1 lb extra lean ground beef
1 (1 1/4 ounce) package taco seasoning
1 cup whole wheat macaroni
8 ounces 2% milk Velveeta reduced fat cheese product
1/3 cup skim milk
1 1/2 cups shredded fat-free cheddar cheese
1 cup salsa
1 ounce light tortilla chips, crushed

Steps:

  • Pre-heat oven to 400. Brown the ground beef and mix in the taco seasoning as directed on the package. Cook the macaroni as directed on the box. Add macaroni to the ground beef in the skillet, then add the milk and the Velveeta cheese torn into pieces. Still constantly until the Velveeta melts.
  • In a small casserole dish sprayed with non-stick spray layer half of the pasta and beef mixture and 1/2 cup of shredded cheese. Repeat for a second layer. Cover and bake for 15 minute.
  • Remove the cover and add 1 cup salsa, the tortilla chips and the last 1/2 cup of the shredded cheese. Bake uncovered for 5 minute.

1 ½ pounds ground beef
1 cup chopped onion
½ cup water
1 (1 ounce) package taco seasoning mix
1 (10 ounce) can refried beans
½ cup salsa
1 (6 ounce) can sliced black olives
1 (4 ounce) can diced green chiles
15 taco shells, broken up, or more to taste
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
  • Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

1 (14.5 ounce) can diced tomatoes with green chile peppers, drained
½ cup water
1 cup sour cream
1 (1.25 ounce) package taco seasoning mix
8 ounces shredded Colby-Monterey Jack cheese
1 (18 ounce) package corn tortilla chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium skillet over medium heat, brown the ground beef and drain fat. Add the diced tomatoes with green chile peppers, water, sour cream and taco seasoning mix. Let simmer for 5 to 10 minutes.
  • In the bottom of a 9x13 inch baking dish, place a layer of tortilla chips. Cover with a layer of the meat mixture then a layer of cheese. Repeat this process until the last layer is cheese.
  • Bake in the preheated oven for 20 minutes, or until the cheese is bubbly.

1 cup salsa
½ cup chopped onion
½ cup mayonnaise
2 tablespoons chili powder
1 teaspoon ground cumin
2 cups crushed tortilla chips, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
  • Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. 3 jalapeno peppers, chopped
1 1/2 pt sour cream
1 can(s) Rotel tomatoes (10 oz.)
1 can(s) tomatoes, diced (small can; 14.5 oz)
1 1/2 lb ground chuck
1 medium onion, chopped
1 pkg taco seasoning mix
1 pkg tortilla chips, plain

Steps:

  • 1. Brown ground chuck with onion in skillet; drain fat, return to skillet and add taco seasoning. Set aside.
  • 2. Melt cheese, sour cream, peppers and tomatoes in a saucepan over low heat until cheese is completely melted.
  • 3. Crush the chips. Combine the meat and cheese mixture. Layer meat/cheese mixture in 13"x9" baking dish; top with chips; repeat layers until all mixture has been used, ending with chips on top.
  • 4. Bake at 350 degrees until the top and sides are bubbly and slightly browned; approximately 30 minutes.

  • Cook pasta according to package directions.
