1 lb boneless skinless chicken breast, cut into 1/2-inch-thick slices
2 teaspoons italian seasoning
1 (16 ounce) package frozen broccoli, cauliflower and carrot blend, thawed, drained
1/4 lb VELVEETA®, cut into 1/2-inch cubes

Steps:

  • SPRAY 4 large sheets of heavy-duty foil with cooking spray; top with chicken, Italian seasoning and vegetables. Fold to make 4 packets.
  • GRILL 15 minute or until chicken is done. Cut slits in foil to release steam before carefully opening packets.
  • TOP ingredients (still in packets) with VELVEETA®. (No need to refold packets to seal.) Grill 5 minute or until VELVEETA® is melted.

  • VELVEETA® Mexican Chicken Campfire Packs: Combine 1/2 teaspoons each chili powder, crushed red pepper, garlic powder and ground cumin. Sprinkle over chicken instead of the Italian seasoning, then continue as directed.

These are easy to make for camping, my husband loves them! We prepare them at home and then leave them in the cooler until we are ready to cook. You can use any combination of meat and vegetables that you like. Do not try to use less olive oil or foil or your dinner will burn. Be careful when opening foil as steam will have formed inside and can burn you.

1 pound skinless, boneless chicken breast meat - cubed
2 onions, diced
1 (8 ounce) package sliced fresh mushrooms
1 yellow bell pepper, seeded and sliced into strips
1 red bell pepper, seeded and sliced into strips
4 cloves garlic, sliced
4 small potatoes, cubed
¼ cup olive oil
1 lemon, juiced

Steps:

  • In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well.
  • Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap.
  • Cook in the hot coals of a campfire until the chicken is opaque and the potatoes are tender, around 40 minutes.

4 small baking potatoes (1-1/4 lb.)
1 Tbsp. oil
1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 VELVEETA Fresh Packs (4 oz.), cut into 1/2-inch cubes
1-1/2 cups frozen chopped broccoli, thawed
2 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Prick potatoes with fork. Wrap individually in foil; place in slow cooker. Cover with lid. Cook on LOW 6 to 7 hours (or on HIGH 4 to 4-1/2 hours).
  • Heat oil in medium skillet on medium heat. Add chicken; cook 8 to 10 min. or until done, stirring frequently. Add VELVEETA and broccoli; cook and stir 3 to 4 min. or until VELVEETA is completely melted and broccoli is heated through.
  • Remove potatoes from slow cooker; remove foil. Cut slits in tops of potatoes; top with chicken mixture and bacon.

1 chicken thigh
1 small russet potato, scrubbed & sliced (or 1/2 medium potato)
1/2 small onion, sliced
1/3 green bell pepper, sliced
salt
pepper
1/2 teaspoon olive oil

Steps:

  • For each packet, place a 10 inches long piece of aluminum foil on the counter. Spray with nonstick cooking spray.
  • Place sliced potato on the foil. Season them with salt & pepper to taste.
  • Top with onions, peppers, then the chicken.
  • Drizzle a little extra virgin olive oil on top of the chicken. Season chicken with salt & pepper.
  • Wrap the aluminum foil up tightly, making sure there are no tears or "leaks". Double wrap the packets in foil if necessary.
  • Grill at 400 for 35 minutes, or until done. Or, cook over an open fire.

1 cup quick-cooking grits
2 tablespoons butter
2 garlic cloves, minced
1/4 teaspoon cajun seasoning
2 eggs
1/2 lb Velveeta cheese, cut into 1/2-inch cubes

Steps:

  • HEAT oven to 350°F.
  • BRING water to boil in medium saucepan on medium-high heat. Gradually stir in grits; cook on low heat 5 min., stirring occasionally. Remove from heat. Add butter, garlic and seasoning; stir until butter is completely melted and mixture is well blended.
  • BEAT eggs in small bowl until blended. Add small amount of hot grits; mix well. Gradually add to remaining grits in pan, stirring constantly until blended.
  • POUR into 8-inch square baking dish sprayed with cooking spray. Top with VELVEETA; press gently into grits with back of spoon until partially covered.
