth.
  • Bring to a boil and add pasta.
  • Reduce heat to medium-lo.
  • Cover and simmer 8 minutes, or until pasta is tender.
  • Add Velveeta and veggies, stir until smooth.
  • Serve with salad and garlic toast!

I got this recipe from the coupon section of my local Sunday paper. It was published by Kraft Foods and Ro-tel.

1 lb boneless skinless chicken breast, cut into bite size pieces
2 cups elbow macaroni, uncooked
2 cups water
1/2 lb Velveeta cheese, cut into cubes
1 (10 ounce) ro-tel diced tomatoes with mild green chilies
1/2 cup sour cream
dried parsley (optional)

Steps:

  • Cook chicken in a large non-stick skillet over medium high heat for 5 to 7 minutes or until cooked through.
  • Stir in 2 cups water; bring to a boil.
  • Stir in macaroni; cover reduce heat to medium.
  • Simmer 15 minutes, or until water is almost absorbed.
  • Add Velveeta and Ro-tel; cook until Velveeta is melted, stirring often.
  • Remove from heat; stir in sour cream.
  • Sprinkle each serving with desired amount of dried parsley.

1 (12 ounce) package Velveeta shells and cheese dinner
1 cup milk
1 cup water
1 cup broccoli floret
1 cup sliced carrot

Steps:

  • Spray large skillet with cooking spray. Add chicken; cook on medium high heat 5 minute or until chicken is cooked through, stirring occasionally.

Diced red bell pepper
Sliced ripe olives
Coarsely broken tortilla chips

Steps:

  • In 12-inch skillet, heat 3 cups water to boiling; add pasta. Cook 8 to 9 minutes or until pasta is tender; drain and return to skillet.

I decided to refer to my cookbook collection to find a tasty meal last night and this was the ticket. Richard prepared it and was tickled ppink with how well it turned out. We made 4 large breasts so we used some more oil than called for and cooked them slowly so they wouldn't burn etc. This came from my Favorite brand Name Best-Loved Recipies cookbook. This tasted like rice a roni with moist chicken... yummy!

1 tablespoon oil
4 small boneless skinless chicken breast halves (about 1 lb)
1 (10 ounce) can cream of chicken soup
1 1/3 cups water
2 cups MINUTE White Rice (uncooked)
8 ounces Velveeta cheese

Steps:

  • heat oil in a large skillet on med hi heat..
  • add chicken cover.
  • cook 4 minutes on each side or until cooked through
  • Remove chicken from skillet.
  • add soup and water to skillet
  • stir and bring to a boil.
  • stir in rice and 1 c of velveeta.
  • top with chicken.
  • sprinkle with remaining velveeta
  • cover and cook on low heat 5 minutes.
