  • Puree 1/3 cup sliced pimientos (drained) in a blender or food processor until smooth. Transfer to a large bowl. Add 3 cups finely grated sharp cheddar and beat with a mixer until combined. Beat in 1/4 cup mayonnaise.

My Mother would only eat Velveeta Cheese, so I created a pimento cheese spread that included it. The recipe is very simple and quick. I did have to basically puree the diced pimento for my kids though since they did not like to texture if I did not. It is one of our family favorites.

1/2 - 1 lb velveeta cheese
1- 4oz. jar(s) diced pimento
1/2 c hellman's light mayonnaise (just to spreading consistency)
1/2 tsp morton's natures seasons
pinch of sugar or sugar substitute

Steps:

  • 1. Grate the Velveeta Cheese in a medium bowl
  • 2. Add the pimento (I do puree it for my children)
  • 3. Add the cheese,mayonnaise,pimento and juice, stirring to mix it thoroughly. Add Natures Seasoning and sugar to taste.
  • 4. Spread on bread for a sandwich or use on crackers or celery. My kids add potato chips to their sandwich, either way I hope you enjoy it as much as we do.

to one pound of velveeta cheese add: (i believe it's very important to use velveeta, too, not an off brand, the velveeta made with 2% is fine)
1 4 ounce jar chopped pimentos, drained
1 tsp sugar or 1 packet sweetner
about 1/2 cup mayo, lite is fine
1 tsp grated onion, optional
it's very easy to double recipe if you want to make the 2 lb. package of velveeta cheese
black pepper, optional (i don't add salt as the cheese already has salt in it)

Steps:

  • 1. NOTE: I believe in the old saying, "If it ain't broke, don't fix it," so I stick to the basics on this recipe and I don't add a lot of extra ingredients. Put the whole package (whether making the 1 lb. or the 2 lb.) of velveeta in the freezer for about 10-15 minutes. Don't leave it too long or the paper will begin to stick to the cheese and you will have to peel it off, leave it just long enough for it to grate well. Grate on side with the larger grating holes. Add drained pimentos, sweetner and mayo. Mix well, add more mayo if needed. Serve with fresh loaf bread or on a cracker. (It's really good with a fresh garden tomato on the sandwich, too.)

2 cups finely shredded sharp Cheddar cheese (8 oz)
1 jar (4 oz) sliced pimientos, drained
1 cup mayonnaise or salad dressing

Steps:

  • Using grater with large holes, shred cheese product into large bowl. Stir in Cheddar cheese and pimientos. Add mayonnaise; stir and fold until mixture is creamy. Serve immediately, or refrigerate until serving time. Serve with crackers, cocktail bread slices, pretzels or cut-up fresh veggies.

2 (7 ounce) jars pimento peppers, drained and chopped
¼ cup tarragon vinegar
¼ cup mayonnaise
¼ cup unsalted butter
¼ cup white sugar

2 tablespoons salad dressing (I use Miracle Whip)
2 tablespoons sugar
