2 cups water
3 cups rotini pasta, uncooked
1 pkg. (16 oz.) frozen broccoli, cauliflower and carrot blend
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes

Steps:

  • Cook and stir chicken in large skillet sprayed with cooking spray on medium-high heat 5 min. or until no longer pink.
  • Stir in water. Bring to boil. Add pasta; stir. Cover; simmer on medium-low heat 10 min. or until pasta is tender.
  • Add remaining ingredients; stir. Cook, covered, 5 to 7 min. or until VELVEETA is completely melted and vegetables are crisp-tender, stirring frequently.

1-1/2 cups shredded cooked boneless skinless chicken breasts
1/4 lb. (4 oz.) Queso Blanco VELVEETA, cut into 1/2-inch cubes
2 Tbsp. milk
6 hot dog buns, toasted
1/4 cup KRAFT Lite Ranch Dressing
1 green onion, cut into thin slices

Steps:

  • Heat oil in large skillet on medium heat. Add yellow onions and green peppers; cook and stir 5 min. Add chicken; cook 5 min. or until heated through, stirring occasionally.
  • Meanwhile, microwave VELVEETA and milk in microwaveable bowl on HIGH 1 to 2 min. or until VELVEETA is completely melted and mixture is well blended, stirring every 30 sec.
  • Add half the VELVEETA sauce to chicken mixture in skillet; cook 2 min., stirring frequently.

This recipe came about because I wanted to use up green peppers from the garden. It's quick, easy and even my picky friends have asked for the recipe.

2 cups uncooked elbow macaroni
1 pound lean ground beef
1 medium onion, chopped
2 green bell pepper, seeded and chopped
salt and pepper to taste
1 (8 ounce) package processed cheese food, cubed
1 (10.75 ounce) can condensed cream of mushroom soup
¼ cup milk, or as needed

Steps:

  • Bring a pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Drain.
  • Meanwhile, place the ground beef and onion into a large skillet, and cook, stirring to crumble, until meat is no longer pink, and onion is tender. Just before the beef is done, add the bell peppers, and cook until tender, but still green. Season with salt and pepper. Stir in the cheese food, condensed soup and milk to make a thick sauce.
  • Remove from the heat, and stir in the macaroni noodles. Serve and enjoy!

1 (10 1/2 ounce) can cream of chicken soup
1/2 can milk, 5 oz
